This oatmeal is refined sugar-free, can be prepared vegan if using maple syrup, and gluten-free if using GF oats.

1 teaspoon butter
2 ripe apples, cut into bite-size pieces
1 ⅔ cups rolled oats
⅓ cup walnuts, crumbled into small pieces
1 teaspoon ground cinnamon
1 ¾ cups milk
½ cup honey
3 tablespoons coconut oil, melted
1 teaspoon vanilla extract
1 teaspoon olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch glass baking dish with butter.
  • Spread apples evenly on the bottom of the baking dish.
  • Mix oats, walnuts, and cinnamon together in a bowl. Spread over apples in the baking dish.
  • Combine milk, honey, coconut oil, vanilla extract, and olive oil in another bowl. Pour evenly over oat mixture; do not stir.
  • Bake in the preheated oven until top is golden, 30 to 45 minutes. Cool in the baking dish before serving, about 30 minutes.

Here is another recipe that was featured in an email from the www.hersheys.com website. One reviewer said the following: "We really liked this one - even the child who doesn't care for peanut butter! The mix of flavors and textures was interesting and made a great finish to a zippy meal. Next time I'll add some more cinnamon though as the peanut butter overwhelmed it." I may take that into consideration when I get around to trying this! :-)

4 cups apples, peeled and thinly sliced
1 cup sugar, divided
1 cup all-purpose flour, divided
3 tablespoons butter (or margarine, divided)
1 cup quick-cooking oats (or old-fashioned rolled oats)
1/2 teaspoon ground cinnamon
1 cup creamy peanut butter, Reese's brand recommended
sweetened whipped cream (or ice cream) (optional)

Steps:

  • Heat oven to 350°F Grease 9-inch square baking pan.
  • Stir together apples, 3/4 cup sugar, and 1/4 cup flour in large bowl. Spread in prepared pan; dot with 2 tablespoons butter. Combine oats, remaining 3/4 cup flour, remaining 1/4 cup sugar and cinnamon in medium bowl; set aside.
  • Place remaining 1 tablespoon butter and peanut butter in small microwave-safe bowl. Microwave at MEDIUM (50%) 30 seconds or until butter is melted; stir until smooth. Add to oat mixture; blend until crumbs are formed. Sprinkle crumb mixture over apples.
  • Bake 40 to 45 minutes or until apples are tender and edges are bubbly. Cool slightly. Serve warm or cool with whipped cream or ice cream, if desired.

100g raisin
100g pitted soft date , snipped into small pieces with scissors
85g light muscovado sugar
3 tbsp dark rum (or use orange juice)
25g unsalted butter
1 tsp mixed spice
zest and juice 1 lemon
4 Bramley apples , about 800g, peeled, cored and cut into 1cm rings
125g plain flour
100g unsalted butter
50g light muscovado sugar
3 tbsp jumbo oats
25g flaked almond (or use other nuts if you like)
custard or ice cream , to serve

Steps:

  • Heat oven to 190C/170C fan/gas 5. Put everything for the apple layer, except the lemon juice and apples, into a bowl and microwave on High for 1½ mins until the butter has melted and the sugar is syrupy. Toss in the apples and lemon juice, then spoon into a medium baking dish, making sure the dried fruit is evenly distributed.
  • Rub the flour and butter together, first into fine crumbs, then keep going until the mix forms bigger clumps, a bit like a rough biscuit dough. Stir in the sugar, oats and almonds. Scatter over the fruit, then cover with foil and bake for 1 hr, removing the foil for the final 30 mins, until golden and bubbling. Rest for 10 mins, then serve with custard or ice cream.

I stopped by the super busy Union Square market on Saturday morning and picked up some wine sap apples. This special variety is supposed to be one of the best for baking, so I had to give them a try. You can make this easy dessert in a big batch or small. It has simple ingredients, is very healthy, but is also super comforting.
