2 tablespoons finely chopped onion
2 tablespoons ketchup
1 garlic clove, minced
1 teaspoon sugar
1 teaspoon Worcestershire sauce
1 teaspoon steak sauce
1/4 teaspoon cider vinegar
1 pound ground beef
4 slices sharp cheddar cheese
4 hamburger buns, split and toasted
8 cooked bacon strips
Optional toppings: lettuce leaves and tomato, onion and pickle slices

Steps:

  • In a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix well. Shape into four patties., Grill burgers, covered, over medium heat or broil 3 in. from the heat for 4-7 minutes on each side or until a thermometer reads 160° and juices run clear. Top with cheese. Grill 1 minute longer or until cheese is melted. Serve on buns with bacon and toppings of your choice.

1/2 cup shredded Monterey jack
4 slices cooked bacon, chopped
1 pound ground chuck
Kosher salt and freshly ground black pepper
4 large hamburger buns, split
Ketchup, mayonnaise, and mustard, for serving
Lettuce, sliced tomato, onion, and avocado, for serving

Steps:

  • Combine the jack cheese and chopped bacon in a bowl. Put the beef in another bowl and season with salt and pepper; use a rubber spatula to mix it in. Flatten 1/4 of the meat mixture in the palm of your hand. Squeeze together about a tablespoon of the cheese and bacon mixture to make a little nugget; put it in the center of the ground beef. Bring up the sides of the patty over the filling, making sure the cheese is completely covered by the meat. Flatten slightly for a nice patty shape. Set them side by side on a platter in the refrigerator while preparing the grill.
  • Place a large grill pan on 2 burners over medium-high heat or preheat an outdoor gas or charcoal barbecue and get it very hot. Brush the grates with oil to keep the burgers from sticking. Grill the burgers for 8 minutes per side for medium. (The USDA recommends cooking ground beef until it is no longer pink and the internal temperature is 160 degrees F.) Remove the burgers to a clean side plate while you toast the buns.
  • Rub the grill rack with more oil and place the buns cut-side down, toast for 1 minute. Serve the burgers with your favorite condiment and any garnish you like, such as lettuce, sliced tomato, onion, and/or avocado.

One 12-ounce package thick-cut bacon
4 burger buns
1 1/2 pounds ground beef (preferably 80/20)
1 tablespoon Worcestershire sauce
Kosher salt and freshly ground black pepper
Vegetable oil, for oiling grill grates
4 slices (1/4 pound) American cheese
1/2 cup store-bought ranch dressing
4 leaves Bibb lettuce
2 Roma tomatoes, sliced
1 small red onion, thinly sliced

Steps:

  • Put the bacon in a large nonstick saute pan over medium heat. Cook just until the fat is rendered out, 5 to 7 minutes. (The bacon should not brown at all.) Remove the bacon from the pan and place in the bowl of a small food processor. There should be about 2 tablespoons of bacon fat that has collected in the pan.
  • Place the buns into the warm bacon fat, cut-side down. Toast the buns they are until golden brown around the edges, about 2 minutes. Set aside for burger assembly.
  • Pulse the par-cooked bacon in the food processor until it is coarsely ground, 30 seconds to 1 minute. Transfer the bacon to a large mixing bowl. Add the ground beef, Worcestershire sauce, 1/2 teaspoon salt and 1/2 teaspoon pepper. Use your hand to gently work the bacon and seasonings into the ground beef. Divide the meat into 4 portions (6 to 7 ounces each). Loosely pack the meat into 4 thick patties, using your thumb to create a shallow dimple in the center of each. Sprinkle the outside of each patty with salt and pepper as desired.
  • Preheat the grill and generously oil the grill grates. Place the patties on the grill and cook to the desired degree of doneness, 3 to 5 minutes on each side. Top each patty with a slice of American cheese and cover the grill to allow the cheese to melt, 30 seconds.
  • Assemble the burgers and top with ranch, lettuce, tomato slices and red onion. Serve immediately.

1/4 cup mayonnaise
2 tablespoons ketchup
2 tablespoons yellow mustard
2 tablespoons pickle relish
1 tablespoon apple cider vinegar
8 slices thick-cut bacon
4 sesame seed hamburger buns, split
2 pounds ground beef (80-percent lean)
Kosher salt
4 thin slices sharp white Cheddar
4 thin slices red onion
8 thin slices tomato
1/4 head iceberg lettuce, shredded

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the mayonnaise, ketchup, mustard, relish and vinegar in a small bowl; set aside.
  • Working in batches if necessary, add the bacon to a large cast-iron skillet over medium heat. Cook, flipping halfway through, until crisp and golden, about 10 minutes. Transfer the bacon to a nonstick baking sheet. Discard the bacon fat (or save for another use) and wipe the skillet clean but do not wash. Heat over medium-high heat until very hot, about 5 minutes.
  • Add the buns split-side up to the baking sheet with the bacon and bake until the buns are toasted, about 5 minutes.
  • Loosely form the beef into 4 balls. Add one ball of beef to the skillet and press firmly to flatten with a large flat metal spatula for 10 seconds, then gently remove the spatula. Sprinkle the patty generously with salt; repeat with the remaining beef balls, cooking in batches if necessary. Let cook, undisturbed, until well browned on the bottoms, 2 to 3 minutes. Flip the patties, sprinkle with more salt and top each with a slice of Cheddar. Continue cooking until the cheese is melted around the edges and the bottoms are browned, about 2 more minutes.

1 pound sliced bacon, diced
5 pounds ground beef chuck
1 large onion, chopped
¼ cup steak sauce
salt and pepper to taste
1 pound American cheese slices

Steps:

  • Preheat a grill for high heat.
  • Place bacon in a large skillet over medium heat. Fry, stirring occasionally. When the bacon is almost done, add the onion. Cook until the bacon is crisp, and the onion is tender. Remove onion and bacon from the pan with a slotted spoon, and transfer to a food processor. Pulse a couple of times to chop finely. Do not puree. Pour into a large bowl, and mix with steak sauce and ground chuck using your hands. Form into 16 patties.
  • Place patties on the grill, and cook for 5 minutes per side, or until well done. Place a slice of cheese on top of each one during the last minute.
