2 bacon strips, halved crosswise
2 large eggs
1/8 teaspoon garlic salt
1/8 teaspoon pepper
2 tablespoons Miracle Whip or mayonnaise
4 slices sourdough bread, toasted
4 thin slices tomato
1/2 medium ripe avocado, peeled and sliced
2 slices Gouda cheese, optional
1 slice red onion, separated into rings, optional
2 teaspoons butter, softened

Steps:

  • In a large nonstick skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain. Pour off drippings., In same skillet, break eggs, one at a time, into pan; immediately reduce heat to low. Cook until whites are completely set and yolks begin to thicken. Remove from heat; sprinkle with garlic salt and pepper. , Spread Miracle Whip over two slices of toast. Top with bacon, eggs, tomato, avocado and, if desired, cheese and onion. Spread butter over remaining toast; place over top.

4 pieces bread
2 eggs
2 tablespoons cream cheese
2 tablespoons green onions
2 tablespoons parsley
1 avocado
1 tomatoes
4 slices bacon

Steps:

  • Toast your bread in a toaster.
  • Mix the cream cheese, green onion, and parsley together.
  • Cook the bacon.
  • Fry the eggs (remember to break the yolk).
  • Spread the cream cheese mixture on the toast.
  • Slice the tomato and avocado.
  • Layer the tomato, avocado, bacon & egg on the toast.
  • Enjoy :).

AVOCADO "BACON" SANDWICH!



Avocado

A yummy fresh sandwich that is easy to whip up and double if needed. Sprinkling the avocado with salt makes the sandwich mouth watering. If making just for yourself or if you have left over avocados, leave them in their skin, sprinkle the flesh with lemon juice, wrap tight in tin foil, and place them in the fridge. This will prevent them from browning and you can enjoy the avocados the next day.

6 slices veggie bacon (I use MorningStar Farms)
1 avocado
1 small-medium sized tomatoes
2 slices mozzarella cheese
kosher salt

Steps:

  • Cook bacon in oven and slice avocado and tomato.
  • Split the avocado between two pieces of toast and sprinkle with salt to taste (don't skip!).
  • Layer rest of ingredients and enjoy.

2 tablespoons cream cheese, softened
1 slice whole wheat bread, toasted
1/2 teaspoon fresh parsley, minced
1/2 teaspoon green onion, minced
2 slices bacon
1 large egg
1/8 teaspoon salt
1/4 teaspoon ground black pepper
2 slices tomatoes
1/2 avocado, peeled, pitted and sliced

Steps:

  • Spread cream cheese over 1 piece of toast.
  • Sprinkle with parsley and green onion.
  • In a small skillet, cook bacon over medium-high heat until crispy. Remove from pan and drain on paper towels. Drain grease from pan, reserving 1 tablespoon.
  • In same small skillet, fry egg in reserved bacon grease over medium-low heat. Sprinkle with salt and pepper. Place egg over cream cheese mixture. Top with bacon, tomato and avocado.

Delicious Bacon, Egg and Avocado Burger image

This burger was an absolutely delicious bite, but of course you can't really go wrong with the old trusted avocado + bacon combination. I got it from the cook at Liquid, ( http://www.liquiddumaguete.com ) a Diveresort I stayed at for a week in the Philippines. After a long day at sea this just hit the spot together with a San Miguel beer! The beer is optional by the way.

1/2 small lime, juiced (locally in the Philippines "calamansi" is used)
4 eggs
350 g shortcut bacon, rasher
4 turkish bread rolls, split
1 baby cos lettuce, trimmed, leaves separated
2 handfulls arugula leaves
1 ripe and large avocado, chopped
2 pinches salt
1 pinch pepper

Steps:

  • Place avocado in a bowl. Drizzle with the calamansi juice. Season with salt and pepper. Using a fork, roughly mash. Cover surface with plastic wrap.
  • Preheat a greased barbecue plate on medium-high heat. Barbecue bacon for two minutes each side or until just crisp. Transfer to a plate lined with paper towel.
  • Crack eggs on barbecue plate and cook for 2 minutes for soft yolk or until cooked to your liking.
  • Toast or grill Turkish bread rolls until crisp. Place bases on serving plates. Spread with mashed avocado. Top with lettuce, arugula leaves,, egg and bacon. Season with pepper. Cover with roll tops. Serve and enjoy the look on peoples faces =).
  • Garnish the plate with whatever you have available - some potato wedges and garlic mayo go nicely with this recipe.

1 firm-ripe California avocado (8 to 10 ounces)
1 teaspoon fresh lemon juice
4 slices whole-grain bread, toasted
1/2 cup radish sprouts

Steps:

  • Cook bacon in a 12-inch heavy skillet over moderate heat, turning occasionally, until crisp, then transfer with tongs to paper towels to drain.
  • Stir together mayonnaise, chives, dill, and salt and pepper to taste in a small bowl.
  • Halve, pit, and peel avocado, then slice lengthwise. Gently toss slices with lemon juice.
  • Make sandwiches with toast, herb mayonnaise, avocado, bacon, and sprouts, seasoning with salt and pepper.
