Soft & Fluffy Cake Made With Baby Food image

Here's a great way to use up leftover baby food! A simple yet delicious cake made with baby fruits & veggies. Soft, fluffy, moist and loaded with flavor.

Number Of Ingredients 9

1 1/2 cups sugar
1 cup softened butter (at room temp)
3 eggs (at room temp)
1 cup baby food (combination is best (I used carrots, prunes & butternut squash w/ apple))
1 teaspoon vanilla
2 teaspoon cinnamon
1/2 teaspoon salt
2 teaspoon baking powder
2 cups flour

Steps:

  • Preheat oven to 325°. Grease & flour a bundt or tube pan.
  • In a large mixing bowl cream sugar and butter.
  • Beat in eggs.
  • Beat in baby food, vanilla, cinnamon and salt until mixed.
  • Mix in baking powder and flour, 1/2 cup at a time, until combined.
  • Batter will be fluffy :)
  • Spoon/scrape into prepared pan.
  • Bake for 40 - 45 minutes or until toothpick inserted near center comes out clean.
  • Cool on wire rack. After 20 minutes, turn cake onto rack and finish cooling.
  • Serve plain, with a sprinkle of powdered sugar, or a dollop of jam or fruit butter.
  • Enjoy :)

2 c self-rising flour
2 c white sugar
3 eggs
1 large and 1 small jars of plum baby food
1 tsp ground cloves
1 tsp ground cinnamon
1 c wesson oil
1 c chopped pecans

Steps:

  • 1. With mixer, cream together sugar, eggs, baby food and oil. Add flour and spices, mixing well. Then fold in pecans.
  • 2. Bake 350 for 40 to 45 minutes. Just do the toothpick test at 40 minutes, and if its clean its done!

2 cups granulated sugar
2 cups vegetable oil
2 (4 ounce) jars plum baby food
3 eggs
2 teaspoons cinnamon
1 teaspoon clove
1 teaspoon nutmeg
1 teaspoon butter flavoring
1 teaspoon vanilla flavoring
1 teaspoon almond flavoring (can be omitted if there is a nut allergy)

Steps:

  • Preheat oven to 350.
  • Mix all ingredients together in a mixer, beat well. (About 3 minutes).
  • Pour in a well greased bunt or tube pan.
  • Bake at 350 for 65 minutes or until a toopick comes out clean.
  • Cool.
  • Dust with Confectionary Sugar.

2 c sifted self-rising flour
2 c granulated sugar
1 c vegetable oil
1 tsp vanilla extract
3 eggs
2 jar(s) baby food plums
1 tsp cinnamon
1 tsp ground cloves
ICING
1 c sifted confectioners' sugar
enough lemon juice to make a "drizzle"

Steps:

  • 1. Sift together flour, sugar, cinnamon, and cloves.
  • 2. Add oil, vanilla, eggs, and plums. Beat until thoroughly mixed.
  • 3. Pour batter into a greased Bundt pan. Bake at 350 for 45 minutes.
  • 4. Icing: Mix the sifted confectioners' sugar and lemon. Just make a little more if this isn't enough icing to give as much flavor as you'd like.
  • 5. SANDY'S NOTE": I've had a hard time finding baby food plums lately. Apples and Blueberries will probably work just as well. Just anything with a purple color, but I don't know how well prunes will do.

4 plums, cut into 1/2-inch wedges (about 1 1/4 pounds)
1 3/4 cups all-purpose flour
1 teaspoon baking powder 1/2 teaspoon baking soda
1/2 teaspoon salt
1 stick unsalted butter, at room temperature
2 large eggs
1 teaspoon pure vanilla extract
3/4 cup milk
1/4 cup sour cream
1 1/2 teaspoons finely grated lemon zest (from 1 lemon)

Steps:

  • Preheat the oven to 375 degrees F. Combine 3/4 cup sugar and 1 1/2 tablespoons water in a 10-inch ovenproof skillet and stir until the mixture looks like wet sand. Cook over medium-high heat, gently swirling the pan occasionally but not stirring, until light amber, about 5 minutes. Remove from the heat and arrange the plums in concentric circles over the caramel; set the skillet aside.
  • Whisk the flour, baking powder, baking soda and salt in a bowl. Beat the butter and the remaining 1 cup sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs one at a time, beating after each addition, then beat in the vanilla. Whisk the milk, sour cream and lemon zest in a small bowl. Reduce the mixer speed to low; add the flour mixture to the butter mixture in 3 batches, alternating with the milk mixture, beginning and ending with the flour, and mix until just incorporated. 1 cup unsweetened applesauce
2 (3 1/2 ounce) jars plum baby food or 2 (3 1/2 ounce) jars apple-blueberry baby food
4 ounces egg substitute
1 egg
2 teaspoons cinnamon
1 teaspoon clove
1 teaspoon nutmeg
1 teaspoon butter flavoring
1 teaspoon vanilla
1 teaspoon almond flavoring
1/4 cup powdered sugar

Steps:

  • Preheat oven to 350 degrees.
  • Mix all ingredients together with an electric mixer.
  • Blend well, about 3 minutes.
  • Bake in a well greased tube or bunt pan for about 45-50 minutes or until a toothpick comes out of center clean.
  • Once removed from oven let rest for 10-15 minutes then turn cake out on a cake plate.
  • After cake is completely cooled, sprinkle powdered sugar over cake for a sweet added touch.

½ cup white sugar
1 cup vegetable oil

  • Preheat oven to 375 degrees F (175 degrees C). Grease and flour one 9 or 10 inch Bundt pan.
