- Place 1/3 the cauliflower florets into a microwave-safe bowl, cover, and cook in the microwave until tender, about 6 minutes. Repeat with remaining cauliflower. Set aside to cool, about 30 minutes.
- Combine mayonnaise, mustard, pickles, and pickle juice in a large bowl. Add cooled cauliflower and mix with a spatula until florets are covered with dressing. - 1. Cook bacon until very crisp, but not burned. Let cool. Chop cauliflower, bacon, jalepeno & green onion very finely.
- 2. Line a casserole dish or large bowl with romaine leaves then layer the chopped cauliflower, the chopped bacon, followed by the chopped green onion & jalepeno.
- 3. In a blender - blend the mayonaise, rice vinegar, cracked pepper & garlic powder,then pour evenly over the salad layers. Top with the shredded parmesan cheese.
- 4. Cover tightly and refrigerate for 24 hours. Toss before serving.
