DOUBLE CHEESE PITA PIZZAS

1 tablespoon extra-virgin olive oil
4 ounces Italian turkey sausage, removed from the casings
2 garlic cloves, grated
1 (10 ounce) package frozen leaf spinach, thawed, squeezed dry and roughly chopped
1 1/4 cups 2% percent cottage cheese
4 whole wheat pita bread, preferably pocketless
1/4 cup thinly sliced red onion (about 1/2 small onion)
4 ounces shredded part-skim mozzarella cheese (about 1 cup)
1/2 cup fresh basil leaf, torn

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat 1 teaspoon of the oil in a medium nonstick skillet over medium heat. Add the sausage and cook, breaking up into small pieces with a wooden spoon, until no longer pink, about 5 minutes. Add the garlic and spinach and continue to cook until well mixed and the spinach is heated through, about 2 minutes. Remove from the heat.
  • Put the cottage cheese in the bowl of a food processor and puree until smooth. Lay the pita breads on 2 baking sheets and evenly brush with the remaining 2 teaspoons oil. Evenly spread with the pureed cottage cheese to the edge of each pita and then top with the sausage mixture, red onions and shredded cheese.
  • Bake until the pita is crisp around the edges and the cheese is melted, 12 to 15 minutes. Scatter with the basil.

¼ onion, chopped
2 tablespoons extra-virgin olive oil
4 eggs, beaten
2 pita bread rounds
½ tomato, chopped
½ cup chopped spinach
½ cup shredded Cheddar cheese
1 avocado - peeled, pitted, and sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Place Smithfield® breakfast sausage in a large skillet and cook over medium-high heat, chopping sausage and turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels.
  • Cook and stir onion in the same skillet until soft and translucent, about 5 minutes. Remove and set aside.
  • Heat olive oil in the skillet. Pour in eggs and cook, stirring occasionally, until set, 3 to 5 minutes.
  • Place pita breads on lined baking sheet. Top with sausage, scrambled eggs, tomato, and spinach. Sprinkle Cheddar cheese over toppings.

These are little pizzas on pita breads. Not your typical pizza with the sauce but very tasty. We love pineapple on pizzas and this one is no exception. I got this recipe from a friend of mine after she prepared a few of these for a snack by the pool. I hope you enjoy them too.

4 ounces shredded provolone cheese
2 slices Canadian bacon, chopped
1/4 cup crushed pineapple
1/4 chopped bell pepper

  • Top with 2 oz. of provolone cheese, bacon, pineapple, bell pepper and onion.

200 g red leicester cheese, grated
100 g unsmoked bacon, shredded
500 g whole wheat bread flour
3 teaspoons dried yeast
2 teaspoons sugar
250 ml warm water
1 teaspoon salt
3 teaspoons oil

Steps:

  • Grill Bacon and mix with grated cheese.
  • Heat oven to 210 degrees centigrade.
  • Put Yeast, sugar and a third of the flour in a mixing bowl.
  • Add water and mix with a wooden spoon, leave for 20 minutes.
  • Add remainder of flour, salt and oil.
  • Mix with fingers, when dough-like turn out onto an oiled surface.
  • Knead for 5 minutes.
  • Cover with a damp cloth and prove in a warm place for 20 minutes.
  • Divide into 8 pieces and roll out into oval shaped breads (20cm long and 10cm wide approx.) on a floured surface.
  • Fill each pita with a small handful of the cheese and bacon mixture fold in half and seal by pinching the edges
  • Lightly flour 2 baking sheets, place pittas on them, cover and prove for a further 10 mins
  • Sprinkle pittas with flour.
  • Bake for 15 minutes.
