BACON-WRAPPED POTATO BITES WITH SPICY SOUR CREAM DIPPING SAUCE
I know the basic rules that make perfect appetizers #1 they call for BACON, because you can't go wrong with anything wrapped in bacon #2 dip them in sour cream. That would make these perfect!

- Preheat the oven to 400°F.
- Wash and dry the potatoes. Chop them into 1-inch pieces, keeping the chunks roughly the same size even if they aren't the exact same shape. Put the potatoes in a medium pot, cover with cold water, and bring to a boil. Season the water with 2 teaspoons of salt. Once the water begins to boil, cook the potatoes for 3 to 4 minutes, until you can stick a fork into them without too much resistance. You want the potatoes to be almost, but not fully, cooked through so they won't fall apart during the next steps.
- Drain the potatoes and put them in a large bowl. Add the rosemary, olive oil, 1/2 teaspoon salt, and a few grinds of pepper, and toss until the potatoes are evenly coated.
- Cut the strips of bacon into thirds. Wrap each potato bite in a piece of bacon, securing it with a toothpick. Put the potatoes on a baking sheet lined with parchment paper or aluminum foil spaced an inch or two apart. You may need to cook the potatoes in two batches.
- Cook the potatoes for 15 minutes, then flip each piece. Cook for another 15 to 20 minutes, until the bacon is cooked through and as crisp as you like it. Mix the sour cream and hot sauce in a small bowl. Season with salt and pepper. Pile the potato bites on a plate and serve alongside the dip.

- Pre heat oven to 350 degree. Add the frozen potato wedges to a baking sheet and put it in the oven for 15 minutes.
- Remove the potatoes and cut them into bite sizes. Approximately 1 inches each.
- Wrap 2 inches of bacon around 2 pieces of bite sized potatoes. Then use a tooth pick to hold them together.
- Add the bacon wrapped potatoes back in the oven for 30 minutes. Turn them over after the first 15 minutes.
- Mean while, in a small serving dish spoon in the sour cream, hot sauce and minced parsley. Remove the bacon wrapped potato bites and serve.

- Preheat oven to 400.
- Wash and dry potatoes, cut them into 1" pieces. (try keeping them the same size).
- Put potatoes in a medium size pot cover with cold water and bring them to a boil. Season with salt and pepper to taste. Once the water begins to boil, cook for about 3 to 5 minutes, or until almost done. You do not want to cook them all the way as they will continue cooking in the oven.
- Drain potatoes and put them in a large bowl. Add rosemary, olive oil, salt and a few grinds of fresh black pepper. Toss potatoes until they are evenly coated.
- Cut the bacon in half. Wrap each piece of bacon, secure with a toothpick. (hint: soak toothpicks in water for about 30 minutes so that they do not burn). Put potatoes on a baking sheet lines with foil, might need 2 baking sheets.
- Cook potatoes for 15 minutes, then flip each piece. Cook for another 10 - 15 mintues or until the bacon is cooked throught and crisp.
- Mix sour cream and hot sauce in a small bowl. Season with salt and pepper. Serve with potatoes.

I found what seems to be the exact same recipe on KITCHN....if you're into watching the Final Four Basketball tournament, these will be a hit! Addictive.
