This baked mahi mahi recipe is so simple and delicious you won't believe it! Also very quick - taking only 30 minutes start to finish!

1 pound fresh mahi mahi (skin removed (four 4-ounce portions))
2 lemons (zest and juice)
½ cup cream
2 Tbsp butter
2 Tbsp olive oil (or oil of choice)
½ tsp salt
¼ tsp black pepper
1 tsp thyme (dry)
1 tsp garlic (minced (about 1 large clove)

Steps:

  • Preheat oven to 450 F.
  • In a small sauce pan, melt butter on low heat. Add garlic, thyme, lemon juice and zest, and cream and cook until a bit bubbly but not boiling (about 5 minutes). Remove from heat.
  • Add oil to iron skillet or 6 x 9 oven-safe dish and arrange fish on top of oil. Pour butter mixture over top of fish. Cover and cook 15 minutes.
  • Uncover and cook another 5 minutes to brown a bit.
  • Remove from the oven and let sit 5-10 minutes before serving.
  • Serve over rice or pasta, spooning sauce generously over top of fish.
  • Leftovers can be safely kept in the refrigerator up to 3 days.

Mahi mahi, also known as dorado, is hearty, tender, flaky and waiting to grace your dining table with this astonishingly easy recipe! The mahi mahi is spice rubbed then pan seared until golden then bathed in an intoxicating, creamy lemon, garlic sauce. It looks and tastes fancy but is super quick and easy to make! Serve this one pot mahi mahi recipe with mashed potatoes, pasta, or rice with a big green salad and garlic bread and you have one of the most tantalizing dinners of all time! I've included step by step, detailed instructions on how to cook mahi mahi so you can master this recipe, even if you've never made fish before!

4-5 mahi mahi fillets (4-6 oz. each, 1-inch thick )
2 tablespoons olive oil
1 tablespoon unsalted butter
3 tablespoons flour
1 tsp EACH garlic powder, onion powder, salt, paprika
1/2 teaspoon pepper
3 tablespoons minced shallots
3-4 cloves garlic (minced)
1 1/4 cups low sodium chicken broth
1/2 cup heavy cream
1 tablespoon cornstarch
1/2 tsp EACH dried parsley, dried thyme
2 tablespoons lemon juice (more or less to taste)
salt and pepper to taste
freshly chopped chives

Steps:

  • Mix together all of the Spice Rub ingredients in a medium bowl. Pat mahi mahi dry and rub spices into the fish.
  • Melt 1 tablespoon butter in 2 tablespoons olive oil over medium-high heat in a large heavy bottom skillet. Once hot, add fillets, turn heat down to medium and cook approximately 4 minutes, flip fillets over, then cook an addition 2-4 minutes to your liking (it will depend on thickness,; mahi-mahi should reach an internal temperature of 137°F). If fish is browning too quickly, then turn down the heat. Remove mahi mahi to a plate and tent with foil.
  • If needed, drain oil from skillet so you are left with about 1 tablespoon oil. Add shallot and sauté while scraping up the drippings for 2 minutes or until softened. Add garlic and sauté 30 seconds.
  • Whisk chicken broth with cornstarch and add to skillet along with heavy cream, lemon juice, thyme and parsley. Simmer until reduced by half and slightly thickened, about 4-5 minutes. Season with salt and pepper to taste (I use about 1/4 teaspoon each) and add additional lemon juice if desired.
  • Nestle mahi mahi fillets back into the skillet and spoon sauce over the fillets. Garnish with fresh chives and/or parsley (optional). Serve immediately with rice, mashed potatoes or pasta.

1 pound bacon
4 (6 ounce) mahi mahi fillets
1 pinch garlic salt, or to taste
1 pinch ground black pepper, or to taste
1 tablespoon butter
6 green onions, chopped
3 cloves garlic, chopped
1 (10 ounce) package frozen chopped spinach, thawed and well drained
2 dashes hot pepper sauce, or to taste
¼ cup evaporated milk, plus more as needed
2 cups shredded Monterey Jack cheese
½ cup shredded Parmesan cheese

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate, then chop. Set aside. Season mahi mahi with garlic salt and pepper. Heat a skillet over medium heat. Cook mahi mahi until it flakes easily, 10 to 15 minutes. Remove from skillet and place each filet on a baking dish.
  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • While the fish is cooking, melt the butter in a separate skillet. Stir in the green onions, garlic, and spinach. Cook and stir until heated through, 2 to 3 minutes. Stir in the chopped bacon, hot pepper sauce, and evaporated milk. Bring to a low simmer, then add the Monterey Jack cheese a little at a time until fully melted. Stir in more evaporated milk, if needed, to create a sauce. Divide the spinach mixture evenly over each mahi mahi fillet. Sprinkle with Parmesan cheese.
  • Broil in the preheated oven until the cheese has melted and is lightly browned, 3 to 5 minutes more.

4 mahi mahi fillets (or your favorite white fish)
1/2 lemon
6 slices bacon
1/3 cup onion, finely chopped
1 garlic clove, diced
1 cup panko breadcrumbs (you can also crush croutons)
2 cups heavy whipping cream
1 tablespoon flour
1 tablespoon fresh ground pepper
1/4 cup flat leaf parsley, a couple of handfuls, chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • 1. In a skillet, sauté bacon until crispy. Remove bacon and loosely chop strips (reserve 2 chopped strips for sauce).
  • 2. Return bacon to skillet; add onions and sauté for 4 minutes.
  • 3. Add garlic and bread crumbs and sauté for a minute longer.
  • 4. Place Mahi Mahi fillets in a glass baking sprayed with non-stick cooking spray.
  • 5. Top the fillets with bacon mixture. Use your fingers to press the mixture onto the fillets.
  • 6. Bake in oven for 18-20 minutes; until fish is opaque and topping toasts.
  • 7. While fish is cooking add the 2 reserved chopped bacon strips to the skillet. Pour in whipping cream; add flour and pepper and stir to remove lumps.
  • 8. Bring mixture to a low boil then reduce heat. Simmer for 5-8 minutes, stirring constantly, until sauce thickens.
  • 9. Stir in parsley.
  • 10. Plate fish and pour sauce over the fillets.
  • 11. Serve and enjoy!
