CREAMY SURIMI BACHELOR CHOW

Creamy Surimi Bachelor Chow image

Lately, I love to make this and watch episodes of Futurama on Netflix. It is one of my favorite meals. A bowl of food for one that you eat with a spoon. Heaven. I was astonished to see someone has already posted a Bachelor Chow recipe with Surimi (although it is quite different). Unbelievable!

Time 20m

Yield 1 bowl, 1 serving(s)

Number Of Ingredients 7

6 ounces surimi (1/2 of a 12 oz package of imitation crab meat)
1 egg
1 1/2 cups O'Brien potatoes
3 tablespoons coconut oil (or your preferred oil)
4 ounces cream cheese
salt
Old Bay Seasoning

  • In a skillet heat coconut oil at medium high heat until it melts.

  • When potatoes begin to brown add surimi and continue cooking stirring occasionally (another minute or two).
  • Taste a potato and check to see that it has a soft texture and is done.
  • Add the egg then salt and Old Bay seasoning to taste. Stir and scramble egg into mixture until cooked.
  • After egg is scrambled into mixture and cooked, pour potato mixture into the large mixing bowl with the softened cream cheese.
  • Mix until potato mixture is coated with cream cheese and serve. (optional) 1-2 teaspoons of mustard can be added to cream cheese if desired.
