Be sure to use super ripe bananas-the more black and brown spots, the better the flavor and sweetness will be!-for the best results here. Adapted from The Salty Marshmallow

Time 1h5m

Number Of Ingredients 10

1/2 cup unsalted butter ((melted and slightly cooled; 1 stick))
1 1/2 cups mashed very ripe bananas ((about 3 large))
2 large eggs
1 teaspoon vanilla extract
1 cup all purpose flour
1 cup whole wheat flour
1/2 cup sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F and grease a 9x5-inch loaf pan with nonstick spray. (I use classic Pam.)
  • Add the butter, bananas, eggs, and vanilla to a large bowl. Stir to combine.
  • Stir in the flours, sugar, baking soda, cinnamon and salt.
  • Pour batter into the prepared pan and smooth the top with a spatula so it's even. Bake for 55-60 minutes or until golden brown and a cake tester inserted into the center comes out cleanly.
  • Cool in the pan for 5 minutes, then remove from pan (carefully) and let cool on a wire rack completely.
  • Slice and serve.

BABY FOOD BANANA BREAD

Baby Food Banana Bread image

Ah, back in the days when I was a new mother, I had to come up with creative ways to use all the extra baby food I had lying around that my young daughter refused to eat. After several attempts, I finally came up with this version.

Time 1h15m

Yield 1 loaf, 8 serving(s)

Number Of Ingredients 14

1/2 cup sweet unsalted butter
1 cup granulated sugar
1 (6 ounce) jar banana baby food
3 over ripe bananas, mashed
1/2 teaspoon lime juice
2 large eggs
2 tablespoons buttermilk
1 teaspoon vanilla
1/2 teaspoon banana extract
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Mix together sugar and butter in a microwaveable dish and cook on HIGH heat just long enough for it to soften up- maybe 30 seconds, but not to melt it completely.
  • Remove and stir to combine.
  • Mix together baby food, over-ripe bananas, lime juice, eggs, vanilla, extract, and buttermilk.
  • Mix in the butter mixture gradually, so as not to cook the eggs.
  • It will look a little curdly from the lime juice- this is normal and will go away upon baking.
  • Combine all dry ingredients together in a large bowl, then add the wet mixture and stir with a wooden spoon just enough to combine the ingredients and moisten them- pressing out any big lumps with your spoon (don't overmix).
  • Pour into a greased and floured loaf pan (9x5") and bake in a preheated oven at 350 F (180 C) for about an hour or until a toothpick tests clean.
  • Let cool completely before serving or it will fall apart.

Time 1h

Yield 2 loaves, 20 serving(s)

Number Of Ingredients 15

3 ripe bananas (using medium sized bananas)
4 eggs
2/3 cup coconut milk (can use almond, regular, or any other kind of milk)
1 tablespoon vanilla
1/8 cup maple syrup (or unsulphered molasses)
1/2 apple (or 1/4 C applesauce)
1 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups all-purpose flour (can use all whole wheat)
2 cups rolled oats
2 tablespoons chia seeds
2 tablespoons hemp seeds
1 tablespoon ground flax seeds
1/2 cup frozen spinach, thawed

Steps:

  • Mix wet ingredients together in blender or food processor, adding oats gradually.
  • Stir dry ingredients together in a large mixing bowl. Add wet ingredients & stir.
  • Stir batter only enough to completely mix ingredients; don't over mix which will toughen the bread.
  • Pour batter into greased pans (sprinkled with granulated sugar if you want a crunchy sweet crust) and bake at 350 for 45 minutes-1 hour-do the knife test to check doneness or until the middle of the loaf is set, being careful not to burn the top and bottom of the loaf.
  • Bread will continue to cook in the middle after you take it out of the oven.

BANANA BABY FOOD

Banana Baby Food image

Ripe bananas are easy to digest and high in antioxidants. Banana is an easy choice for one of baby's first fruits, as no cooking is required. If your little one is just starting on solids, pay attention to texture--you may want to remove any lumps and thin the mixture with breast milk or formula.
