1 round (8 ounces) Brie cheese
2/3 cup golden raisins and cherries
1/3 cup unsweetened apple juice
1 teaspoon vanilla extract
1 tablespoon cherry preserves
Assorted crackers

Steps:

  • Place cheese on an ungreased oven-proof serving plate. Bake at 400° until cheese is softened, 8-10 minutes., Meanwhile, in a small saucepan, combine the golden raisins and cherries, apple juice and vanilla; bring to a boil. Remove from the heat; stir in preserves. Spoon over cheese. Serve with crackers.

1/2 cup dried Mission figs, stemmed and chopped
2 wide strips orange zest (removed with a vegetable peeler)
2 sprigs thyme
3 tablespoons brandy
2 tablespoons sugar
2 tablespoons balsamic vinegar
Freshly ground pepper
1 piece refrigerated pie dough (half a 14-ounce package)
All-purpose flour, for dusting
1 7- to 8-ounce wheel brie cheese
1 large egg, lightly beaten

Steps:

  • Combine the figs, orange zest, thyme, brandy, sugar, vinegar, a few grinds of pepper and 1/4 cup water in a small saucepan. Bring to a boil, then reduce the heat and simmer until the liquid is syrupy and the figs are softened, 15 to 20 minutes. Transfer to a small bowl, discard the zest and thyme and let cool, about 20 minutes. Transfer to a food processor or mini chopper and pulse until mostly smooth.
  • Preheat the oven to 375 degrees F. Unroll the pie dough onto a lightly floured work surface. Roll out the outer 2 inches of dough with a rolling pin to make the edge slightly thinner than the rest of the dough. Put the cheese in the center of the dough and top with the fig compote. Trim about 1 inch off the outer edge of the dough. Pull the dough up and over the cheese, folding and pleating the dough all the way around until the cheese is covered. Pinch the dough together at the top to seal.
  • Transfer the wrapped cheese to a parchment-lined baking sheet. Brush the dough with the beaten egg and bake until golden brown, 30 to 35 minutes. Let cool about 10 minutes, then transfer to a cutting board to slice. Serve warm or at room temperature.

1 can (20 ounces) pineapple chunks, drained
2 cans (8 ounces each) grapefruit sections, drained
1 can (15-1/4 ounces) sliced pears, drained
1 can (11 ounces) mandarin oranges, drained
1 cup pitted dried plums (prunes)
1/2 cup butter, cubed
1/2 cup packed brown sugar
1/4 cup Madeira wine, optional
Fresh mint leaves, optional

Steps:

  • Preheat oven to 350°. In a 13x9-in. baking dish, combine first 6 ingredients. , In a small saucepan, combine butter and brown sugar. Bring to a boil over medium heat; cook and stir until sugar is dissolved, 2-3 minutes. Remove from heat; stir in wine if desired. Pour over fruit and toss to coat., Bake, uncovered, until heated through, 20-25 minutes. Garnish with mint if desired.

1 wheel Brie Cheese
1/3C Dried Cranberries
1/3C dried Apricots
1/3C Golden Raisins
1 C Amatillado Sherry
1 jar Trappist Sherry Wine Jelly
Crackers or French Bread

Steps:

  • Combine cranberries, apricots, raisins and sherry in small saucepan. Heat over medium heat to boil. Reduce heat and simmer for 5 minutes. Remove from heat. (Can be made up to two days ahead. Cover and refridgerate. Heat gently before using) Heat oven 275. Carefully slice top rind off of brie. Place brie in oven proof dish. Bake until brie begins to melt slightly and woobles when dish is shaken. About 25 minutes. Don't over heat since the brie will separate if over heated. Remove from oven, top will fruit mixture. Serve with crackers or thinly sliced french bread round.

1/2 cup brown sugar
1 cup wine (your favorite kind)
2 1/2 cups dried apricots
1 cup pitted prune
1 (20 ounce) can pineapple chunks in juice, not drained
1 (21 ounce) can cherry pie filling

Steps:

  • Heat oven to 350. Have ready a 2 - 2 1/2 quart shallow baking dish.
  • Dissolve sugar in wine.
  • Put dried and canned fruits in baking dish, add wine mixture and stir to mix. Cover with foil.
  • Bake 1 hour, or until most of the liquor is absorbed. Uncover, cool and transfer to serving dish; cover and regrigerate overnight.

This baked brie is a delicious addition to any party hors d'oeuvres.

1 cup pecan halves
3/4 cup packed dark-brown sugar
All-purpose flour, for dusting
2 standard packages (17 1/4 ounces) frozen puff pastry, thawed
1 wheel (2.2 pounds) brie
1 large egg yolk
2 tablespoons heavy cream

Steps:

  • In a medium bowl, combine pecans and sugar, using your fingertips to thoroughly mix; set aside. Line a baking sheet with a Silpat (French nonstick baking mat) or parchment paper; set aside.
  • Lightly dust work surface with flour. Place 2 sheets (one box) of puff pastry on the work surface one on top of the other. Using a rolling pin, adhere the 2 pieces of the puff pastry together. Continue rolling puff pastry until it is very thin, slightly less than 1/8 inch thick. Using a pastry wheel or a sharp knife, cut the puff pastry into a 13-inch round, reserving scraps for decorating.
  • Place the brie in the center of the puff pastry. Top the brie with pecan mixture, spreading to within 1/2 inch of the edge of the cheese. Be sure to remove any sugar or nuts from the puff pastry, as they may cause holes to form during baking. Fold puff pastry up and over brie to enclose. The center of the brie will not be completely covered with pastry. Transfer to prepared baking sheet.
  • Lightly dust work surface with flour. Repeat rolling and cutting process with remaining 2 sheets of puff pastry. Drape pastry over the brie, tucking the edges under to enclose.
  • In a small bowl, combine egg yolk and cream to make an egg wash. Cut reserved scraps of puff pastry into decorative shapes. Using a pastry brush, gently brush the decorative shapes with the egg wash, and adhere to wrapped brie. Brush the wrapped brie evenly with the egg wash. Transfer to refrigerator and chill for at least 30 minutes and up to overnight.
  • Preheat oven to 400 degrees. Bake brie until golden brown and puffed, about 30 minutes. Reduce oven temperature to 350 degrees and bake until dark golden brown, 25 to 35 minutes more.

1/4 cup butter, softened
3 ounces cream cheese, softened
3/4 cup all-purpose flour
1 round (8 ounces) Brie cheese
1 large egg
1 teaspoon water
Assorted crackers and fresh fruit

Steps:

  • In a large bowl, beat the butter, cream cheese and flour on low speed until mixture forms a ball. Divide in half and wrap each portion in plastic wrap; refrigerate for 30 minutes., On a lightly floured surface, roll out each portion into a 7-in. circle about 1/8 in. thick. Place one circle on an ungreased baking sheet. Place Brie on pastry and top with remaining pastry circle; pinch edges to seal. Flute bottom edge if desired., In a small bowl, whisk egg and water; brush over top and sides of pastry. Bake at 400° for 15-20 minutes or until golden brown. Immediately remove from the baking sheets. Let stand for 30 minutes before serving. Serve with crackers and fruit.
