1 teaspoon canola oil
1 teaspoon lemon juice
2 catfish fillets (6 ounces each)
1-1/2 teaspoons paprika
1/2 teaspoon dried tarragon
1/2 teaspoon dried basil
1/2 teaspoon pepper
1/4 teaspoon salt
1/8 teaspoon cayenne pepper

Steps:

  • Combine oil and lemon juice; brush over both sides of fillets. Combine the remaining ingredients; rub over both sides of fillets. Place in an ungreased 15x10x1-in. baking pan., Bake, uncovered, at 350° for 10-15 minutes or until fish flakes easily with a fork.

4 (6 ounce) fillets catfish fillets
2 tablespoons dried parsley
¾ teaspoon paprika
½ teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon ground black pepper
2 tablespoons lemon juice
1 tablespoon butter, melted
¼ teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange catfish fillets in a 9x13-inch baking dish. Combine parsley, paprika, thyme, oregano, basil, and black pepper in a small bowl; sprinkle herb mixture over fish. Mix lemon juice, butter, and garlic powder in another bowl; drizzle butter mixture over fish.
  • Bake in preheated oven until fish is easily flaked with a fork, about 20 minutes.

Where did this recipe come from? Well, I kinds' made it up. I had a bunch of baked fish recipes, and just kind of took a bit from each of them, added a tad or two of my own, and had baked catfish that was easy, and yummy.

2 lbs catfish fillets, cut into about 3-inch pieces (works well with bass too)
1 tablespoon olive oil
2 teaspoons Italian herb seasoning
1/4 cup fresh lemon juice (or lime works well too)
1 pinch sea salt
1 dash black pepper
dry breadcrumbs

Steps:

  • Mix together all ingredients except the fish and bread crumbs.
  • Wash & dry fish.
  • Toss fish in oil mixture.
  • Lightly dip one side of fish in bread crumbs.
  • Place on cookie sheet (crumb side up) and bake at 350 for about 15-17 minutes or until done.
  • Serve with Rosemary Baked Potato Wedges, Green Salad & Mango Salsa for a healthy meal.

1/4 cup yellow cornmeal
1/4 cup dry bread crumbs
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1/4 cup French or ranch dressing

Steps:

  • Heat oven to 450°. Spray broiler pan rack with cooking spray. If fish fillets are large, cut into 4 serving pieces.
  • Mix cornmeal, bread crumbs, chili powder, paprika, garlic salt and pepper. Lightly brush dressing on all sides of fish. Coat fish with cornmeal mixture.
