2 quarts water, hot
1 tbsp. salt
2 pounds sweet potatoes, peeled, 2" dice
1 pound boniato, peeled, 1" dice
1 pound ripe plantains, peeled, 1" dice
¾ cup milk
2 oz butter, ½" dice
1 tsp white pepper
¼ tsp cinnamon

Steps:

  • 1. Place the peeled and diced sweet potatoes, boniato and plantains in a 6 quart pot. Add hot water and salt, then place the stockpot on the stove over medium heat. Bring to a boil and cook for 35 minutes or until an inserted fork in the sweet potatoes and boniato pierces easily.
  • 2. Heat the milk, butter, white pepper and cinnamon in a small stockpot until warm, then set aside for step 3.
  • 3. 3. Drain the water from the sweet potatoes, boniato and plantains and transfer them into a mixing bowl. Using a wire whisk mash until sweet potatoes, boniato and plantains are broken up. Add the warm seasoned milk and mix again until the sweet potatoes, boniato and plantains are smooth. If needed, season with additional salt to taste.
  • 4. Place the sweet potato, boniato and plantain mash on a large serving platter garnish with chopped parsley. Enjoy!

The mashed sweet potatoes and plantains are my favorite. They are sweetened with a little brown sugar, but the sweetness of the plantains comes out by pan frying it instead of boiling it.

2 sweet potatoes
3 plantains
1 1/3 cups milk
2 tablespoons butter, plus extra for cooking
3/4 teaspoon salt
3 tablespoons brown sugar

Steps:

  • Peel and dice the potatoes into 1 inch cubes. Place into a pot of cold water (the water should completely cover potatoes) and bring to a boil. Boil until potatoes are fork tender. Strain.
  • While the potatoes are cooking, slice the plantains into 1 inch thick slices. Place some butter in a pan and pan fry the plantains until golden brown.
  • Mash the potatoes and plantains together, then add milk, 2 tbsp butter, salt, and brown sugar.

1 1/2 lbs boniato, peeled and cubed in 1/2-inch cubes (Caribbean sweet potato)
4 tablespoons butter
1/2 cup heavy cream
1/4 teaspoon nutmeg, freshly grated (or more to taste)
salt and pepper (to taste)

Steps:

  • Place the boniato in a large pot with cold salted water to cover and slowly bring t a boil over medium-high heat. Reduce the heat to medium and gently simmer the boniato until very tender, about 10 minutes.
  • Drain the boniato well and return to the pot. Mash with a potato masher or put through a ricer. Do not use a food processor to mash the boniato or it will taste gummy.
  • Add the butter and cream and continue mashing to form a creamy puree. Season with nutmeg, salt and pepper to taste.
