6 slices lean hickory smoked bacon
2 (8 ounce) packages cream cheese, at room temperature
1 cup half-and-half
2 tablespoons minced fresh chives
2 tablespoons prepared horseradish
1 teaspoon fresh lemon juice
1 teaspoon Worcestershire sauce
salt & freshly ground black pepper
chips or cracker, of your choice strong enough to stand up to this dip
1/4 lb extra-sharp cheddar cheese, finely grated
plenty kosher salt

Steps:

  • In a large skillet, fry the bacon over moderate heat till almost crisp, drain on paper towels, and crumble finely.
  • In a bowl, blend the cream cheese and half-and-half till smooth, add the bacon and remaining ingredients except crackers, and mix till well blended. Cover the dip and let stand about 1 hour before serving with crackers.

8 slices bacon, cooked and crumbled
1 tablespoon canola oil or 1 tablespoon bacon fat
1 small onion, finely chopped
1 1/2 teaspoons minced garlic
1 (3 ounce) package cream cheese, softened
1 cup sour cream
1 tablespoon prepared horseradish
1 1/4 teaspoons stone ground mustard
1/2 teaspoon fresh ground pepper
1/4 teaspoon salt

Steps:

  • Cook onion and garlic in 1 tablespoon bacon fat from bacon, or use oil; cook over medium heat until tender, about 3-4 minutes.
  • Place onion mixture in bowl; add bacon.
  • Stir in cream cheese, sour cream, horseradish, mustard, pepper, and salt; mix well until blended.
  • Refrigerate at least 2 hours to allow flavors to blend.
  • Serve chilled or at room temperature (dip spreads easily at room temp., but be careful not to allow spoilage).

1/2 lb medium shrimp, cooked and deveined
6 slices bacon
1 (8 ounce) package cream cheese, at room temperature
1 cup mayonnaise (Hellman's)
3 scallions, thinly sliced (white and green)
1 tablespoon horseradish
1/2 cup slivered almonds (can omit)
cayenne

Steps:

  • Preheat oven to 350°. Grease a shallow 1 quart casserole.
  • Cook bacon in a medium skillet until crisp.
  • Crumble and set aside.
  • Chop shrimp to small bite size pieces.
  • In a large mixing bowl, mash cream cheese and mayo together till well blended.
  • Add the rest of ingredients.
  • Pour into the casserole dish and bake till browned and bubbly 20-25 minutes.

2 tablespoons cream-style horseradish
1/3 cup chopped fresh Italian parsley

Steps:

  • Mix garlic, onion, cream cheese, Gruyère cheese and half-and-half in 1 1/2-quart slow cooker.
  • Cover and cook on low heat setting 2 1/2 to 3 hours or until mixture is hot.
