This Creamy Bacon Broccoli Pasta Salad is truly amazing! Rotini pasta, bacon, onion and broccoli tossed in a creamy sweet and sour dressing.

1 (16 oz) package rotini pasta
1 pound fresh broccoli, (chopped (stems removed))
1/2 cup diced red onion
1/2 pound bacon, (cooked and crumbled)
2 cups mayonnaise
1/2 cup red wine vinegar
1/2 cup sugar
2 tsp salt
1 tsp freshly ground black pepper

Steps:

  • Prepare pasta according to package directions. Chop broccoli, onion and bacon.
  • In a bowl, mix together mayonnaise, red wine vinegar, sugar, salt and pepper.
  • Once pasta has been cooked and drained well, put it in a large bowl.
  • Pour in mayonnaise mixture, chopped broccoli and diced onion (don't add the bacon in yet, you want to add that in right before serving so it stays crunchy).
  • Stir well.
  • Cover bowl and put in the fridge to chill for at least 3 hours.
  • Before serving, add crumbled bacon to salad and then give it all a good stir and then serve.

Here's an easy summer salad for potlucks, ladies luncheons and picnics. Tricolor spiral pasta and broccoli florets are coated with a mild dressing and bits of bacon. Margie Shaw of Americus, Georgia sent the recipe.

1 package (16 ounces) tricolor spiral pasta, cooked, rinsed and drained
3 cups broccoli florets
1/3 cup finely chopped onion
1/2 cup reduced-fat mayonnaise
2 tablespoons fat-free milk
1 envelope reduced-fat ranch salad dressing mix
1/2 teaspoon salt
6 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine the pasta, broccoli and onion. In a small bowl, combine mayonnaise, milk, salad dressing mix and salt. Add to pasta mixture; toss to coat evenly. Cover and refrigerate for at least 1 hour. Just before serving, stir in bacon.

1 (12 ounce) package uncooked tri-color rotini pasta
10 slices bacon
1 cup mayonnaise
3 tablespoons dry ranch salad dressing mix
¼ teaspoon garlic powder
½ teaspoon garlic pepper
½ cup milk, or as needed
1 large tomato, chopped
1 (4.25 ounce) can sliced black olives
1 cup shredded sharp Cheddar cheese

Steps:

  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes; drain.
  • Place bacon in a skillet over medium-high heat and cook until evenly brown. Drain and chop.
  • In a large bowl, mix mayonnaise, ranch dressing mix, garlic powder, and garlic pepper. Stir in milk until smooth. Place rotini, bacon, tomato, black olives and cheese in bowl and toss to coat with dressing. Cover and chill at least 1 hour in the refrigerator. Toss with additional milk if the salad seems a little dry.

Yummy! This is a great dish to take to barbecues, football parties, pot lucks. **I have no idea the # of ounces, but you want the large size Ranch (not the jumbo, just large) and the regular package of penne pasta.

1 (8 ounce) package penne pasta
1 head broccoli
1 lb crisp bacon, crumbled
1 (16 ounce) bottle Hidden Valley® Original Ranch® Dressing
2 (2 1/4 ounce) cans black olives
salt and pepper

Steps:

  • Fry bacon crisp & crumble. You don't want it to still be hot when you add it to pasta salad.
  • Boil pasta according to package instructions.
  • While pasta is boiling, cut broccoli into bite size florets.
  • Rinse pasta in cold water & drain.
  • In large mixing bowl combine pasta, broccoli, olives, ranch dressing to taste, crumbled bacon and salt & pepper.
  • (grated chees & grated carrots are nice variations.).
  • Chill before serving. I like to make it the day before I plan to serve it.

A great side dish for the summer picnic. I made this on accident when I put some soup ingredients into the bowl instead of the stock pot. I doctored it up and added other ingredients, and voila! Use your favorite pasta shape.

1 (16 ounce) package farfalle (bow tie) pasta
1 cup prepared ranch dressing
6 slices bacon
½ cup shredded Parmesan cheese
1 carrot, peeled and diced
1 stalk celery, diced
1 red onion, diced

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the bow tie pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink. Transfer to a bowl, and refrigerate until cool, at least 30 minutes.
  • Meanwhile, place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate, let cool, and chop.
  • In a large salad bowl, stir together the ranch dressing, bacon, Parmesan cheese, carrot, celery, and red onion until well combined. Lightly stir in the cooled pasta to coat with dressing, and refrigerate 2 hours to blend flavors before serving.
