1 lb boneless, skinless chicken thighs, cut into 1-inch cubes
1 cup BBQ sauce
1 teaspoon salt
1 teaspoon pepper
4 strips bacon
4 skewers bamboo skewer, soaked in water for 20 minutes

Steps:

  • Preheat grill to medium heat.
  • Combine the chicken, bbq sauce, salt, and pepper, stirring until evenly mixed.
  • Threading one end of the bacon onto the end of a skewer. Add a piece of chicken, and weave the bacon around the chicken and back through the skewer, creating a wave pattern between the chicken. Move the bacon and the chicken down the skewer, repeating until the other edge of the bacon is threaded through.
  • Repeat on the rest of the skewers with the remaining chicken and bacon.
  • Grease the surface of the grill by rubbing the grates with tongs and an oiled paper towel.
  • Grill the skewers for about 12-18 minutes with the lid closed, flipping them halfway.
  • Enjoy!

1/2 cup ranch salad dressing
1/2 cup barbecue sauce
1 teaspoon chili powder
2 drops hot pepper sauce
1-1/4 pounds boneless skinless chicken breasts, cut into 12 strips
12 bacon strips

Steps:

  • In a large resealable plastic bag, combine the ranch dressing, barbecue sauce, chili powder and hot pepper sauce; add chicken. Seal bag and turn to coat; refrigerate for at least 2 hours., In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Drain on paper towels. , Drain and discard marinade. Place a chicken strip on each bacon strip; thread each onto a metal or soaked wooden skewer. , Grill skewers, covered, over medium heat or broil 4-6 in. from the heat for 10-14 minutes or until chicken is no longer pink, turning occasionally.

1 lb applewood bacon
2 lb chicken livers, rinsed, patted dry and halfed
1 c flour
3 Tbsp essence, recipe to follow

Steps:

  • 1. Heat 1" vegetable oil in large skillet to a medium/medium high heat. Mix flour and essence together in a pie plate. Skewer bacon and liver pieces alternately, entwining the bacon with the liver (So if you're looking at the side of the skewer, the bacon is in an "S" shape with liver in the curves. I hope this makes sense) Then dredge the skewer in flour mixture...Place skewer in hot oil 3-4 minutes on each side, let drain on paper towel, sprinkle with salt and serve.
  • 2. Essence ... this is Emeril Lagasse's "Emeril's Essence" recipe, a seasoning you can use for so many things...really good on a pork tenderloin! 2 Tablespoons Garlic Powder 1 Tablespoon Onion Powder 2 Tablespoons salt 2 Tablespoons paprika 1 Tablespoon pepper 1 Tablespoon oregano 1 Tablespoon thyme Mix together and store in air tight container/ shaker bottle.

⅓ cup ranch dressing
1 teaspoon hot chile paste (such as sambal oelek)
4 skinless, boneless chicken breast halves - cut into 1 inch pieces
24 (1-inch) pieces red onion
12 slices thick cut bacon
salt and black pepper to taste
12 (6 inch) bamboo skewers, soaked in water for 2 hours

Steps:

  • Whisk together ranch dressing and hot chile paste in a large bowl.
  • Mix in chicken pieces and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 1 to 3 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove chicken from the bag and transfer to a plate or baking sheet lined with paper towels. Pat chicken pieces dry with more paper towels.
  • Thread a piece of onion about 1 1/2 inches down the skewer.
  • Thread the end portion of one strip of bacon onto skewer so the rest of the strip is hanging down. Skewer on a piece of chicken; thread on the next portion of the bacon. Turn the skewer so that the long end of the bacon is again hanging down. Repeat this process of skewering and turning until the entire strip of bacon is threaded, using 4 to 5 chicken pieces.
  • Thread a second piece of onion onto the end of the skewer.
  • Repeat steps 5 through 7 for all twelve skewers.
  • Season chicken skewers with salt and pepper as desired.
  • Cook the skewers on the preheated grill, turning every 3 to 4 minutes, until nicely browned on all sides and the meat is no longer pink in the center, 12 to 16 minutes total per skewer. Serve with ranch dressing as a dipping sauce.

15 bamboo skewers (6 inch)
3 large boneless skinless chicken breasts (about 1 lb)
4 large green onions
1 package (2.1 oz) refrigerated fully cooked bacon (15 pieces)
1/2 cup barbecue sauce

Steps:

  • Soak skewers in water at least 30 minutes to prevent burning. Meanwhile, cut each chicken breast in half lengthwise, then cut crosswise to make 10 (about 1-inch) pieces. Cut onions into 2-inch pieces (30 pieces total). Cut bacon slices in half crosswise.
  • Heat gas or charcoal grill. Push 1 skewer through end of 1 bacon piece, then through middle of 1 chicken piece and back through other end of bacon piece; add 2 onion pieces, then repeat with another bacon piece and chicken piece. Place on large plate or tray. Repeat to make remaining kabobs.
  • Place kabobs on grill over medium heat. Cover grill; cook 5 minutes. Turn kabobs; brush with half of the barbecue sauce. Cover; cook 5 minutes. Turn kabobs; brush with remaining sauce. Cover; cook about 1 minute longer or until chicken is no longer pink in center. If desired, serve with additional barbecue sauce for dipping.

This recipe is adapted from Emerill and revisited by secondmom63 and now tweaked by me. You are going to love these if you like chicken liver in any form-- these are so good-I could eat them like candy. Can be made on the grill also. If making on the grill soak skewers first -I use medal skewers.

1 c flour
1 tsp corn starch
1 tsp seasoned salt
1/2 tsp garlic powder
1/4 tsp black pepper
1 1/2 tsp brown sugar
1 lb applewood bacon ( thick bacon)
2 lb container chicken livers, rinsed, cut in 1/2 and dried on paper toweling

Steps:

  • 1. Heat buttery Crisco or vegetable oil in a large electric skillet ,about an inch deep, using medium/high heat.(best on the grill, less grease more crunch). Mix flour, seasoned salt,garlic powder,pepper and brown sugar. together in a shallow pie pan.
  • 2. Skewer bacon wrapped liver pieces onto thin skewers or on individual wooden toothpicks. Dredge the skewer in flour mixture and place skewers in hot oil for 3 to 4 minutes on each side, to get crispy. Drain on paper towel, sprinkle with salt or cinnamon sugar ,if desired and serve..(I like the cinnamon sugar sprinkled over top.

These bacon-wrapped chicken skewers are true love! Crispy, brown sugar coated bacon wrapped around pieces of chicken, grilled up until they're golden and delicious.

Three boneless (skinless chicken breasts, cut into 1/2 inch strips)
One package bacon (I use Fletcher's hickory smoked stuff)
2/3 cup packed brown sugar
2 tablespoons chili powder
1/4 teaspoon cayenne pepper
Bamboo skewers

Steps:

  • Heat the oven to 350 degrees. Spray a broiler pan with non-stick cooking spray.
  • Mix up the brown sugar, chili powder, and cayenne pepper, and pour onto a plate.
  • Cut the bacon slices in half. Wrap a half slice of bacon around each piece of chicken, pulling it kind of tight. Thread the bacon-wrapped chicken onto a skewer, making sure to poke each end of the bacon so it stays on. Place three pieces of bacon-wrapped chicken on each skewer.
  • Baked for 30-35 minutes, until the bacon is crisp and there's NO pink inside of the chicken (internal temperature should reach 163 degrees). Allow skewers to rest for 5 minutes before serving.

1-1/2 lb. boneless skinless chicken thighs, cut into 24 pieces
6 slices OSCAR MAYER Center Cut Bacon, cut in half

Steps:

  • Heat grill to medium heat.
  • Add 6 Tbsp. barbecue sauce to chicken in medium bowl; mix lightly.
  • Thread 1 bacon slice, accordion style, alternately with 2 chicken pieces onto each of 12 skewers as shown in photo.
  • Grill 12 to 15 min. or until chicken and bacon are done, turning and brushing occasionally with remaining barbecue sauce.
