½ cup minced fresh chives
1 tablespoon steak sauce
1 ½ teaspoons salt
1 teaspoon coarsely ground black pepper
1 teaspoon dry mustard
¾ teaspoon Worcestershire sauce
¼ teaspoon hot pepper sauce
12 hamburger rolls, split
12 slices cooked bacon
4 ounces blue cheese

Steps:

  • Mix ground beef, chives, steak sauce, salt, pepper, mustard, Worcestershire sauce, and hot pepper sauce together in a bowl. Cover bowl with plastic wrap and refrigerate for 2 hours.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Form beef mixture into 12 patties.
  • Cook the patties until they are firm, hot in the center, and just turning from pink to grey, about 5 minutes per side. An instant-read thermometer inserted into the center should read 150 degrees F (65 degrees C). Put burgers on split rolls; top with bacon and blue cheese to serve.

1 lb lean ground turkey
1/2 teaspoon kosher salt
2 -3 garlic cloves, grated
8 slices hickory smoked pepper bacon or 8 slices regular smoked bacon
2 -4 tablespoons crumbled blue cheese
4 large hamburger buns, toasted (flour or whole wheat)
4 tablespoons mayonnaise
lettuce
sliced onion
1 large tomatoes, sliced
fresh ground black pepper

Steps:

  • Chop bacon strips into 1/2 inch pieces. Cook bacon pieces over medium to medium high heat, until evenly browned. Drain bacon pieces and discard fat. Set bacon aside.
  • In a medium mixing bowl, combine turkey, salt and garlic.
  • Divide turkey into 8 equal pieces and form into thin patties.
  • Layer four of the patties with blue cheese crumbles and bacon. Top with another turkey patty.
  • Press patties together firmly but gently. Be sure to seal the edges of the patties together to avoid burgers falling apart during cooking.

8 slices apple-smoked bacon
2 lbs ground chuck
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
2 teaspoons dried thyme
1 teaspoon crumbled dried sage
1/2 cup crumbled blue cheese
1 fuji apple
4 sesame seed rolls, split and toasted

Steps:

  • Wipe the grate of your grill or your skillet with olive oil before heating over a medium-high flame.
  • Cook the bacon in a dry skillet over medium heat; when done to your like, place on paper towels to drain and set aside.
  • In a medium bowl, combine the ground beef, salt, pepper, thyme and sage; mix well using your hands and form into 8 thin patties; form small craters in the center of half of the patties, leaving an edge of about a quarter inch all the way around and place a scant 2 tablespoons of blue cheese in the center; top each with another patty, pinching the seams together, making sure the stuffing is completely covered.
  • Cook the burgers over medium-high heat until medium-rare; 4 minutes per side on the grill and 4 1/2 minutes per side in a skillet; be gentle when turning the patties so they don't split.
  • Thinly slice the apple and top each burger with the slices just before removing from the heat.
  • Serve the burgers topped with bacon on the toasted roll.

2 large yellow onions (about 1 1/2 pound)
2 ounces blue cheese, crumbled
4 bacon slices, cooked until crispy and crumbled
2 1/4 pound ground beef
6 hamburger buns
9 tablespoons Dijon mustard
6 lettuce leaves
6 tomato slices

Steps:

  • In a large, heavy frying pan over medium heat, warm olive oil. Add onions, cover and cook, stirring occasionally, until they are completely limp, 10-15 minutes. Uncover the pan, reduce heat to medium low and cook, stirring frequently, until the onions are golden brown and sweet, 35-45 minutes; do not allow them to burn. Remove the pan from heat and let the carmelized onions cool to room temperature. In a small bowl, stir together blue cheese and bacon. Set aside. Divide ground beef into 6 equal portions and shape each into a ball. Using your thumb, make a deep depression in each ball; do not push all the way through. Spoon about 1 tablesppn on he blue cheese-bacon mixture into the depression. gently shape the meat around the fillin, sealing it inside. Form the balls into patties about 1 inch thick. Transfer to a plate. Preheat and indoor electric grill on high heat. Place the burgers on the grill and cook, turning once, 5 to 7 minutes per side for medium, or until done to your liking. Transfer each burger to the bottom half of a bun. Spread 1 1/2 tablespoons Dijon mustard on the inside of each top bun. Top each burger with 2 tablespoons carmelized onions, 2 pieces of lettuce and 1 tomato slice, then cover with top bun. Serve immediately.

My husband and I had burgers at a restaurant once that had blue cheese and bacon. It was so good, so I attempted to make our own. After lots of trial and error, I've got the recipe down. I typically make the burgers and freeze them for future use. The blue-cheese butter freezes well too for steaks or other uses.

1 (8 ounce) package of crumbled blue cheese
1/2 cup butter, softened
1 1/2 lbs ground beef (the 75/25 or 85/15 works best...but you can use a leaner meat since there's so much butter in the re)
1 egg, mixed
1/4 cup breadcrumbs, unseasoned
1/4 cup fresh parsley, fresh chopped (you can also add some chives)
salt, to taste
pepper, to taste
1 lb bacon, get a good thick deli sliced one or 1 lb pepper bacon

Steps:

  • Mix together the softened butter and blue cheese until well mixed. Roll into a log about 2-3 inches in diameter and wrap in Parchment paper. Refrigerate until hardened. You can also freeze if you don't plan to use for a while.
  • Once the butter is hardened, mix together the remaining ingredients in a large bowl by hand. Form the meat into 4-6 balls (depending on how big you want your burgers).
  • Slice 1/2 inch slices from hardened blue cheese/butter log. Place each butter/blue cheese circle into the middle of the burger ball and press into middle, shaping into a thick burger shape. Repeat for all remaining burgers. Ensure that butter/blue cheese is sealed into the middle of the meat. Grill burgers until desired doneness.
  • Cook bacon as usual on stove or oven. If you have non-peppered bacon, add a generous amount of pepper before cooking.
  • Serve burgers on your favorite bun with bacon. Add your favorite toppings -- fresh tomatoes, lettuce, extra blue cheese, ketchup, mustard, extra blue cheese, etc.
  • These are awesome! I love to make them huge -- 1/3 to 1/2 pounders and serve without a bun and have a salad as a side dish. They are so yummy!
