salt and ground black pepper to taste
12 leaves romaine lettuce
1 large avocado, sliced

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.
  • Stir chicken, bacon, tomato, and celery together in a bowl.
  • Whisk mayonnaise, parsley, green onions, lemon juice, Worcestershire sauce, salt, and black pepper together in a bowl until dressing is smooth. Pour dressing over chicken mixture; toss to coat. Refrigerate until chilled, at least 30 minutes.

1 cup panko bread crumbs
2 tablespoons plus 1 teaspoon minced fresh thyme, divided
1/2 teaspoon salt, divided
1/2 teaspoon pepper, divided
1/3 cup all-purpose flour
1 large egg, beaten
1 pound chicken tenderloins
4 bacon strips, cut into 1/2-inch pieces
1-1/2 cups grape tomatoes, halved
1 tablespoon red wine vinegar
1 tablespoon brown sugar

Steps:

  • Preheat oven to 425°. In a shallow bowl, mix bread crumbs, 2 Tbsp. thyme, and 1/4 tsp. each salt and pepper. Place flour and egg in separate shallow bowls. Dip chicken in flour; shake off excess. Dip in egg, then in crumb mixture, patting to help coating adhere. Place chicken on a greased rack in a 15x10x1-in. baking pan. Bake until a thermometer reads 165°, about 15 minutes., Meanwhile, in a large skillet, cook bacon over medium heat until crisp, stirring occasionally, about 5 minutes. Remove with a slotted spoon; drain on paper towels. 5 ounces frozen chopped spinach, thawed and drained
½ cup crumbled cooked bacon

¼ cup mayonnaise

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).

2 chipotles in adobo, chopped, plus 2 tablespoons sauce

1 lime, cut into wedges
1/2 red onion, chopped

  • Bring broth to a simmer and add chicken tenders, poach 6 to 7 minutes with a bay leaf. While chicken poaches, heat extra-virgin olive oil in a medium soup pot or deep skillet over medium-high heat. Add bacon and cook until crisp then remove with slotted spoon. 2 tablespoons extra-virgin olive oil
1 clove fresh garlic, minced

1 bunch fresh thyme

  • Preheat the oven to 400 degrees F.
  • To par-cook bacon, lay slices on a sheet pan and bake in a preheated 400 degree F oven for about 10 minutes until half-cooked. Remove and reserve.
  • Working on a sheet pan, coat the chicken breast with olive oil and minced garlic. Sprinkle lightly with salt and pepper. Next, wrap 2 pieces of par-cooked bacon strips criss-cross around each piece of chicken, forming an "x" pattern in the center. 3 slices bacon (thick cut deli style)
3 slices tomatoes (about 1/4 inch thick)
1/8 teaspoon rosemary (crushed or 1 sprig fresh)
2 slices mozzarella cheese (sandwich thickness)
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
1/8 teaspoon fresh ground pepper

Steps:

  • Preheat oven to 425 degrees. Cut bacon slices into 3rds. Slice tomato into 3 slices. Butterfly chicken breasts cutting almost in half. Cut slices of cheese in half.
  • Lay 1 1/2 slices of tomato in each chicken breast. Top that with both halves of cheese placed end to end on each breast. Sprinkle each breasts on the inside with garlic and onion powders and pepper. Close chicken breasts. Sprinkle each breasts on top with small amount of rosemary or if using fresh pull off a couple leaves and place on top of each breasts. Lay bacon across each breasts. Tuck any overlay of bacon underneath breasts. Secure bacon with toothpicks.
  • Place breasts in shallow baking dish. Bake for 45 minutes. Remove bacon (and fresh rosemary leaves if used). Place chicken back in oven for additional 8-10 minutes to brown. 1 tablespoon butter
Italian Dressing mix (half the packet)
1 tablespoon vegetable oil
6 ounces fresh baby spinach
4 garlic cloves, minced
2/3 cup half and half
2/3 cup mozzarella cheese, shredded
1/8 teaspoon salt
1/4 cup sun-dried tomatoes, drained of oil, chopped into smaller bites
4 slices bacon, cooked
4 slices of pepper jack cheese (Monterey cheese with jalapenos)

Steps:

  • Preheat the oven to 375 F. Use 4 small chicken breasts or 2 large chicken breast, sliced horizontally in half. Butter the bottom of the baking dish. Season chicken breasts from both sides with the Italian salad dressing mix. Place the chicken breasts, flat side down, into the greased baking dish and bake for 15-20 minutes at 375 F. In the mean time, make the creamed spinach. Heat 1 tablespoon vegetable oil in a large skillet on medium heat. Add spinach and cook for only 1 or 2 minutes until it is heated through and starts to wilt. Remove from heat. Add minced garlic and half and half. Bring to boil. Add shredded mozzarella cheese and keep stirring, on high heat, until mozzarella cheese starts to melt - about 30 seconds. 3 -3 1/2 lbs chicken, cut into 8 serving pieces
1 teaspoon salt
fresh ground black pepper
1 cup flour
3 -5 tablespoons butter
2 tablespoons olive oil
1/2 lb thinly sliced lean bacon, cut crosswise into 2-inch pieces
1/4 cup finely chopped shallot
4 medium firm ripe tomatoes, peeled, seeded and coarsely chopped
3/4 cup dry white wine

Steps:

  • Pat the chicken completely dry with paper towels. Sprinkle the pieces on all sides with the salt and a few grindings of pepper. Then coat the chicken with flour and shake each piece vigorously to remove any excess.
  • In a heavy 10- to 12-inch skillet, melt 3 Tblsp. of the butter with 2 Tblsp. of the olive oil over high heat.
  • When the foam begins to subside, brown the chicken in the hot fat, 4 pieces at a time.
  • Start the pieces skin side down and turn them frequently with tongs or a slotted spoon until they are richly and evenly colored.
  • As they brown, transfer the pieces to a plate and brown the rest of the chicken similarly, adding the remaing butter and oil to the pan if necessary.
  • Pour off the fat remaining in the skillet and in its place add the bacon. Stirring frequently, cook over moderate heat until the bacon is crisp and brown and has rendered all its fat.
  • With a slotted spoon, remove the bacon to paper towels to drain. Pour off all but 2 Tblsp. of the bacon fat remaining in the pan.
  • Add the shallots to the fat and, stirring constantly, cook for about 3 minutes, or until they are soft, transparent and lightly brown.
  • Add the tomatoes and wine and, stirring from time to time, cook briskly, uncovered, over high heat until most of the liquid has evaporated and the mixture is thick enough to hold its shape lightly in a spoon.
  • Return the chicken and bacon to the skillet and turn them about with a spoon until they are well coated with the tomato sauce. Bring to a boil, reduce heat to low, and simmer partially covered for 35 to 40 minutes.
  • When the chicken is done it should show no resistance when a thigh is pierced with a small, sharp knife. Taste the sauce for seasoning.
  • With tongs, remove the chicken from the skillet and arrange the pieces skin side up on a large heated platter. Pour the sauce over the chicken and serve at once.

1/4 cup white vinegar
1/2 cup minced parsley
2 teaspoons sugar

1 head lettuce
2 firm ripe tomatoes, peeled,diced
3 cups diced cooked chicken
1/2 lb bacon, diced
1/2 lemon, juice of

Steps:

  • Combine ingredients for dressing in blender or in jar with tight fitting lid.
  • Blend thoroughly.
  • Chill.
  • Make sure lettuce, chicken, tomatoes are chilled until serving time.
  • Tear lettuce into bite sized pieces.

1 (250 g) package light cream cheese
1 (105 ml) jar sun-dried tomatoes packed in oil
1 bunch green onion
2 (16 ounce) packages reduced-sodium bacon

  • Chop the sun dried tomatoes (removed from oil) and green onions, then mix by hand with cream cheese in a bowl.
