2 tablespoons extra-virgin olive oil, plus more for brushing the grill grates
2 cups cremini mushrooms, finely chopped
1/4 cup finely chopped shallots
2 garlic cloves, chopped
1 1/4 pounds ground turkey (dark meat preferred)
1/2 cup Greek yogurt, plus extra for the buns
1/2 cup dry breadcrumbs
1 large egg, beaten
Kosher salt and freshly ground black pepper
4 brioche buns, split and toasted
4 slices ripe tomato
16 thin cucumber slices

Steps:

  • Add the oil to a medium skillet over medium-high heat. When the oil is hot, add the mushrooms and cook, without stirring, until the undersides are browned, 2 to 3 minutes. Stir and let brown on the other side, about 2 minutes, then reduce the heat to medium and add the shallots and garlic. Cook and stir until the shallots are softened, about 5 minutes. Remove from the heat, then cool the mixture.
  • Combine the turkey, yogurt, breadcrumbs, egg and cooled mushrooms in a large bowl. Season with salt and pepper. Mix together lightly with a wooden spoon just to combine; don't overmix. Form into four 1-inch-thick patties. Refrigerate for 2 to 3 hours and up to overnight.
  • Preheat a grill or grill pan to medium-high heat. Sprinkle the outsides of the patties with salt and pepper. Brush the grill grates with oil and grill the burgers until nicely marked, cooked through and the internal temperature reads 155 to 160 degrees F, about 6 minutes per side. Serve on the buns with additional yogurt, tomato and cucumber slices.

2 slices multigrain bread
1 pound ground turkey
6 white mushrooms, finely chopped
1 egg
2 green onions, finely chopped
3 slices cooked bacon, finely chopped, or more to taste
5 dashes hot sauce, or more to taste
½ teaspoon pureed garlic
salt and ground black pepper to taste

Steps:

  • Mince bread in a food processor and transfer crumbs to a bowl. Add turkey, mushrooms, egg, green onions, bacon, hot sauce, garlic, salt, and pepper. Mix well and divide into 4 portions. Form each portion into a patty.
  • Preheat a grill for medium heat and lightly oil the grate. Cook patties until no longer pink in the center, 12 to 14 minutes.

5 pounds turkey breast, ground
2 ounces garlic powder
2 ounces onion powder
2 ounces chopped fresh rosemary
2 pounds bacon, chopped small
2 pounds white onion, chopped
4 ounces brown sugar
2 ounces honey
2 ounces maple syrup
2 ounces balsamic vinegar
1 ounce jalapeño, chopped
13 brioche rolls
Dijon mustard, for the sandwiches
Lettuce, for the sandwiches
13 slices fresh mozzarella

Steps:

  • For the patties: Place the turkey in a bowl with the garlic and onion powders and rosemary.
  • Form into thirteen 6-ounce patties.
  • For the bacon jam: Sauté the bacon until crispy. Add the onions and cook together.
  • Add the brown sugar, honey, maple syrup, vinegar and jalapeño and simmer 8 to 10 minutes.
  • Chill.
  • Build: Toast the brioche rolls. Spread with the Dijon mustard. Add the lettuce, patties, 1 slice fresh mozzarella and 2 ounces bacon jam to each.

1 cup sliced fresh mushrooms
1 medium carrot, grated
1/4 cup dry red wine or chicken broth

1/2 cup barbecue sauce, divided
4 hamburger buns, split
4 Bibb lettuce leaves

Steps:

  • In a large nonstick skillet, saute onion in butter for 3 minutes. Add mushrooms and carrot; cook and stir for 3 minutes. Add the wine, salt and pepper; simmer for 2-3 minutes or until liquid is evaporated. , Transfer to a large bowl; cool slightly. Crumble turkey over mixture and mix well. Shape into four patties. Cover and refrigerate for at least 1 hour., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. 2 teaspoons Worcestershire sauce
1 teaspoon lemon juice
8 Ball Park® Hamburger Buns
½ pound thick-cut smoked bacon

2 pounds lean ground beef
2 teaspoons garlic granules

Steps:

  • To prepare herbed mayo: In a medium bowl, combine mayonnaise, dried herbs, Worcestershire sauce and lemon juice, mixing well. Cover and refrigerate.
  • Cut each strip of bacon in half and cook in a skillet over medium heat until crisp.
  • Remove and drain on paper towels. Pour off all but 1 tablespoon bacon drippings from the pan.
  • Add mushroom slices and soy sauce to the pan.
  • Over medium heat, saute mushrooms until browned and soft, about 5 to 10 minutes. Drain on paper towels.
  • Preheat grill for medium heat and lightly oil the grate.
  • To prepare burgers, mix ground beef, garlic granules, and salt and pepper together in a bowl. Form into patties. Place on prepared grill and grill 3 to 5 minutes per each side. An instant-read thermometer inserted into the center should read 150 degrees F (65 degrees C).
  • During last 2 minutes of cooking, top with cheese and cover to melt cheese.
  • Meanwhile, heat oven to 400 degrees, arrange hamburger buns on a foil-lined cookie sheet and lightly toast hamburger buns in the oven on each side.
  • When toasted, remove buns to serving plates and spread some of the herbed mayonnaise on each bun.
  • To serve, put cheese-topped patties on each bun, add desired hamburger trimmings, finish with the top bun and enjoy.
