BAKED BRIE TOPPED WITH SAVORY GRANOLA AND APPLES



Baked Brie Topped with Savory Granola and Apples image

Number Of Ingredients 15

1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 cup plus 1 tablespoon extra-virgin olive oil
4 tablespoons maple syrup
Kosher salt
1 cup rolled oats
1/2 cup raw cashews
1/2 cup raw pepitas
1/2 cup raw walnuts
1 tablespoon fresh rosemary, chopped
One 7-ounce wheel Brie
1 Honeycrisp apple, thinly sliced
1/4 cup dried apricots, chopped
1/4 cup dried cranberries
Crackers and crostini, for serving

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Arrange the racks of the oven so that you can use two.
  • Whisk together the paprika, cayenne, 1/4 cup oil, 2 tablespoons syrup and a pinch of salt in a medium bowl. In another medium bowl, combine the oats, cashews, pepitas, walnuts and rosemary. Add the oil mixture to the oat mixture and stir to combine. Spread evenly in one layer on one of the lined baking sheets. Bake, stirring halfway through, until golden brown and crispy, 25 to 30 minutes. Meanwhile, add the Brie to the other lined baking sheet and bake for 15 minutes.
  • Heat the remaining tablespoon oil in a small nonstick skillet over medium-high heat. Add the apples to the skillet and cook, stirring occasionally, until the apples start to soften and brown, about 3 minutes. Add the remaining 2 tablespoons maple syrup and 2 tablespoons water, then stir, reduce the heat to low and cover until ready to use. Season with salt.
  • Remove the granola from the oven and stir in the dried fruit. Reserve 1 cup of the granola. Let the rest cool completely, then transfer to an airtight container (save this for another use).
  • Transfer the Brie to a serving platter and top with the warm apples. Sprinkle on the cup of savory granola. Serve warm with crackers and crostini.

Kosher salt
One 17 1/2-ounce wheel firm Brie (6-inch diameter)
Two 3-ounce jars sun-dried tomatoes packed in oil, drained and chopped (2/3 cup)
1/4 cup dry white wine
1/4 teaspoon crushed red pepper flakes
1 small clove garlic, finely grated
10 ounces linguine
1/4 cup chopped fresh basil leaves

Steps:

  • Preheat the oven to 400 degrees F. Bring a large pot of salted water to a boil. Using a paring knife, score a 1/4-inch border around the edges of the top of the Brie about 1/4-inch deep. Carefully slice off the top rind in one piece using a chef's knife and staying within the border to make a lid; set the top aside.
  • Place the Brie in an 8-inch cast-iron skillet and top the center with the sun-dried tomatoes, wine, red pepper, garlic and 1/2 teaspoon salt. Cover with the reserved top rind. Bake just until the cheese is melted and bubbling, 18 to 20 minutes.
  • Meanwhile, during the last 10 minutes of baking, cook the pasta according to the package directions. Reserve 1/2 cup of the pasta water. Drain.
  • Remove the top rind from the Brie. Sprinkle the basil over the melted cheese and gently stir to combine. Using tongs, gently toss a quarter of the pasta in the center of the melted cheese until coated and transfer to a plate. Repeat with the remaining 3 portions of pasta. If the cheese sauce thickens, stir in some pasta water, a tablespoon at a time.

BAKED BRIE WITH HERBED GRAPES



Baked Brie with Herbed Grapes image

1 each mini brie wheel (8 oz. wt)
1 cup California seedless grapes, rinsed
1 teaspoon thyme, fresh minced
1/2 teaspoon rosemary, fresh minced
1 sheet (10" square) puff pastry, thawed
1 egg, beaten

Steps:

  • Pre-heat oven to 400 degrees F.
  • Slice Brie wheel in half horizontally. Press grapes onto cut side of lower half of cheese. Sprinkle grapes with herbs. Press top of Brie onto grapes, sandwiching them in between the two halves of Brie. Set aside.
  • On lightly floured surface, roll puff pastry into a 16"x10' rectangle. Cut a 6" round, and an 8" round from puff pastry. Brush smaller round of puff pastry with egg. Set Brie/grape "sandwich" onto puff pastry. Brush larger round of puff pastry with egg, and place egg side down over Brie. Press out any excess air and crimp edges to seal. Decorate top with puff pastry scraps if desired. Brush outside of Brie with beaten egg. Place on cookie sheet and bake for 20 minutes. Tent loosely with foil and return to oven for 10-15 more minutes. Brie should be golden brown and puffy looking. Remove from oven and let cool for one hour before serving.

4 tablespoons unsalted butter, melted
3 tablespoons packed light brown sugar
3 tablespoons pure maple syrup
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1 3/4 cups old-fashioned rolled oats
2 large carrots, shredded and squeezed dry
1 cup walnuts, chopped
1/2 cup yogurt-covered raisins
1/3 cup chopped dried pineapple

Steps:

  • Position an oven rack in the center of the oven, and preheat to 325 degrees F. Whisk together the butter, brown sugar, maple syrup, vanilla, cinnamon and salt in a large bowl. Add the oats, carrots and walnuts, and toss until evenly coated. Spread out on a rimmed baking sheet.
  • Bake the oat mixture until golden and toasted, 30 to 35 minutes, stirring about halfway through. Let cool completely on the baking sheet. Stir in the raisins and dried pineapple. (The granola can be stored in an airtight container at room temperature for up to 5 days.)
