2 large sweet onions
12 hickory-smoked bacon strips
1/2 cup packed brown sugar
1/2 cup balsamic vinegar
1/4 cup molasses
2 tablespoons barbecue sauce

Steps:

  • Cut each onion into 12 wedges. Cut bacon strips in half widthwise; wrap a piece of bacon around each onion wedge and secure with toothpicks. Place in an ungreased 13-in. x 9-in. dish. , In a small bowl, combine the brown sugar, vinegar, molasses and barbecue sauce; pour 1/2 cup over onions. Cover and refrigerate for 1 hour, turning once. Cover and refrigerate remaining marinade for basting., Drain and discard marinade. Grill onions, covered, over medium heat for 10-15 minutes, turning and basting frequently with reserved marinade.

4 large Vidalia onions
Kosher salt and freshly ground black pepper
1 stick unsalted butter, room temperature
3 slices bacon, cooked and crumbled
2/3 cup crumbled blue cheese
2 tablespoons freshly chopped thyme leaves

Steps:

  • Preheat grill to medium heat.
  • Cut onion top and "backtail" so onion can sit flat. Peel the onion. Using a parking knife cut a hollow cone-like shape into the center of the onion making sure not to go all the way to the bottom. Salt and pepper to the cavity. Place onions on individual squares of heavy duty aluminum foil.
  • Add the butter, bacon, blue cheese, and thyme to a bowl and mix until well combined. Add large dollops of the butter to each cavity of the onions. Fold the aluminum foil all around the onion, gathering at the top and sealing to create a tent.
  • Place on the grill over direct heat and cover the grill. Cook for 30 minutes until onions are soft. Let cool for 5 minutes before opening the foil packet and serving.

My Philip came up with this recipe many years ago we have added to it and more recently wrapped them in bacon. They are a wonderful addition to any grilled meal.

4 medium sized vidalia onions
italian style bread crumbs
4 slices bacon,uncooked, chopped small
4 cloves garlic chopped
parmesan cheese
green pepper, chopped fine
salt and pepper
olive oil
4 slices hickory uncooked bacon

Steps:

  • 1. Peel onions carefully and cut bottom slightly just enough so they can sit flat. Core onion leaving a thick shell capable of holding filling in. (about a 1/3 inch)
  • 2. Chop the removed onion finely.
  • 3. In a non stick fry pan add a bit of olive oil. cook chopped onion,green peppers, bacon and garlic until bacon is cooked through and onions and peppers are tender. Add bread crumbs salt and pepper and parmesan cheese to your preference.
  • 4. Stuff the onions with this mixture. Wrap a piece of bacon around each onion and secure it with a toothpick.
  • 5. Place onions on their own piece of foil and drizzle with olive oil. Tent each onion in its foil.
  • 6. Place on prepared grill and grill for about 20 to 30 minutes or until onions are tender yet firm.
  • 7. add hickory chips or apple wood chips to grill for an even more unique flavor.

BACON, ONION AND CHEESE STUFFED BURGER

1 1/2 pounds ground beef
1 clove garlic, minced
1 teaspoon hot sauce (recommended: Frank's Red Hot)
Salt and freshly ground black pepper
4 strips bacon, diced
1/2 onion, chopped
1 cup grated sharp Cheddar
4 burger buns
Lettuce, tomato, pickles for garnish

Steps:

  • Preheat grill to medium.
  • In a bowl combine beef, garlic, hot sauce, salt and pepper, to taste, being careful not to over mix. Warm a skillet over medium heat and fry bacon until crispy. Remove to a paper towel-lined plate to drain. Keep heat on skillet and fry a pinch of the beef in the bacon fat to test seasoning. Adjust seasoning, if needed, then form 8 even thin patties, about 1/2-inch thick and set aside. Saute onions in bacon fat in skillet until tender, 5 minutes. Place onions and bacon in a bowl with cheese. Form a spoonful of bacon-cheese mixture into a ball, then place in the center of 4 patties. Top each with another patty and seal the edges. Grill burgers over medium-high heat, flipping once until desired doneness is reached, approximately 4 minutes each side for medium. Serve in buns with garnishes. Alternative: In a medium skillet over medium-high heat, sear the burgers 4 minutes on each side.

2 large sweet onions, cut in wedges
8 slices hickory smoked bacon, thick, cut in half
2 tablespoons light brown sugar
2 tablespoons balsamic vinegar
1 tablespoon molasses

Steps:

  • COMBINE sugar, vinegar, and molasses in a zip-lock bag. Squish bag to combine ingredients.
  • WRAP onion wedges with bacon; secure with long wooden picks. Place in zip-lock bag.
  • PUT in refrigerator overnight. Turn bag over a couple of times.
  • REMOVE onion wedges from marinade; reserve marinade.
  • BAKE in a 350 degree oven until bacon starts to crisp, about 15 minutes.
  • GRILL to finish cooking onion and bacon. Basting with reserved marinade.
  • Don't cook too long, the onion should still be crisp-tender.
  • OR if you don't want to grill the onions, let them finish in the oven. Basting occasionally.
  • PREP TIME reflects the overnight in the fridge.

This is one of the most DELICIOUS appetizer/sides. Anyone who loves bacon and vidalias will absolutely LOVE this recipe. My family would like to have this at every outing. Friends love it also. EVERYONE wants the recipe. You just cant imagine how delicious the flavors are on this TREAT..

2 large onions, vidalia, peeled,
1 lb thin cut hickory smoked bacon
4-6 Tbsp light brown sugar
3-4 Tbsp balsamic vinegar
4-5 Tbsp molasses or maple syrup
1 box long wooden toothpicks

Steps:

  • 1. Mix brown sugar/vinegar/molasses or Maple syrup and set aside. Cut Vidalia's into 1/2" to 1" wedges. Throw away (or chop up for other uses) the few center pieces. You need a flat surface to stick picks through
  • 2. wrap each wedge center to center (around) with a 1/2 piece of bacon, top to bottom corner. Stick pick through bacon and onion. All the way through onion. This holds together while grilling. keeps from falling apart
  • 3. Lay out a single layer of wedges/wrapped and put a spoonful of sauce mixture on each onion. This is thick and will soak in good. After each piece has sauce on it. Cover and place in fridge for at least 2 hours or overnight. Flip container over 1/2 way through if possible so liquid soaks in onions good.
  • 4. Preheat grill to 300-350* It is a lot less messy to grill if you use an aluminum pan with holes in it on the grill. (dollar store) or a nonstick grill pad. cook until bacon is done and serve soon as possible. You will LOVE easier than i make it sound. ;o)
