This is a recipe my dad has been making for years. Great for the cheese and bacon lover-- it's a huge hit with crowds, even kids! And it's a great comfort food!

2 pounds ground beef
2 eggs
2 tablespoons ketchup
1 cup dry bread crumbs
1 tablespoon Parmesan cheese
1 teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon ground black pepper
1 small yellow onion, diced
6 slices bacon
8 ounces sharp Cheddar cheese, cut into quarters
1 tablespoon ketchup

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Combine ground beef, eggs and 2 tablespoons of ketchup in a large bowl. Mix well, then add bread crumbs, Parmesan cheese, garlic powder, salt, oregano, basil, pepper, and onion. Set mixture aside. Line the bottom of a 9x13 inch pan with bacon, widthwise. Place half of the meat mixture across the top of the bacon. Lay 3 of the 4 pieces of Cheddar cheese across the center of the meat, lengthwise. Cover the cheese with the second half of the meat mixture and mold the meat into a loaf shape. Pull the ends of the bacon up and around the loaf. Spread 1 tablespoon of ketchup thinly over the loaf.
  • Bake in the preheated oven until no longer pink in the center, about 60 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove from the oven.
  • Cut the final piece of Cheddar cheese into slices and place on top of the meat loaf. Return the meat loaf to the oven and continue baking until the cheese is melted, about 5 minutes. Remove from the oven and allow the meat loaf to rest for 5 minutes before serving.

I found this on my friend's Facebook post. Thought I'd make the U.S. conversions for everyone and save it here for all to enjoy! Recipe by Tom via Twisted Food's website. Others have recommended pre-frying the bacon for a couple minutes so it can cook all the way through in the oven and not be soft.

1 tablespoon oil
1 green pepper, chopped
1 white onion, minced
1 teaspoon salt
2 lbs ground beef
2 tablespoons dried oregano
1 tablespoon garlic powder
1 teaspoon cayenne pepper
1 teaspoon black pepper
1 teaspoon salt
15 slices provolone cheese
20 slices bacon

Steps:

  • In a skillet heat oil over medium high heat. Add onion, green pepper and 1 tsp salt. Cook until onion is softened and just starting to carmelize.
  • Mix remaining spices into ground beef and spread out onto small cookie sheet covered with foil.
  • Layer cheese slices over ground beef and cover with peppers and onions. Roll into a log. .
  • Line another sheet of foil with bacon and roll up ground beef log.
  • Bake in 360°F Oven, covered with foil for 20 minute Remove foil and bake another 30 minute.

Bacon Wrapped Beef Tenderloin Steaks with Spinach and Cheese Cakes image

2 packages frozen chopped spinach, 10 ounces each
3 tablespoons extra-virgin olive oil, 1 for onion, 2 tablespoons to fry cakes
1 small onion, chopped
1/2 cup Italian bread crumbs, 3 handfuls
1/3 cup grated Parmigiano-Reggiano, 2 handfuls
1 egg, beaten
1/4 teaspoon freshly grated nutmeg, eyeball it
Coarse salt and freshly ground pepper
4 thin slices bacon, look for packaged bacon marked "Center Cut" in packaged meats case
4 beef tenderloin steaks, 1 1/2 inches thick
Coarse salt and cracked black pepper, season to your tastes
2 tablespoons butter, divided
1 tablespoon all-purpose flour
1/2 cup dry red wine
1/2 cup beef stock, available on soup aisle
4 small Roma tomatoes
Extra-virgin oil, for drizzling
2 tablespoons chopped or snipped fresh chives

Steps:

  • Defrost spinach in microwave. Wring spinach dry by nesting in kitchen towel and twisting towel over garbage bowl or sink until spinach has given off all of its liquid. Place spinach in a medium mixing bowl. Heat a nonstick skillet over medium heat, add oil and onion and saute the onion until soft, 5 minutes. Add onion to spinach in bowl and return pan to stove top. Turn off heat.
  • Add remaining ingredients to spinach: bread crumbs, cheese, egg, nutmeg, salt and pepper. Combine mixture with a fork, then form into 3-inch patties. Set aside.
  • Line bacon up on meat-safe cutting board a few inches apart. Preheat a second skillet over high heat. Reheat the spinach cakes skillet over medium high heat. Season steaks with salt and pepper and set on bacon slices in the center of each slice. Wrap bacon over steaks. Place seam side down in pan and cook 2 minutes on each side. Add 2 tablespoons oil to spinach cakes pan and set cakes in to cook. Work in 2 batches if necessary. Cook cakes 3 minutes on each side.
  • Reduce heat to medium under steaks after the first 2 minutes on each side. Cook meat another 6 to 10 minutes, turning occasionally, for medium rare to medium well doneness.
  • Remove meat from the pan and let it rest. Add 1 tablespoon of the butter and flour and cook together 1 minute. Whisk in wine and deglaze pan. Whisk in broth and thicken sauce 1 minute. Add remaining tablespoon butter and remove skillet from heat.
  • Quarter tomatoes lengthwise.
  • To serve, set the spinach cakes and steaks beside each other on 2/3 of serving plates and pour sauce evenly over steaks. Scatter a quartered tomato next to spinach cakes on each plate. Drizzle tomatoes with oil, season with salt and pepper and top with chopped chives. Serve plates immediately.

This is how you make meatloaf night spectacular. When you cut into the oniony and moist meatloaf and find the gooey cheese, it's a nice surprise. The bacon is nice and crisp once baked. If you need a meal that'll feed a family, add this meatloaf to your menu.

1 1/4 lb 80/20 ground beef
1 1/4 lb 90/10 ground beef
1 c Panko bread crumbs
1 envelope beefy onion dry soup mix
2 large eggs
1 c French fried onions
1/2 c water
1/4 c ketchup
4 Colby Jack cheese sticks (from a 10 ounce pkg)
1 lb hickory smoked bacon, uncooked

Steps:

  • 1. Heat oven to 350 degrees F. Line a 13X9-inch baking pan with non-stick aluminum foil. Set aside.
  • 2. In a large bowl, combine the ground beef, Panko, dry soup mix, eggs, French fried onions, water, and ketchup. Mix well with hands.
  • 3. Form into a "football" shape loaf and place in prepared baking pan.
  • 4. Make a "trench" down the middle of the loaf. Place cheese sticks in the trench, breaking to fit.
  • 5. Re-shape top of loaf covering cheese completely with meat.
  • 6. Cover all exposed meat with bacon.
  • 7. Bake for 1 1/2 to 2 hours or until done and internal temperature reaches 160 degrees. Remove from oven and let rest 10 minutes before serving.
  • 8. Garnish slices with additional French fried onions if desired and serve with your favorite barbeque sauce on the side.
