BACON AND PARMESAN BRUSSELS SPROUTS WITH BLACK GARLIC
Brussels sprouts cooked in a cast iron skillet with bacon, Parmesan cheese, and black garlic. My wife and kids hated Brussels sprouts until I came up with this recipe. Sprinkle additional Parmesan cheese over the top if desired.

Steps:
- Place bacon into a large cast iron skillet over medium heat and cook until fully browned, 7 to 10 minutes. Remove bacon to a paper towel-lined plate, but leave the bacon grease. Chop bacon when cool enough to handle.
- Add 1/4 cup butter and black garlic clove to the bacon grease. Mash the black garlic thoroughly, then cook and stir until fragrant, 1 to 2 minutes. Add Brussels sprouts and remaining butter; season with salt and pepper. Cook, stirring only a couple of times, until sprouts are browned and tender, 5 to 7 minutes.
- Remove from heat and add bacon and Parmesan cheese; stir until heated through and cheese is melted. Place into serving dish and cover with a lid if not serving immediately.

BACON-PARMESAN BRUSSELS SPROUTS
I never thought I liked brussel sprouts until I was given this very old recipe. It's delicious and may just change your mind about Brussel sprouts! *It's not a good idea to add salt to this recipe, as the bacon and parmesan cheese are already salty enough. I've substituted broccoli and/or cauliflower for the sprouts and they are also delicious prepared in this way. The only change I make is that I generally use a microwave steamer to cook the broccoli and cauliflower.

PARMESAN ROASTED BRUSSELS SPROUTS WITH DOUBLE SMOKED BACON
Steps:
- directions Toss the brussels sprouts in the oil along with the garlic, salt and pepper, place in in a single layer on a baking sheet and roast in a preheated 400F oven until lightly golden brown, about 20 minutes, mixing them up half way through. Meanwhile cook the bacon until crispy and drain on paper towels before crumbling. Sprinkle on the parmesan and return to the oven until it melts, about 1-2 minutes. Toss the brussels sprouts with the bacon and lemon zest, and lemon juice and enjoy! Tip: Slice the brussels sprouts with the slicing blade in a food processor rather than slicing by hand with a knife. Tip: Trim and slice the brussels sprouts a day or two ahead of time and store, covered, in the fridge. Tip: Make a few hours ahead and rewarm in the oven for a few minutes before serving.
