EASY BACON, ONION AND CHEESE STUFFED BURGERS
Wonderful stuffed burger that can be easily changed to suit different tastes. My kids who normally don't have onions on their burgers REALLY enjoyed these. We served with french fries and root beer floats!

Steps:
- In a large mixing bowl, mix together the ground beef, salt, black pepper, barbeque sauce and garlic powder using your hands. Taking a small handful at a time (approximately 1/4 pound), shape into 12 patties. Lay patties out on a cookie sheet and cover with plastic wrap; place patties in the refrigerator.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown, about 5 minutes. Remove bacon from skillet with a slotted spoon and drain on paper towels. Turn the heat down to medium and pan fry the onions in the remaining bacon drippings until soft and translucent and just beginning to brown. Mix together onions and bacon in a small bowl.
- Prepare a grill or large skillet for medium heat.
- As the grill heats, pull beef patties out of the refrigerator; top 6 of the patties with 1- 1/2 tablespoons of the bacon and onion mixture each, and sprinkle with shredded cheese. Top each with one of the remaining patties and press the edges together to seal.
- Grill or pan fry the stuffed and sealed patties until cooked through, 2 to 3 minutes per side. Serve on hamburger buns with condiments of your choice.

- Fry bacon until crisp; crumble.
- Combine beef, salt, pepper, garlic powder and onion and shape into 12 large, thin patties.
- Top six patties with 1 tablespoon bacon and 1 tablespoon cheese (this is approximate-use what looks right).
- Place remaining 6 patties on top of cheese/bacon topped patties and press edges to seal.
- Grill or broil for 3-4 minutes per side until done. We like ours well done.
- The last 2 minutes of cooking top patties with remaining bacon and cheese.
- Serve on buns.

- Chop bacon strips into 1/2 inch pieces. Cook bacon pieces over medium to medium high heat, until evenly browned. Drain bacon pieces and discard fat. Set bacon aside.
- In a medium mixing bowl, combine turkey, salt and garlic.

BACON-STUFFED BURGERS

- Combine the cheese and bacon in a bowl.
- Put the ground chuck in another bowl and sprinkle with salt and pepper; mix with a rubber spatula. Flatten a quarter of the meat mixture in the palm of your hand. Squeeze together about a tablespoon of the cheese and bacon mixture to make a little nugget; place in the center of the patty. - Wipe the grate of your grill or your skillet with olive oil before heating over a medium-high flame.
- Cook the bacon in a dry skillet over medium heat; when done to your like, place on paper towels to drain and set aside.
- In a medium bowl, combine the ground beef, salt, pepper, thyme and sage; mix well using your hands and form into 8 thin patties; form small craters in the center of half of the patties, leaving an edge of about a quarter inch all the way around and place a scant 2 tablespoons of blue cheese in the center; top each with another patty, pinching the seams together, making sure the stuffing is completely covered.

- In a large, heavy frying pan over medium heat, warm olive oil. Add onions, cover and cook, stirring occasionally, until they are completely limp, 10-15 minutes. Uncover the pan, reduce heat to medium low and cook, stirring frequently, until the onions are golden brown and sweet, 35-45 minutes; do not allow them to burn. Remove the pan from heat and let the carmelized onions cool to room temperature. In a small bowl, stir together blue cheese and bacon. Set aside. - Cook bacon in large pan until crispy.
- Remove bacon and crumble into lil bits. Set aside in bowl. Reserve the grease for the burgers.
- In a large bowl combine hamburger, Worcestershire sauce, bread crumbs, egg, salt, pepper, garlic, and onion.

- Form big hamburger patties.

FONTINA-STUFFED BURGERS WITH PORTOBELLOS AND BACON AND ROASTED POTATO WEDGES
Steps:
- For the burgers: Preheat the oven to 400 degrees F.
- Place the bacon on a baking sheet lined with a rack. Roast until the bacon is crisp but still pliable, 20 minutes.
- Using a large spoon, scrape the gills out of the mushrooms. Toss the mushrooms with olive oil and some salt and roast for 20 minutes.
- Divide the ground beef into 8 portions; season generously with salt. Roll each portion into a ball and flatten into a patty. Make a nest or indentation in four of the patties and fill each with 2 ounces of the fontina. Place the remaining patties on top of the cheese-filled patties, pinch firmly to close, and then press and shape the patties.
- Coat a large sauté pan with olive oil and add the onions. Season with salt and cook until the onions are starting to brown and are very soft and aromatic, 5 to 6 minutes. Remove from the heat.
- Heat a large griddle or flat-top over medium-high heat. Coat the griddle lightly with olive oil and cook each burger until very brown and crusty, 4 to 5 minutes per side.
- Cut the rolls almost all the way in half, leaving one side intact, so they open like a book. Place open-side down on the griddle and toast.
- Place a burger on the bottom half of each roll. Break the bacon strips in half and place 4 halves on each burger. Divide the onions among the burgers. Cut each mushroom in 3 slices and arrange on top of the onions. Top with the remaining fontina. Place the burgers on the baking sheet and roast or broil until the cheese has melted. Top each burger with baby arugula and close the roll. Serve hot.
- For the potato wedges: Toss together the Parmigiano-Reggiano, olive oil and potatoes in a bowl; season with salt. Lay the potatoes out in a single layer on a baking sheet. Roast for 10 minutes. Turn the potatoes over and roast for an additional 10 minutes.
- Toss the potatoes with the parsley and serve alongside the burgers.

- Preheat grill or griddle to high heat. Divide ground beef equally into three portions. For each portion, take about 2/3 of it and form it into a very flat patty with sides (again, this is super easy if using the burger press). Divide the jalapeno, bacon pieces, and cheese into three equal portions. Add 1/2 of the toppings to the meat.
