BACON, LETTUCE AND TOMATO SALAD
Crisp bacon makes this salad a real winner. I use turkey bacon with good success. Please don't try to substitute those artificial bacon bits in this recipe, it just won't work.

Steps:
- Cook bacon until it is crisp by your favorite method.
- Crumble, and set it aside, reserving 2 tablespoons of the drippings in a small bowl.
- Whisk together the reserved bacon drippings, mayonnaise, vinegar and basil and let dressing sit, covered, at room temperature while you finish making the salad.
- In a large skillet over medium heat, toss the bread pieces with the salt and pepper.
- Drizzle with the oil, and cook, stirring constantly, until the croutons are crisp and golden brown.
- In a large salad bowl mix together the romaine, tomatoes, bacon and croutons.
- Pour the dressing over the salad and toss well.
- Serve immediately.

- Place bacon in a large, deep skillet. Cook over medium high heat, turning frequently, until evenly browned. Drain, crumble and set aside.
- In a blender or food processor, combine mayonnaise, milk, garlic powder and black pepper. Blend until smooth. Season the dressing with salt.
- Combine lettuce, tomatoes, bacon and croutons in a large salad bowl. Toss with dressing, and serve immediately.

- Make the dressing first to allow the flavors to meld. In a small bowl, combine 3 Tbsp mayo, 4 Tbsp sour cream, pressed garlic clove, 1/4 cup chives, 1/8 tsp black pepper and 1/4 tsp salt (or season to taste). Stir together then add 1 to 2 Tbsp milk, or add milk to desired consistency. Cover and refrigerate until ready to use.
- In a large mixing bowl, combine lettuce, tomatoes, bacon and croutons. Just before serving, drizzle with dressing (adding it to taste) and toss to combine.

- 1. Start cooking bacon, and cook, until evenly browned. Drain, crumble, and set aside.
- 2. At the same time, start eggs to boil, if using. When, they are through cooking, cool with cold water. Then, peel, place in a bowl, and cover them with plastic wrap, and put in the refrigerator, until serving time.
- 3. Combine lettuce and bacon, in a large salad bowl. Cover with plastic wrap, & refrigerate.
- 4. DRESSING: In a blender or food processor, combine dressing ingredients (mayo, milk, garlic powder, and black pepper). Blend, until smooth. Season dressing with salt to taste. Refrigerate, until serving time.
- 5. Get lettuce, bacon, & eggs out of refrigerator, when ready to serve. Dry off, if there is any condensation on salad or eggs, and cut eggs into wedges or chop. Right before serving, add croutons, tomatoes, and eggs, if using. Toss salad with dressing, serve immediately. Makes 6 servings.
