½ pound thick sliced bacon, cut into 1/2-inch pieces
2 carrots, diced
4 stalks celery, chopped
1 bay leaf
2 tablespoons butter
2 tablespoons flour
4 cups milk
2 large potatoes, peeled and diced
1 (15.25 ounce) can whole kernel corn, drained
1 pinch paprika

Steps:

  • Cook the bacon pieces in a large skillet over medium heat until the fat has rendered, and the bacon is crispy, about 8 minutes. Remove the bacon, leaving the grease in the pan. Stir the carrot, celery, and bay leaf into the bacon grease; cook for 5 minutes.
  • Meanwhile, melt the butter in a large pot over medium-low heat. Whisk in the flour, and cook for 5 minutes, stirring constantly. Slowly whisk in the milk, and bring to a simmer over medium-high heat. Once simmering, cook for 5 minutes, whisking frequently. Add the bacon, cooked vegetables, potatoes, and corn. Return to a simmer, then reduce heat to medium-low, and cook until the potatoes are tender, about 20 minutes more. Use additional milk as needed to to achieve desired consistency. Garnish with paprika to serve.

6 slices bacon, very smokey local bacon is better
1 cup onion, chopped
1 garlic clove, minced
3 cups potatoes, diced
3 cups water
3 chicken bouillon cubes
3 tablespoons flour
1 (354 ml) can evaporated 2% milk

Steps:

  • Fry bacon until crisp, and chop. Drain and use paper towel to soak up excess fat.
  • In a large pot, sautee onion and garlic with 2 tbsp bacon drippings.
  • Add potatoes, water, bouillon cubes to pot.
  • Heat to boiling, then cover and simmer until potatoes are cooked, then add bacon.
  • Mix flour with a small amount of evaporated milk, making a paste.
  • Gradually stir in remaining milk.
  • Add to potato mixture.
  • Cook over medium heat until mixture comes to a boil and thickens.
  • Stir often to ensure the soup doesn't burn on the bottom of the pot.

1 pinch cayenne pepper
salt and ground black pepper to taste
¾ cup heavy cream
3 tablespoons all-purpose flour
¼ cup shredded Cheddar cheese, or to taste
2 tablespoons chopped green onions, or to taste

Steps:

  • Set a 6-quart multi-functional pressure cooker (such as Instant Pot®) to Saute function. Add bacon and cook and stir until brown and crispy, 6 to 8 minutes. Transfer to a paper towel-lined plate, leaving any scraps and grease in the pot. Add onions and garlic. Cook, stirring frequently, until onions are translucent and garlic is fragrant, 2 to 3 minutes. Stir in bacon, potatoes, corn, vegetable stock, thyme, cayenne pepper, then the salt and pepper.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.

1 cup chopped onion
2 cups cubed potatoes
1 cup water
1 can cream of chicken soup
1 cup sour cream
1 3/4 cups milk
1 cup frozen green beans, thawed
1/8-1/4 teaspoon pepper
2 tablespoons chopped parsley

Steps:

  • Fry bacon until crisp in large dutch oven or stock pot.
  • Add onion and saute for 2 or 3 minutes.
  • Pour off fat; add potatoes and water.
  • Bring to boil, cover and simmer 10 to 15 minutes, or until potatoes are tender.
  • Stir in soup and sour cream.
  • Gradually add milk.
  • Add green beans.
  • Add pepper and parsley.

I had this at a church function and searched out the person who brought it, so I could request the recipe. This is a fantastic recipe for using up leftover Thanksgiving turkey. Or, if you don't have any leftovers, it's also very good with rotisserie chicken from the grocery store.

5 slices lean smoked bacon
1 cup chopped onion
3/4 cup chopped celery
2 cups cubed sweet potatoes, 1/2-inch dice
kosher salt
black pepper
4 cups chicken broth or 4 cups turkey broth, divided
1/4 teaspoon dried thyme
1/8 teaspoon dried rubbed sage
3 tablespoons flour
1 1/2 cups half-and-half
2 -2 1/2 cups roasted turkey, cut into 1/2-inch dice
fresh sage (to garnish)
fresh thyme sprig (to garnish)

Steps:

  • In large, heavy pot set over medium heat, saute bacon until browned and crisp, 3 to 4 minutes. Remove to drain on paper towels. Crumble coarsely and set aside. Pour off all but 2 T of drippings in pan.
  • Add onion and celery to same pot, still over medium heat.
  • Saute, stirring, 2 minutes. Then add sweet potatoes, 3/4 teaspoons salt and 1/2 teaspoons pepper. Saute, stirring, until slightly softened, 3 to 4 minutes. Add 3 1/2 cups of the broth, the thyme and sage and bring mixture to a simmer.
  • While mixture is coming to a simmer, place flour in a small bowl and whisk in remaining 1/2 cup stock to form a slurry into soup once it comes to a simmer. Reduce heat and cook at a simmer until vegetables are tender, but not mushy, about 10 minutes.
  • Whisk in the half and half, bring mixture to a simmer and cook 1 minute. Add turkey and cook 1 to 2 minutes to warm through. Taste and season with more salt and pepper if needed.
  • The soup can be prepared 1 day ahead; cool, cover and refrigerate. Reheat over medium heat, stirring often.
  • Serve chowder in 6 soup bowls and garnish each serving with some crumbled bacon and, if desired, with a fresh sage and thyme sprig.

2 1/2 c frozen whole-kernel corn
6 oz Canadian bacon, julienned

Steps:

  • Saute onion and garlic in oil in large saucepan until tender, about five minutes. Add broth, potatoes, bay leaf, thyme, mustard; heat to boiling. Reduce heat and simmer, covered, until potatoes are tender, about 10 minutes. Add milk and corn; heat to boiling. Reduce heat and simmer, covered, five minutes or until corn is cooked. Discard bay leaf. Process half the vegetables in food processor or blender until smooth; return to saucepan. Stir in Canadian bacon and simmer, covered, for five minutes. Season to taste with salt and white pepper.
