BAILEYS IRISH COFFEE CREAM FUDGE
Irish coffee... only more wonderfully sinful! This fudge recipe is remarkably smooth and creamy with hints of coffee and Baileys Irish Cream. It's really rich. Perfect for any time of year - not just for St. Patrick's Day. We can't wait to make it again!

Steps:
- 1. In a small bowl, combine Baileys and coffee crystals. Microwave on high for 10 seconds or until melted and dissolved.
- 2. In a medium saucepan, over medium heat, melt butter, evaporated milk, sugar, and marshmallow cream.
- 3. Slowly add the Baileys coffee mixture; stir well.
- 4. Boil for 5 mins.
- 5. Remove from heat. Stir in chips and vanilla extract. Stir for approx. 3-4 mins until smooth.
- 6. Pour into a foil lined 8x8" pan. Chill to set.
BAILEYS IRISH CREAM FUDGE
This recipe is not for the wee leprechauns. But, the older leprechauns are sure to enjoy this recipe! The fudge is easy to prepare and turns out super creamy.

Steps:
- 1. In a very large bowl, combine the milk chocolate chips, semi-sweet chips, marshmallow cream, vanilla, and Baileys Irish Cream. Set aside.
- 2. Line a 10x15" baking pan with foil. Lightly spray with cooking spray.
- 3. In a medium saucepan, combine granulated sugar, evaporated milk, and butter. Bring to a gentle boil over medium heat. Cook slowly and stir constantly for 10 minutes.
- 4. Pour the hot mixture into the bowl with the chips. Stir slowly by hand to combine. It is important to do this step by hand NOT with a mixer. Stir for approx. 2-3 minutes.
- 5. Pour fudge into greased pan and chill to set.
