14 ounces wild Georgia shrimp, peeled, de-veined, small, rough dice
4 ounces lump crabmeat
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1 egg
1 1/2 tablespoons blackening spice
1 to 2 cups bread crumbs
1 pound frozen pearl onions
1/3 cup sherry vinegar
1/3 cup white wine
1/2 cup sugar
2 tablespoons ketchup
1/4 cup golden raisins
1 bay leaf
1/8 teaspoon dried thyme
1/4 teaspoon dried tarragon
1 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons vegetable oil
1 cup chicken stock
8 wild Georgia shrimp, peeled and deveined
1 egg
1/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon granulated garlic
1/8 teaspoon dill weed
1/8 teaspoon celery seed
1/8 teaspoon chipolte sauce (Recommended: Tabasco)
1 cup all-purpose flour
1/4 cup cornmeal
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon granulated garlic
1/2 teaspoon dill weed
1/2 teaspoon celery seed
1/2 teaspoon cayenne pepper
1 cup sour cream
1 tablespoon chili sauce (recommended: Srirachi)
2 strips smoked bacon, small dice
3 clove garlic, minced
2 cups milk
2 cups heavy cream
1/4 cup whole butter
1 cup grits
Salt and pepper

Steps:

  • Wild Georgia Shrimp and Crab Cake:
  • Place 1 tablespoon oil on a heated saute pan, add green peppers and garlic, cook for 30 seconds stirring constantly. Add shrimp and cook for 1 to 2 minutes until shrimp is pink. Drain excess liquid and place cooked shrimp, peppers and garlic in a medium mixing bowl. Add crabmeat, mayonnaise, mustard, lemon juice, egg and blackening spice to the mixing bowl and combine. Gradually add breadcrumbs until bound together. Form shrimp mixture into 2-ounce cakes. Saute cakes in 2 tablespoons of hot oil for 2 to 3 minutes on each side over medium heat.
  • Pearl Onion Marmalade:
  • Place all ingredients in saucepan and cook over medium heat until thick.
  • Fried Shrimp Marinade:
  • Combine all ingredients together and marinate for 30 minutes.
  • Fried Shrimp Breading:
  • Combine all ingredients together and mix. Remove shrimp from egg mixture and dredge in seasoned flour mix. Deep fry in 350 degree F hot oil for 30 to 45 seconds.
  • Chili Sour Cream:
  • Combine ingredients together and place in plastic squirt bottle.
  • Bacon and Garlic Grits:
  • Render bacon in saucepot until crispy. Add garlic to pot and saute for 20 to 30 seconds.
  • Add milk, cream and butter, bring to boil. Add grits and stir. Turn heat to medium and cook for 10 minutes, stirring often. If grits become too thick, add milk to thin it out. Season, to taste, with salt and pepper.

ROASTED TURKEY WITH AVOCADO, BACON, BALSAMIC ONION MARMALADE, AND MAYONNAISE

6 fresh sage leaves
1 (3- to 4-pound) boneless turkey breast
2 tablespoons unsalted butter, softened
Kosher salt and freshly ground black pepper
12 slices bacon
4 ciabatta rolls
1/2 cup Balsamic Onion Marmalade (page 193)
1 ripe avocado, halved, pitted, peeled, and sliced
4 tablespoons Mayonnaise (page 176)

Steps:

  • Preheat the oven to 350°F.
  • Slide the sage leaves under the skin of the turkey breast and place the turkey on a sheet pan. Rub the skin with the butter and season generously with salt and pepper. Roast the turkey for 1 to 1 1/2 hours, until it reaches an internal temperature of 165°F. Baste the meat with its juices throughout. (Keep in mind that the meat will continue to cook even after it's removed from the oven, so be careful not to cook it too long.) Allow the meat to rest before slicing, or cool completely.
  • In a heavy skillet over medium-high heat, cook the bacon until golden brown and crisp on both sides. Transfer to paper towels to drain.
  • Slice the ciabatta rolls in half. Place the turkey slices on the bottom halves and top with the marmalade. Place the bottom and top halves of the rolls in the 350°F oven and remove once the marmalade is heated through and the bread is toasted. Top the marmalade with the bacon, followed by the avocado. Evenly spread the mayonnaise on the top halves of the rolls. Close the sandwiches, cut into halves, and serve.
  • Note
  • Don't cook the bacon over too high heat or the fat will burn. When you're done, save the fat you've rendered and store it in the freezer. The next time you're roasting some vegetables, toss some bacon fat in with them!

BONE MARROW WITH BACON MARMALADE AND SOURDOUGH TOAST

1 teaspoon olive oil
1/2 large red onion, minced
8 ounces applewood-smoked bacon, cut into 1/4-inch cubes
1/4 cup light-brown sugar
2 tablespoons maple syrup
Pinch cayenne pepper
8 large (5-inch) beef marrow bones, split lengthwise so they resemble canoes
2 cloves garlic, minced
Leaves from 4 sprigs fresh thyme
Zest of 2 Meyer lemons
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 sourdough baguette, sliced 1/4 inch thick on bias
1/4 cup extra-virgin olive oil

Steps:

  • Make the bacon marmalade: In a medium saute pan over medium-high, heat the olive oil and add the onions. Saute until the onions are well caramelized, 8 to 9 minutes, then remove from the pan and set aside. Add the bacon to the same pan and cook until browned and crispy, 7 to 8 minutes. Drain the bacon grease off and then add the brown sugar, maple syrup and cayenne pepper to pan. Bring to a boil, then lower the heat and simmer until the jam has thickened, 3 to 4 minutes. Return the onions to the pan, remove from the heat and allow to cool.
  • Make the marrow and toast: Preheat the oven to 375 degrees F.
  • Place the bones cut-side up on a large baking tray. Sprinkle the bones with garlic, thyme, lemon zest and salt. Roast the bones in the center of oven until the marrow is soft and has begun to separate from the bone, 12 to 15 minutes. Remove from the oven and set aside.
  • Place the bread on a baking sheet and drizzle with the olive oil. Bake until golden and crispy, 5 to 7 minutes. Serve the marrow with marmalade and toast.

PAN-SEARED SCALLOPS WITH APPLE-ONION MARMALADE & BACON



PAN-SEARED SCALLOPS WITH APPLE-ONION MARMALADE & BACON image

For the marmalade:
1/4 cup olive oil
2 large sweet onions such as Vidalia, cut through the stem end into thin wedges
2 large Golden Delicious or other baking apples, peeled, cored and cut into thin wedges
1/2 tsp. cumin seeds
2 tsp. apple cider vinegar, or more, to taste
3/4 tsp. salt
Freshly ground pepper, to taste
6 slices lean bacon
18 large sea scallops, about 1 1/2 lb. total, patted dry
Salt and freshly ground pepper, to taste
1 cup apple cider

Steps:

  • To make the marmalade, in a large fry pan over medium to medium-low heat, warm the olive oil. Add the onions and cook, stirring often, until they begin to soften, about 15 minutes. Stir in the apples and cumin seeds. Cook, stirring, until the onions are golden and the apples soften, about 30 minutes more. Add the cider vinegar, salt and pepper and remove from the heat. You should have about 3 cups. Set aside in the pan. In another large fry pan over medium-high heat, fry the bacon until crisp, 3 to 5 minutes. Using tongs or a slotted spatula, transfer to paper towels to drain. Discard all but about 1 Tbs. (a light coating) of the bacon drippings from the pan. Sprinkle the scallops lightly with salt and pepper. Return the fry pan to medium-high heat. When the pan is hot, add the scallops a few at a time and cook, turning once, until lightly browned on both sides, about 1 minute on each side. Transfer to a plate and keep warm while you cook the remaining scallops. When all the scallops are cooked, add the apple cider to the pan and boil until reduced by half, about 5 minutes. Pour any juices that have collected on the scallop plate into the fry pan. Remove from the heat. Meanwhile, reheat the marmalade over medium-low heat until heated through. Spread about 1/2 cup of the marmalade on each individual plate. Top each portion with 3 scallops, then drizzle with about 1 Tbs. of the cider sauce. Crumble the bacon over the scallops, dividing it evenly. Serve warm.

1 teaspoon hot sauce, plus more to taste
1 teaspoon sugar
1/2 teaspoon red wine vinegar, plus more for drizzling
Kosher salt and freshly ground pepper
1 1/4 pounds ground pork
2 teaspoons extra-virgin olive oil, plus more for drizzling
4 slices Swiss cheese
4 hamburger buns, split and toasted
1 romaine lettuce heart, thinly sliced
2 medium tomatoes (1 sliced, 1 chopped)

Steps:

  • Make the bacon marmalade: Cook the bacon in a large nonstick skillet over medium-high heat until almost crisp, 5 minutes. Pour out half of the drippings, add the onion to the skillet and cook, stirring, until the onion browns, 10 more minutes (add a splash of water if the onion sticks). Stir in the hot sauce, sugar, vinegar, and salt and pepper to taste.
  • Form the pork into four 4-inch-wide patties; season with salt and pepper. Heat the olive oil in a large skillet over medium-high heat, then add the patties and cook 4 to 5 minutes per side, topping each with a slice of cheese about 3 minutes before they're done.
  • Spread the bacon marmalade on the bun bottoms and top each with some lettuce, a patty, a tomato slice and a bun top.
  • Drizzle the remaining lettuce and the chopped tomato with olive oil and vinegar, and season with salt and pepper; toss. Serve with the burgers.

Great accompaniment to grilled burgers. Fast and easy. This recipe makes enough for 4 large burgers. Double or triple recipe recipe for more. Was told it should keep in the fridge for up to 4 weeks or can be frozen. I never had leftovers.

3 rashers smoked streaky bacon
50g butter, softened
1½ tbsp fine-shred marmalade
800g carrots, halved down the centre and sliced on an angle

Steps:

  • Heat the grill to high and grill the bacon for 3-4 mins each side until crisp. Remove from the oven and set aside to cool.
  • Chop the bacon as finely as you can and combine well with the butter and marmalade. Will keep chilled for up to three days.
  • Put the carrots in a pan and cover with boiling water. Boil for 5-6 mins until cooked but retaining some bite, then drain and tip into a bowl. Put slices of the butter on top, tossing until the butter has melted.

4 pounds Yellow Onions, Halved And Sliced To 1/4"
1 Tablespoon Kosher Salt
2 cups Apple Cider
¼ cups Sherry Vinegar (white Wine Vinegar Is Fine)
¼ cups Brown Sugar
10 sprigs Thyme, Leaves Stripped From The Stem (about 2 Tablespoons)
2 teaspoons Black Pepper

Steps:

  • Heat a Dutch oven or large heavy sauce pan over medium-high heat. Cook the bacon until it’s just crisp, then remove the slices and set aside, leaving all of the rendered fat in the pan. Add the onions and salt to the pan, reduce the heat to medium, cover the pan, and cook until the onions soften (about 15 minutes). Chop the bacon fine and add it and the remaining ingredients to the pan. Cook uncovered until the liquid is reduced to almost nothing, stirring occasionally (about an hour). Reduce the heat to low and continue cooking until the onions are a rich medium brown color, stirring frequently (about 10 minutes). If it starts looking too dry, add water 1/4 cup at a time. Remove from the heat, set aside, and let cool.

BOURBON BACON MARMALADE

1 lbs smoked bacon, cut into 1 inch pieces
1 medium yellow onions, chopped
2 cloves garlic, chopped
1/4 cup bourbon
3 tablespoons brown sugar
1/4 cup apple cider vinegar
1/4 cup maple syrup
1 cups freshly brewed coffee
3 dashes Tabasco chipotle pepper sauce
3 grinds of fresh black pepper

Steps:

  • In a large, heavy bottomed pot, fry the bacon over medium heat until the bacon begins to crisp. Remove bacon from pot and let drain on a paper towel lined plate. Add the chopped onion and garlic to the rendered bacon fat in the pot and cook until the onion becomes translucent. Remove onion and garlic mixture from pot and either discard rendered bacon fat or use a different, heavy bottomed pot. Add bacon and onion garlic mixture to the pot. Add all of the remaining ingredients to pot except Tabasco and pepper. Bring to a boil over high heat, then reduce heat to low while maintaining a simmer. Simmer for 1 hours, checking the pot every 15 minutes. If the ingredients begin to dry out, add 1/4 cup water when needed. After one hours, most of the liquid should be reduced. If too watery, simmer for up to an additional 15 minutes. Remove from heat and let rest for 15 minutes to cool. Add Tabasco chipotle sauce and pepper. Stir to incorporate. Transfer the contents of the pot to a food processor fitted with a blade. Pulse the contents for 5-6 seconds to incorporate all the ingredients together. Do not over blend, you will lose texture if you do.

2 slices pumpernickel toast
2 tablespoons bitter orange marmalade

Steps:

  • 5 slices applewood smoked bacon.
  • 1 Tbs unsalted butter.
  • 2tbs bitter orange marmalade.
  • Freshly ground black pepper.
  • Very important, the bacon should be cooked to the point that it is done, but still floppy. Crisp bacon does not work in this recipe.
  • Toast the sturdiest pumpernickel bread that you can find.
  • Butter both slices.
  • Spread a thin layer of the strongest orange marmalade you can find on one side.
  • Place bacon on top of marmalade.
  • Grind black pepper on top.
  • Close with other buttered pumpernickel slice.
  • Cut on an diangle.
  • Enjoy!

1 onion, finely diced
2 tablespoons light brown sugar
Cayenne pepper
Kosher salt

1 pound carrots, cut into 1/2-inch pieces
2 tablespoons unsalted butter
2 teaspoons harissa (see Note)
1/4 cup heavy cream
16 large sea scallops (about 1 1/2 pounds)
1 tablespoon extra-virgin olive oil

Steps:

  • 1. In a medium cast-iron skillet, cook the bacon over moderate heat, stirring occasionally, until crisp, 6 to 7 minutes. Using a slotted spoon, transfer the bacon to a plate. Pour off all but 2 tablespoons of the bacon fat. Add the onion to the skillet and cook over moderately low heat, stirring occasionally, until soft and golden, about 25 minutes. Add the sugar and cook until the sugar is dissolved and the onions are glazed, about 2 minutes. Return the bacon to the skillet; season with cayenne pepper, salt and black pepper. Keep the bacon marmalade warm. In a medium saucepan of salted boiling water, cook the carrots until tender, 5 to 7 minutes. Drain well. In a food processor, combine the carrots with the butter and harissa and puree until smooth. Add the cream and pulse until incorporated. Season with salt and black pepper. Scrape the carrot-harissa puree into the saucepan; keep warm over very low heat. Season the scallops with salt and black pepper. In a large skillet, heat the olive oil until shimmering. Add the scallops and cook over moderately high heat until browned on the bottom, about 2 minutes. Turn the scallops and cook until just opaque throughout, about 1 minute longer. Transfer the scallops to plates and top with the bacon marmalade. Serve the carrot-harissa puree alongside.
