This recipe is for whole baked apples stuffed with buttery brown sugar oat crumble. For extra flavor, feel free to swap the water with warm apple cider.

3 Tablespoons (43g) unsalted butter, softened to room temperature (extra soft, so it's easy to mash)
1/4 cup (50g) packed light or dark brown sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 cup (20g) old-fashioned whole rolled oats
4 large apples (see note), rinsed and patted dry
optional: 2 Tablespoons raisins, dried cranberries, or chopped nuts
3/4 cup (180ml) warm water

Steps:

  • Preheat oven to 375°F (191°C).
  • Using a handheld or stand mixer with a paddle attachment, or simply using a fork or spoon, beat/mash the butter, sugar, cinnamon, and nutmeg together until combined. Stir in the oats, then the raisins/dried cranberries/nuts, if using. Set aside.
  • This can be tricky, but I recommend using a sharp paring knife and a spoon. (Or an apple corer.) I find cookie scoops can easily break or crack the apples. Using a sharp paring knife, cut around the core, about halfway or 3/4 down into the apple. Use a spoon to carefully dig out the core. Takes a bit of patience and arm muscle. Once the core is out, use a spoon to dig out any more seeds.
  • Place cored apples in an 8-inch or 9-inch baking pan, cake pan, or pie dish. Spoon filling into each apple, filling all the way to the top. Pour warm water into the pan around the apples. The water helps prevent the apples from drying out and burning.
  • Bake for 40-45 minutes or until apples appear slightly soft. Bake longer for softer, mushier baked apples. The time depends on how firm your apples were and how soft you want them to be.
  • Remove apples from the oven and, if desired, baste the outside of the apples with juices from the pan. This adds a little moisture to the skin, but it's completely optional.
  • Serve warm with salted caramel, whipped cream, or ice cream. Cover and store leftovers in the refrigerator for up to 2 days.

I learned to make thie recipe at a cooking class I went to. It is sooo good. Baked apples with a custard and a meringue topping. True comfort food and truly worth the effort!

3 lb golden delicious apples
1 lemon,halved
1 cup + 2 Tbsp sugar
4 eggs, separated
dash(es) salt
2 c milk, warmed
4 Tbsp all purpose flour
2 tsp vanilla
2 Tbsp sweet sherry or any dessert wine

Steps:

  • 1. Peel and core apples and cut into fourths. Place then in a large saucepan with enough water to cover. Add the juice of the half lemon and the 2 tablespoons of the sugar. Place pan over medium heat and cook until apples are soft, about 15-20 minutes. Drain apples, transfer to a glass bowl and cover til cool, about 1/2 hour. Discard the cooking liquid.
  • 2. Meanwhile prepare a custard cream. In a medium saucepan, beat the four egg yolks with 1/2 cup of the sugar until the mixture is light colored. Mix in the flour and a dash of salt and slowly mix in the warm milk, stirring constantly, until mixture is very thick. Stir in vanilla. Transfer custard to a glass bowl and set aside to cool.
  • 3. Preheat oven to 250 degrees. butter an 11x12 in. baking dish. ( A large quiche dish works well). Mash apples coursely and mix in the 2 tablspoons sherry or dessert wine. Transfer to the prepared baking dish. cover apples with the cooled custard cream.
  • 4. Prepre the meringue. Beat the 4 egg whites until soft peaks form. Add dash of salt. slowly add the remaining sugar, beating until meringue is stiff. spread the meringue on top of the custard cream and bake for 45 minutes. Meringue will be only slightly colored and soft. Remove from oven. Serve warm or at room temperature.

I received this recipe from my mother-in-law, and it's one of my husband's favorites. It's a nice variation on traditional apple pie.

7 cups thinly sliced peeled tart apples
2 tablespoons lemon juice
2/3 cup sugar
2 tablespoons all-purpose flour
1/3 cup whole milk
2 large egg yolks, beaten
1 teaspoon grated lemon zest
Pastry for single-crust pie (9 inches)
1 tablespoon butter
MERINGUE:
3 large egg whites
1/4 teaspoon cream of tartar
6 tablespoons sugar

Steps:

  • In a large bowl, toss apples with lemon juice. In a small bowl, whisk sugar, flour, milk, egg yolks and lemon zest until smooth. Pour over apples and toss to coat. , Line a 9-in. pie plate with pastry; trim to 1/2 in. beyond edge of pie plate and flute edges. Pour filling into crust; dot with butter. Cover edges loosely with foil. , Bake at 400° for 20 minutes. Remove foil; bake 25-30 minutes longer or until apples are tender. Reduce heat to 350°., In a bowl, beat the egg whites and cream of tartar on medium speed until foamy. Gradually beat in sugar, 1 tablespoon at a time, on high just until stiff peaks form and sugar is dissolved. , Spread evenly over hot filling, sealing edges to crust. Bake for 15 minutes or until golden brown. Cool on a wire rack. Store in the refrigerator.

10 Cortland, Jonathan, or Granny Smith apples, (about 4 pounds)
1 lemon
1/4 cup sugar, plus 1 tablespoon for sprinkling
2 tablespoons unsalted butter
2 tablespoons brandy or cognac
1/2 recipe Swiss Meringue
Caramel Sauce for Baked Meringue Apples

Steps:

  • Core 6 apples by cutting a cone from the top of each with a paring knife. With a melon baller, scoop out seeds down to the bottom. Juice the lemon into cavity of each apple, and sprinkle each apple with 1/2 teaspoon sugar. Place 3 apples on a microwave-safe plate, and loosely cover with plastic wrap. Microwave on high power until the apples are translucent and cooked through but not caving in, about 3 1/2 to 4 minutes. Remove from the microwave, and repeat with another 3 apples. This cooking time will vary from oven to oven, so turn them occasionally, and check the window periodically. They will bubble up with juices when almost done.
  • Preheat the oven to 450 degrees. Peel, core, and slice the remaining 4 apples into 1/4-inch-thick wedges. In a large saucepan, melt butter over high heat. Add apple wedges, and toss to coat. Saute for about 1 minute, and sprinkle 1/4 cup sugar over the apple wedges. Saute, tossing often, until the apples are brown and translucent. Carefully add brandy (it may ignite), and toss again.
  • Transfer microwaved apples to a baking sheet, and stuff with the sauteed apples. Set aside in a warm place.
  • Fill a pastry bag fitted with Ateco No. 5 star or any other large star tip with meringue, and pipe out meringue onto each apple in decorative swirls. Place in oven, and bake until meringue just starts to brown, 1 to 2 minutes. Remove from oven, and serve warm with caramel sauce.

2 apples (recommended: Fuji or McIntosh)
1 teaspoon lemon juice
1/4 cup strawberry jam, jelly or preserves
2 tablespoon all-purpose flour
3 tablespoons butter, cold and diced
3 tablespoons brown sugar
1/2 cup oats, uncooked
1/4 teaspoon ground cinnamon
Pinch salt

Steps:

  • Preheat oven to 350 degrees F.
  • Cut each apple in half along its equator. Using a melon baller, cut out each side of the core, creating a rounded hole. Rub exposed apple flesh with lemon juice. Place 1 tablespoon of jam into each hole. For the topping: in a small bowl mix together flour, butter, brown sugar, oats, cinnamon and salt. Press this mixture on the top of each apple, covering jam. Place in a baking dish filled with about a 1/4-inch of water. Bake until top is golden brown and apple is tender, about 35 to 40 minutes.

255g Self-Raising Flour

170g Caster Sugar
2-3 Cooking Apples

Steps:

  • Preheat the oven to 180C/fan 160/gas 4.
  • Grease the base of a 28cm, 3.5cm deep Flan tin.
  • Melt the butter with the caster sugar in a Medium sized pot.
  • Add the flour and the egg yolks, mix well with a wooden spoon.
  • Spread the mixture in to the tin.
  • Beat the egg white with an electric beater until stiff, add the caster sugar and beat again briefly.
  • Peel the apples and grate them. Spread them over the base mixture.
  • Cover the apples with the meringue.
  • Put in the preheated oven for approx 45 minutes, turning the oven down after 20 mins if getting too brown.
  • Cool a little and serve with whipped cream.

10 tart apples, peeled, cored and sliced
1 cup plus 2 tablespoons sugar
2 egg whites
1 tablespoon grated lemon rind

Steps:

  • Place the apples in a saucepan with water to cover, add the cup of sugar, bring to a simmer and cook until the apples are tender, about 25 minutes. This step may be done in advance but the apples should be reheated before continuing with the recipe.
  • Preheat oven to 300 degrees.
  • Drain the apples and place them in a round baking dish, mounding them into a pyramid.
  • Beat the egg whites until they begin to peak, then gradually beat in the 2 tablespoons of sugar and the lemon peel. Continue beating until the egg whites hold firm peaks but are not dry.
  • Cover the apples with the meringue, place in the oven and bake 15 minutes, until the meringue begins to brown. Serve at once.
