MAPLE PECAN BAKED BRIE

This savory-sweet appetizer is a decadent way to start your feast, but I promise there won't be a bite left over. A creamy Brie is baked to perfection and then smothered with a spicy pecan praline sauce. Be generous with the coarsely ground black pepper, as it really sends the dish over the edge!

1 (16-ounce) wheel of Brie
1/2 cup (1 stick) unsalted butter
2 tablespoons packed brown sugar
1/3 cup pure maple syrup
1 cup toasted and chopped pecans
1 teaspoon coarsely ground black pepper
Crackers, to serve

Steps:

  • Preheat oven to 350 degrees.
  • Shave off the top rind of the Brie (it is easiest to do this after it has been in the freezer for about 20 minutes). If the Brie came in a wooden box, return it to the original container. If not, create a makeshift "box" out of a few layers of aluminum foil, leaving the top of the Brie exposed.
  • Place the cheese on a rimmed baking sheet. Bake until warm and gooey, 15 to 20 minutes. Remove from the oven and allow to cool for 20 minutes before serving. Carefully transfer to a serving platter; you do not want the rind to puncture, if possible.
  • While the Brie is cooling, make the praline sauce. Melt the butter in a saucepan over medium heat. Add the brown sugar, maple syrup, and pecans. Cook, stirring constantly, until all of the ingredients are well combined, 3 to 5 minutes. Stir in coarsely ground black pepper and remove from heat. Allow the mixture to cool for 5 to 10 minutes, until it has thickened up just a bit. Dollop the warm sauce over the baked cheese. (There may be extra praline sauce.) Serve with assorted crackers.

I don't do pictures but this is a lovely center piece recipe. It is very good, very filling, and attractive. Such a wonderful combination and with my bounty of pecans, a wonderful, not so sweet way to serve them. This is perfect for a tea or small get together. Have the recipe ready to hand out.

1 8 oz round of brie w/ rind intact (it is soft)
3 Tbsp brown sugar
1/2 tsp ground cinnamon
1/2 c coarsely chopped pecans
1 puff pastry sheet, thawed
TOASTED PECANS
1 lb pecans, halved
1/2 stick butter
real light sprinkle of salt and cinnamon
SLICED APPLES, SLICED PEARS, RED SEEDLESS GRAPES --- CRACKERS & TOASTED PECANS

Steps:

  • 1. BAKED BRIE: Preheat oven to 350 degrees F.
  • 2. Spread out a baking pan with parchment paper for baking (9x13). Spread out puffed pastry on a flat surface.
  • 3. In separate small bowl, mix pecans, sugar, and cinnamon.
  • 4. Spread nut mixture in the center of pastry. Place brie on top of nut mixture. Fold pastry over brie to enclose everything like a package (to the center top). Pinch together and secure gently with kitchen twine. Gently flip pastry package over, place on baking sheet with twine tied twist on the bottom.
  • 5. Bake in the preheated oven 20-30 minutes or until pastry is golden brown. Remove from oven and cool 5-10 minutes. THEN.... You can slide the parchment paper holding the baked brie slowly onto a nearby serving tray. Put it in the middle of a large serving tray giving room to surround it with apple slices, pear slices, red seedless grapes,crackers, and pecans. When cooled you can trim the parchment paper closer to the brie.
  • 6. TOASTED PECANS: THIS CAN BE DONE A DAY IN ADVANCE. Preheat oven to 250 degrees F. Melt butter and pour into a baking pan. A pan large enough so pecans lay in single file. Roast about 20 minutes, gently stirring every 5 minutes and checking for doneness after 10 minutes.
  • 7. Remove toasted pecans from oven. Mix 1/4 tsp of salt and 1/8 tsp cinnamon together in small dish. Rub around to mix, then sprinkle mixture over pecans. COOL.
  • 8. Cut 3 apples with a variety of colors into slices, set aside. Cut 2 pears into slices, set aside, wash and dry 2 cups of red seedless grapes, set aside. Arange these items around brie with crackers and toasted pecans.
  • 9. ARRANGE FRUIT SLICES AND GRAPES AROUND BRIE ABOUT 10 MINUTES BEFORE SERVING. YOU CAN CUT THE SLICES SEVERAL MINUTES EARLIER BUT KEEP CHILLED TO PREVENT FROM TURNING BROWN. YOU CAN HAVE EXTRA FRUIT, NUTS, AND CRACKERS PREPARED TO REPLENISH AROUND BRIE.
  • 10. ++++ Incorporate some clean, shinny Magnolia leaves and some Candied Orange Slices as decorations to this dish.

UPDATE: After the first review I edited the recipe using less butter. I am one of those cooks who never measures things, so I estimated, and obviously, it was too much butter. The idea is just to brush softened butter over the surface of the brie. I hope this is better! Thanks! This is great party food. 1 (5 inch) brie round
1/4 cup brown sugar
3 tablespoons of softened butter
1/4 cup walnuts or 1/4 cup pecans
sliced French bread

Steps:

  • Preheat oven to 325.
  • Put brie in baking dish.
  • Brush on approximately 3 T. of softened butter.
  • Sprinkle about 1/4 cup of brown sugar over the brie.
  • Add a few (about 1/4 cup) of walnuts or chopped pecans, really just whatever you have on hand.
  • Bake for 20-25 minutes.
  • Serve with sliced french bread.

1/2 cup pecan pieces
3 tablespoons light-brown sugar
3 tablespoons pure maple syrup
crackers or sliced baguette, for serving
