My family loves meat loaf-and this one in particular. I created this bacon meatloaf after trying and adjusting many other recipes over the years. Cheddar cheese tucked inside and a flavorful bacon topping dress it up just right for Sunday dinner! -Sue Call, Beech Grove, Indiana

1/2 cup chili sauce
2 large eggs, lightly beaten
1 tablespoon Worcestershire sauce
1 medium onion, chopped
1 cup shredded cheddar cheese
2/3 cup dry bread crumbs
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds lean ground beef (90% lean)
2 bacon strips, halved

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into a loaf in an ungreased 13x9-in. baking dish. Top with bacon., Bake, uncovered, at 350° for 70-80 minutes or until meat is no longer pink and a thermometer reads 160°. Drain; let stand for 10 minutes before cutting.

1-1/2 pounds ground beef
1 can (5 ounces) evaporated milk
1 large egg, lightly beaten
3/4 cup quick-cooking oats
1/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1/3 cup ketchup
1 tablespoon brown sugar
1 tablespoon prepared mustard

Steps:

  • In a bowl, combine the first seven ingredients. Shape into six loaves, about 4x2-1/2-in. Place in an ungreased 13x9-in. baking dish. Combine the ketchup, sugar and mustard; spoon over loaves. , Bake, uncovered, at 350° for 35-45 minutes or until a thermometer reads 160°.

chopped fresh rosemary
1/2 lb sliced bacon
3/4 cup seasoned breadcrumbs
2 minced garlic cloves
2 lbs meatloaf mixture
1 egg
1 tablespoon Dijon mustard
1/2 cup ketchup
1 onion, finely chopped
chopped fresh parsley
1 dash Worcestershire sauce

Steps:

  • I start by sauteing my onion and garlic in a pan with some olive oil until soft.
  • I add the cooked onion and garlic to my meat mixture.
  • Mix everything in a bowl together except the bacon.
  • Don't over mix.
  • Now form your lovely packages into 5" long loaves. Cut bacon slices to drape over each loaf. About 4 half slices for each little mini meatloaf. Pack them tightly on the meat to keep them moist.
  • I bake them on a rack over a cookie sheet to catch the drippings. Less mess this way.
  • Bake at 350 degrees for about 35-45 minutes. Temperature should reach 160.
  • Let rest about 10 minutes on cutting board before slicing, otherwise the slices will fall apart. Let the juices redistribute and solidify.

1 cup ketchup
3 to 4 tablespoons packed brown sugar
1 teaspoon ground mustard
2 large eggs, lightly beaten
4 teaspoons Worcestershire sauce
3 cups Crispix cereal, crushed
3 teaspoons onion powder
1/2 to 1 teaspoon seasoned salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
3 pounds lean ground beef (90% lean)

Steps:

  • In a large bowl, combine the ketchup, brown sugar and mustard. Remove 1/2 cup for topping; set aside. Add the eggs, Worcestershire sauce, cereal and seasonings to remaining ketchup mixture. Let stand for 5 minutes. Crumble beef over cereal mixture and mix well. , Press meat mixture into 18 muffin cups (about 1/3 cup each). Bake at 375° for 18-20 minutes. Drizzle with reserved ketchup mixture; bake 10 minutes longer or until meat is no longer pink and a thermometer reads 160°. , Serve desired number of meat loaves. Cool remaining loaves. 2 lbs lean ground beef
1/2 onion, chopped
2 garlic cloves, minced
1 teaspoon ground black pepper
1 tablespoon taco seasoning mix
1/2 cup ketchup
1 tablespoon Worcestershire sauce
2 eggs (Chris uses 1 tablespoon cornstarch instead of the eggs due to allergies)
1/2 cup dry breadcrumbs (Chris uses gluten free bread crumbs)
1/2 cup cheddar cheese, shredded (optional)
12 slices bacon

Steps:

  • In a bowl, mix the meat with onion, garlic, ground black pepper, taco seasoning mix, ketchup, Worcestershire and beaten eggs.
  • Add bread crumbs and mix well. (You will need to use your hands and knead it up well). Roll the meat into 12 mini-loaves that fit into your mini-loaves baking pan, (or use a shallow baking tray with a rack to drain the grease from the bacon).
  • MY NOTE: I partially cooked the bacon slices separately in a skillet and drained all the excess of fat, (or add the bacon cut in pieces into the meat, if you prefer).
  • Bake the mini loaves in a 350ºF. pre-heated oven for about 30 to 40 minutes until they are well cooked from the center and bacon slices look crispy and attached around the loaves.
  • Serve with steamed broccoli and mashed potatoes, if like.

1 teaspoon prepared mustard
1/4 teaspoon ground nutmeg
3 large potatoes, peeled and cut into 1/2-inch pieces
3 tablespoons olive oil, divided
1/2 teaspoon garlic salt, divided
1/4 teaspoon pepper, divided
1 pound fresh asparagus, trimmed and halved

Steps:

  • Preheat oven to 425°. In a large bowl, combine eggs, tomato juice, oats, onion and salt. Add beef; mix lightly but thoroughly. Shape into six 4x2-1/2-in. loaves; place on a sheet pan or large shallow roasting pan. Combine ketchup, brown sugar, mustard and nutmeg; brush over loaves. , Combine potatoes with 2 tablespoons oil, 1/4 teaspoon garlic salt and 1/8 teaspoon pepper; toss to coat.
