BBQ JALAPENO POPPER CHICKEN THIGHS WRAPPED IN BACON
I created this recipe from necessity! I had a craving for jalapeno poppers and had a pack of boneless skinless chicken thighs I needed to cook.(I mean, who hasn't had that dilemma?!)

Steps:
- Flatten each chicken thigh with a heavy pan or meat hammer or whatever you have.
- Stuff each jalapeno halve with about a T of cream cheese.
- Place the jalapeno in the chicken thigh and roll it up (doesn't matter if it closes all the way).
- wrap each chicken thigh with 2 strips of bacon.
- Bake in 325 oven for about an hour
- For best results setup charcoal grill for indirect cooking (charcoal on one side meat on the other).
- Cook low n slow for about 2 hours.
- Baste with bbq sauce the last 30 minutes.
AIR FRYER BACON-WRAPPED CHICKEN THIGHS

- Combine softened butter, garlic, thyme, basil, salt, and pepper in a bowl. Place butter on a piece of wax paper and roll up rightly to form a butter log. Refrigerate until firm, about 2 hours.
- Lay one bacon strip flat on a piece of wax paper. Place chicken thigh on top of the bacon and sprinkle with garlic. Open up the chicken thigh. Place 1-2 tsp of the cold finishing butter in the middle of the chicken thigh. Tuck one end of bacon into the middle of the chicken thigh. Fold over the chicken thigh and roll the bacon around the chicken thigh. Repeat with remaining thighs and bacon.
- Preheat an air fryer to 370 degrees F (190 degrees C).
- Place chicken thighs in the basket of the air fryer and cook until chicken is no longer pink and the juices run clear, about 25 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

These are pretty much all of my favorite things layered into one extremely satisfying dish. You may have a lot of leftover bechamel sauce; bout a half of a box of cooked pasta will take care of this for you.

- Preheat oven to 400 degrees F (200 degrees C). Line a 9-inch square pan with parchment paper.
- Trim asparagus spears to extend 1 inch past each side of the thighs.
- Place 1 cup of the mozzarella cheese into a bowl.
- Lay chicken thighs flat on a work surface. Place 1/4 cup mozzarella cheese on each thigh, followed by 3 asparagus spears. Roll thigh around stuffing; wrap 1 bacon slice around each thigh. Tie a 12-inch length of string around the bacon, ensuring bacon ends are secured. Place stuffed thighs in the lined pan.
- Bake in the preheated oven until no longer pink in the center and juices run clear, 30 to 40 minutes. An instant-read thermometer inserted into the middle of a thigh should read at least 165 degrees F (74 degrees C).
- Melt 1 tablespoon butter in a small saucepan over medium-high heat; add jalapenos. Cook, stirring regularly, until juices have evaporated, 1 to 2 minutes. Add remaining butter, melt completely, about 1 minute. Stir in flour until it starts to brown, 1 to 2 minutes. Pour in warm milk, 1/3 cup at a time, mixing completely after each addition.

- Preheat the oven to 350 degrees F (175 degrees C).
- Spread chicken thighs out flat and pound if necessary with a meat mallet. Spread cream cheese across each thigh. Roll up chicken thighs, tucking in the sides. Wrap each chicken roll with at least 1 slice of bacon and secure with a skewer.
- Place chicken rolls in a deep casserole dish. Pour entire can of condensed cream of chicken soup over the chicken rolls. Cover dish with aluminum foil .
- Bake in the preheated oven for 20 minutes. Remove foil. Continue cooking until chicken is no longer pink in the center and the juices run clear and bacon is crisp, 20 more minutes.

STUFFED & GRILLED BACON WRAPPED CHICKEN THIGHS
My husband and I were away in a cabin and stopped in a winery while out and about. The host had recommended a nice chardonnay in answer to my inquiry what to serve with bacon wrapped grilled chicken. But then he recommended stuffing them before wrapping rather than marinating. This is what I came up with. I thought my husband had died and gone to heaven the way he was moaning about the taste. He loved it.

- Prepare your charcoal for the grill (I'm sure this is good on gas too but the charcoal grilling was out of this world). Spray a 12x12 or so piece of heavy duty foil with cooking spray. When coals are ready, place a piece of heavy duty aluminum foil directly on the grill directly over the hot area.
- Saute the mushrooms, shallots, garlic in the butter over medium heat until soft. Remove from the pan to a plate to cool at least 10 minutes.
- (If you were trying to do the whole thing on the grill, I'm sure you could cook this mixture on a piece of foil also).
- Run your finger up under the skin of each thigh to make a pocket. Divide the mushroom mixture into fourths and stuff each thigh with 1/4 of the mixture. This takes some patience, but starting at one end of the thigh, wrap 3 pieces of bacon to secure the mushroom mixture inside and try to wrap each piece of chicken in the bacon.
- You can secure with toothpicks, but I didn't and it was fine. I just had to be careful when turning them over.
- Grill on the foil, turning every 10 minutes. Fat will accumulate on the foil, allow this to happen for the first 30 minutes of grilling.
- After 30 minutes, punch holes in the foil or remove it completely and allow the chicken skin side to have 10 minutes of direct grill contact.
- Serve hot and crispy.

BACON WRAPPED MAPLE-MUSTARD CHICKEN THIGHS

- Preheat grill according to manufacturer`s instructions for cooking by direct and indirect heat. If using charcoal grill, place coals on one side of grill, not covering entire charcoal bed. Thighs will be cooked over direct heat first and finally by indirect heat, opposite the heat source.
- Rinse thighs, pat dry and season with salt and pepper to taste. Place maple syrup in shallow dish. Add mustard and yogurt and stir to combine. Dip thighs in syrup mixture, lightly roll up and wrap each with two strips of bacon to enclose. Secure with wooden toothpicks, if necessary. If bacon strips are long, one strip per thigh may be sufficient.
- Lightly coat grill with oil or cooking spray. Place thighs on preheated grill 4 to 6-inches above direct heat and brown on both sides, about 5 minutes. Move thighs to indirect heat side of grill and continue to cook with lid closed, about 10 to 12 minutes. Watch closely to prevent burning. Test thighs for doneness. Temperature should reach 160 degrees F. on meat thermometer. Return to direct heat to crisp bacon, about 3 to 4 minutes. Remove and place on serving platter. Remove toothpicks and serve.

- Sprinkle spices on chicken thighs. Wrap 2 slices of the smoky bacon around the chicken thighs
- Place in oven pan cover with foil
- "Cover with foil and cook 1 hour at 350 degrees, and then uncover and raise heat to 400 degrees and cook an additional 25 minutes or until bacon is brown." NOTE: Take the time to "drain the fat". Enjoy

- Pre-heat oven to 375 degrees F. Spread olive oil on a foil-lined baking sheet. Lay two strips of bacon flat and parallel. Place a chicken thigh at one end of the bacon, season with salt and pepper, and roll up so that bacon is wrapped around the outside. Place on the baking sheet. Bake for 20 minutes and then turn the thighs over. Bake for an additional 20 minutes and turn thighs again and bake for a final 20 minutes. Internal temperature should be 165 and the bacon should be nice and crisp on all sides.
