1/2 cup brown sugar
2 tablespoons paprika
1/2 teaspoon cayenne pepper
One 16-ounce package bacon
One 13-ounce package cocktail franks, such as Lit'l Smokies

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, combine the brown sugar, paprika and cayenne pepper and mix well. Set aside.
  • Slice the bacon strips into thirds. Wrap each frank with a piece of bacon, secure with a toothpick and place on a baking sheet. Repeat with the remaining franks and bacon. Thoroughly coat each bacon-wrapped frank in the brown sugar mixture and place back on the baking sheet.
  • Bake until the bacon is crispy, 12 to 15 minutes. The rub has a lot of sugar in it, so make sure to turn halfway through the cooking process so the bottoms do not burn.

I've seen other recipes for these little indulgent treats, but they cook them in a crockpot and I prefer to bake ours. Baking them in the oven allows the bacon to crisp, the liquids to be released from the Smokies, and the brown sugar to caramelize on them deliciously. It also allows to you control the fat content of them a bit more easily, as most of the bacon drippings will remain on the sheet pan after cooking. We usually make them during the holidays, but they're good for all year 'round, of course. So easy to make!

1 (12 -16 ounce) package bacon (not thick sliced, thinner bacon works better, inexpensive is fine)
1 (16 ounce) package lit'l smokies sausages
brown sugar
cinnamon sugar (optional)
toothpick

Steps:

  • Preheat oven to 350 degrees F.
  • Open the packages of bacon and cut the whole slab into thirds across the bacon pieces. I usually cut them straight out of the refrigerator while they're cold, then allow them to warm a bit before wrapping the Smokies - the bacon is more pliable when not very cold, and makes it easier to work with awkwardly-shaped pieces.
  • To make assembly even easier, line up pieces of bacon on your cutting board or a clean counter. Wrap each Lit'l Smokie in a 1/3-cut piece of bacon, then secure with a toothpick.
  • Lay wrapped Smokies on a sheet pan. Tilting the toothpick downward makes lining them up a bit easier. (If you are making a double or triple batch with a Costco-sized 3-pound package of Smokies, continue wrapping until you run of room on your sheet pan, and then - just to make the overall assembly easier - can continue wrapping until you run out of the Smokies and simply put them in a bowl until you can lay them out on another sheet pan later or when your first one is out of the oven. If you run out of bacon before Smokies, you can cut some strips of bacon lengthwise to make additional slices so that you'll have enough.).
  • Sprinkle about 1/4 teaspoon of brown sugar on each Smokie - I simply sprinkle by hand.
  • Bake in preheated 350 degree F oven for 45 minutes.
  • Using tongs, transfer the treats to a platter or plate, arrange attractively, put them out for your guests, and stand back before you get trampled in the crowd's rush to get at them. :).
  • Note: I usually make triple batches of these at a time, using the 3-pound Smokies packages from Costco and three packages of bacon. Although best if served immediately, I bake them all up, then freeze them and thaw and reheat in the oven (or even the microwave) to serve. The bacon and brown sugar doesn't stay as crispy that way, but since most parties will have a varying number of attendees we find it's easier to make large batches during the holidays. Before reheating, you can sprinkle a bit more brown sugar over them to make up for any that fell off. ;).
  • Optional: before putting the brown sugar over, you can also sprinkle the Smokies with a small amount of cinnamon sugar, for even more flavor!

One of the recipe reviewers suggests a dipping sauce that consists of mayo, brown sugar and chili sauce, I didn't have any chili sauce on hand, so I substituted with regular BBQ sauce, with this as the result. Amount of ingredients is approximate, measure to your own taste.

1 pound Li'l Smokies
12 ounces, weight center cut bacon

  • Empty the smokies onto some paper towels and blot them dry. Dry smokies will allow the bacon to adhere better. Place the dried smokies in a single layer (keeping them separated) onto a small cookie sheet. Place in the freezer for 45 minutes. While the smokies are in the freezer, cut the bacon into thirds. Separate each piece of bacon and place on a large cookie sheet in a single layer. Put the bacon in the fridge for at least 30 minutes. The well-chilled smokies and bacon will help to keep everything from getting too slippery when you wrap the smokies later. When it is nearly time to take the smokies out of the freezer, preheat the oven to 350F. Line a rimmed sheet pan with heavy-duty aluminum foil. Make the glaze by whisking together the brown sugar, maple syrup, mustard, and cayenne (if using). Whisk the mixture well to ensure that the larger pieces of brown sugar have broken up. Wrap a piece of bacon around each smokie, pressing firmly on the final edge of the bacon to better ensure it does not spring open during baking. Try not to stretch the bacon when wrapping the sausages. Place the bacon-wrapped smokies onto the foil-lined sheet pan, seam side down. Continue with the rest of the bacon and smokies. Using a spoon, put a little bit of the thick glaze on top of each bacon-wrapped smokie, trying to coat each one evenly. You should have just enough glaze to do the entire batch. 1 lb beef lil smokey cocktail wienies
1 lb bacon..not the thick cut
2 c brown sugar
2 tsp cayenne pepper(optional)

Steps:

  • 1. Cut your long enough to wrap each little smokey. (Cut a normal strip in thirds is about right) I used round tooth picks to secure the bacon and it worked well. You can do this step ahead of time and store in the Frig.
  • 2. Preheat oven to 350
  • 3. Either line a cookie sheet with sprayed foil but parchement paper works best.
  • 4. Place the bacon wrapped little Jewels on the cookie sheet.
  • 5. Mix the brown sugar and red pepper in a bowl..we like sweet and spicey togather but the red peopper is optional. Sprinkle the mixture ontop of the little smokeys.
  • 6. Bake for about 45 min but keep an eye on them. I like my bacon a little more crisp so I Just keep an eye on them and until the bacon is crisp enough for me. Plus you want all the brown sugar to carmalize.
  • 7. Serve while warm or place in a crock pot on lowest setting to keep warm.

2 pkg little smokies
1 1/2-2 lb bacon, cut in thirds (i used thick cut)
1 stick butter
2 c brown sugar
3/4 c sweet chili sauce
1/3 c peanut butter
1 Tbsp minced garlic (i used jarred refrigerator)
3 tsp curry powder
1 tsp cayenne pepper (more or less depending on spice preference)

Steps:

  • 1. Preheat oven to 375°. Cut bacon into thirds and wrap each piece around little smokies. Place in baking dish or casserole seam side down.
  • 2. In a medium sauce pan, melt butter over medium heat. Add garlic and let cook for a couple of minutes. Pour in 1 cup of brown sugar and stir until it melts and dissolves.
  • 3. Add peanut butter and stir until it melts into the mixture. Next add chili sauce, curry and cayenne pepper.
  • 4. Stir until mixture is well combined. Turn heat to low and allow to simmer for about 5 minutes making sure to watch it so it doesn't scorch or burn.
  • 5. Pour mixture over smokies. Top with remaining 1 cup brown sugar. Bake for 25 minutes at 375°. Turn heat to 400° and bake for 5-10 more minutes. You're looking for the bacon to start becoming near the end of being crisp.
  • 6. Finally, turn the broiler on to get the bacon to that final crispy stage. ONLY leave them in there for about 2 minutes. You don't want to over cook your smokies.
  • 7. ***This recipe makes about 80. If you are only going to make one package of smokies you may have to adjust your cooking time. I just don't know as I've only just created the recipe and tried them with a double batch. Just watch for your bacon doneness and you'll be good to go. You will be in HOG heaven. "Pun intended"

15 slices bacon, each cut crosswise into thirds
3/4 c packed brown sugar

  • 1. Preheat oven to 350F. Line a 15x10x1 inch baking pan with foil; lightly coat with cooking spray. Set aside.
  • 2. Wrap each sausage link with a bacon piece, overlapping the bacon piece at the end. Press the end of the bacon piece to seal or secure it with a wooden toothpick.
