4 skinless, boneless chicken breast halves
¾ cup honey
½ cup prepared mustard
lemon pepper to taste
4 slices bacon, cut in half
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place the chicken breast halves in a baking dish, and drizzle evenly with honey and mustard. Sprinkle with lemon pepper.
  • Bake chicken 25 minutes in the preheated oven. Top each breast half with 2 bacon slice halves, and sprinkle evenly with cheese. Continue baking 10 minutes, or until chicken juices run clear, bacon is crisp, and cheese is bubbly.

1 -1 1/2 lb boneless skinless chicken breast
1/4 cup Dijon mustard
1/4 cup honey
1 teaspoon lemon juice
2 cups fresh mushrooms, sliced
8 -12 slices bacon, partially cooked
1 cup grated cheddar cheese
1 tablespoon fresh parsley, chopped
salt
pepper
paprika

Steps:

  • Make marinade by mixing together mustard, honey, and lemon juice. Add chicken breasts and refrigerate for two hours.
  • Preheat oven to 350 degrees F. Heat a small amount of oil (canola or vegetable) in a skillet and add chicken breasts, discarding marinade. Cook chicken a few minutes on each side. Set aside.
  • Scrape out most of the juices from the pan, and add mushrooms. Saute mushrooms until tender (a few minutes).
  • Assemble chicken in a large baking dish: chicken, then bacon, then mushrooms, then cheese.
  • Bake at 350 degrees F for about 20 minutes, until chicken is cooked through. Sprinkle with chopped parsley before serving.

125g ball mozzarella, torn into small pieces
50g strong cheddar, grated
1 tbsp wholegrain mustard
4 skinless boneless chicken breast fillets
8 smoked streaky bacon rashers

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Mix the cheeses and mustard together. Cut a slit into the side of each chicken breast, then stuff with the mustard mixture. Wrap each stuffed chicken breast with 2 bacon rashers - not too tightly, but enough to hold the chicken together. Season, place on a baking sheet and roast for 20-25 mins.

1/2 c dijon mustard
1/2 c cup honey
4 1/2 tsp canola oil, divided -- i use vegetable oil or olive oil
1/2 tsp lemon juice
4 boneless skinless chicken breast halves
1/4 tsp salt
1/8 tsp pepper
dash paprika
2 c sliced fresh mushrooms
2 Tbsp butter
1 c (4 ounces) shredded monterey jack cheese
1 c (4 ounces) shredded cheddar cheese
8 bacon strips, partially cooked
2 tsp minced fresh parsley

Steps:

  • 1. In a small bowl, combine the mustard, honey, 1-1/2 teaspoons oil and lemon juice.
  • 2. Pour 1/2 cup into a large resealable plastic bag; add the chicken. Seal the bag and turn to coat; refrigerate for 2 hours. Cover and refrigerate the remaining marinade. I marinated mine over night..
  • 3. Drain and discard marinade from chicken. In a large skillet over medium heat, brown chicken in remaining oil on all sides. Sprinkle with salt, pepper and paprika. Transfer to a greased 11-in. x 7-in. baking dish.
  • 4. In the same skillet, saute mushrooms in butter until tender. Spoon reserved marinade over chicken. Top with cheeses and mushrooms. Place bacon strips in a crisscross pattern over chicken.
  • 5. Bake, uncovered, at 375° for 20-25 minutes or until a meat thermometer reads 170°. Sprinkle with parsley.
