BACON & SWISS CHICKEN SANDWICHES

I created this chicken sandwich recipe based on a meal my daughter ordered at a restaurant. She likes to dip her sandwich in the extra honey-mustard sauce. -Marilyn Moberg, Papillion, Nebraska

1/4 cup reduced-fat mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
4 boneless skinless chicken breast halves (4 ounces each)
1/2 teaspoon Montreal steak seasoning
4 slices Swiss cheese
4 whole wheat hamburger buns, split
2 bacon strips, cooked and crumbled
Lettuce leaves and tomato slices, optional

Steps:

  • In a small bowl, mix mayonnaise, mustard and honey. Pound chicken with a meat mallet to 1/2-in. thickness. Sprinkle chicken with steak seasoning. Grill chicken, covered, over medium heat or broil 4 in. from heat until a thermometer reads 165°, 4-6 minutes on each side Top with cheese during the last 1 minute of cooking., Grill buns over medium heat, cut side down, until toasted, 30-60 seconds. Serve chicken on buns with bacon, mayonnaise mixture and, if desired, lettuce and tomato.

In honor of St. Patrick's Day, my sandwich group Sandwiches, Sammiches & Sammies challenge was to create a sammie using the Irish flag colors green, white & orange. This was such a fun sammich to make and it was most delish! Happy Sammie Making, sw:)

4 medium chicken breast halves, skinless and boneless
1 c broccoli florets
1 c cauliflower, florets
4 oz shredded italian cheese
1/4 c mayonnaise
1/4 c tomato bacon dressing
2 Tbsp capers
1/2 c white wine
1 1/2 c chicken broth-enough to cover chicken breast
1 large bay leaf
1/4 c olive oil, extra virgin-divided
1-2 tsp greek seasoning
4 hawaiian buns
red & yellow food coloring-makes orange

Steps:

  • 1. gather all your ingredients. combine mayonnaise, tomato bacon dressing and capers in a bowl
  • 2. add a couple drops of red and yellow food coloring to 2 tbsp of evoo. brush the tops of buns and broil in oven for a couple of minutes
  • 3. meanhile, add chicken and bay leaf to a pot...single layer snug. cover chicken with wine and broth. bring to a boil and reduce to a simmer. simmer for 8-10 minutes. turn off heat and let chicken remain in the hot bath for 15 minutes or so
  • 4. deep fry broccoli and cauliflower at 350 degrees for 5-7 minutes or until the veggies are turning goldes brown. remove and drain oil
  • 5. add remaining evoo and greek seasoning to a bowl. toss broccoli and cauliflower in oil
  • 6. melt cheese on chicken breast under broiler..spread dressing on all bun halves...followed by chicken cauliflower & broccoli and top of bun...enjoy!

These sandwiches are great and easy to make on the grill. Top them with whatever condiments you like!

8 slices bacon
4 boneless skinless chicken breast halves
2 teaspoons poultry seasoning
4 slices monterey jack pepper cheese
4 hamburger buns, split
4 lettuce leaves
4 slices tomatoes
1/2 cup onion, thinly sliced
12 dill pickle slices

Steps:

  • Preheat a grill for medium heat.
  • While the grill preheats, place the bacon in a large skillet over medium-high heat.
  • Cook until browned on both sides. Remove from the pan, and drain on paper towels.
  • Rub the poultry seasoning onto the chicken pieces, and place them on the grill.
  • Cook for about 6 minutes per side, or until no longer pink in the center.
  • Top each piece of chicken with 2 slices of bacon and 1 slice of pepper jack cheese.
  • Grill for 2 to 3 more minutes to melt the cheese.
  • Place each piece of chicken on a bun, and top with lettuce, tomato, onion and pickle slices before serving with your favorite condiments.

This sandwich has such a great sweet and savory taste. The bacon jam has just the right bite to it. The jam would be a great addition to any sandwich. Very yummy!

JALAPENO BACON JAM
1 pound(s) good quality bacon, fried and crumbled (or cut up and fry)
1 medium onion, chopped
1 - jalapeno pepper, seeded and chopped
3 clove(s) garlic, chopped
1/2 cup(s) light brown sugar, packed
1/4 cup(s) strong brewed black coffee
1/4 cup(s) maple syrup
1 tablespoon(s) balsamic vinegar
1 tablespoon(s) grainy spicy brown mustard
SANDWICH
2 slice(s) favorite grilling bread per sandwich (i used a vegetable loaf) per serving
2 to 3 ounce(s) sliced chicken (deli, roasted, grilled or fried) per sandwich
2 slice(s) cheddar cheese per sandwich
- dijon mustard
- bacon jam
- fried bacon slices

Steps:

  • BACON JAM: Cut bacon in 1-inch pieces. Fry in large skillet over medium heat until crisp (don't over cook). Drain on paper towels. Discard all but 2 Tbsp. bacon grease. NOTE: I keep my bacon grease in the fridge for other recipes.
  • Sauté onion, garlic and pepper in reserved bacon grease over a medium heat for about 4 to 5 minutes or until vegetables are tender. Return bacon to pan; add remaining ingredients. Bring to a simmer, reduce heat and continue to simmer for about 20 minutes or until thickened.
  • SANDWICH: Heat griddle over medium heat.
  • Butter the outer sides of bread; place on griddle. Spread mustard on inside of each piece of bread, layer each piece with a slice of cheddar cheese, and then add layer of chicken on one piece, top chicken with bacon jam and then place 2nd cheese, bacon slices and bread on top. Brown on each side, flipping occasionally to ensure cheese melts and that you don't burn bread.
