8 ounces bow tie pasta, uncooked
2 cups broccoli, cut into bite size pieces
1/2 red bell pepper
1/2 yellow bell pepper
1 small red onion, diced
1 tbsp olive oil
1 cup cherry tomatoes, halved
1 2.25 ounce can sliced black olives
parmesan cheese for serving
1 clove garlic, minced
1 tsp Italian seasoning
1/4 cup red wine vinegar
1/2 cup olive oil
1 tsp dijon mustard
1 1/2 tsp granulated sugar or honey, or more to taste
1 tbsp lemon juice
1 tbsp parsley, chopped
1 tbsp parmesan cheese
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees. Meanwhile boil pasta in salted water per package instructions. Drain and set aside.
  • Add broccoli, bell peppers and onions to a sheet tray. Drizzle with 1 tablespoon olive oil and sprinkle with salt and pepper. Toss to coat.
  • Roast for 15 minutes or until the vegetables are caramelized and tender.
  • Combine all the Italian dressing ingredients in a small bowl or measuring cup and whisk to combine. Season the dressing with salt and pepper to taste.
  • Add the cooked pasta, roasted vegetables, tomatoes, and olives to a large bowl. Drizzle in about 1/2 the dressing adding more as needed.
  • Serve immediately with parmesan cheese on top! Season to taste with salt and pepper.

1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
6 cups fresh baby spinach (about 6 ounces)
2 cups fresh broccoli florets
2 plum tomatoes, chopped
1 medium sweet red pepper, chopped
1/2 cup cubed part-skim mozzarella cheese
1/2 cup pitted Greek olives, halved
1/4 cup minced fresh basil
1/3 cup reduced-fat sun-dried tomato salad dressing
1/4 teaspoon salt
1/4 cup chopped walnuts, toasted

1 (16 ounce) package bow-tie pasta (farfalle)
1 (12 ounce) bag broccoli florets
1 (10 ounce) basket cherry or grape tomatoes
1 bunch green onions, sliced
½ cup chopped celery
½ red bell pepper, chopped
½ green bell pepper, chopped
2 cups creamy salad dressing (such as Miracle Whip®)
⅓ cup grated Parmesan cheese
¼ cup white sugar
½ teaspoon dried basil
½ teaspoon salt

Steps:

  • Bring a large pot of lightly salted water to a rolling boil. Cook the bow-tie pasta at a boil until tender yet firm to the bite, about 12 minutes; drain.
  • Quickly rinse the cooked pasta in cold water to stop it from continuing to cook; drain.
  • Mix the cooled pasta, broccoli, tomatoes, sliced green onions, celery, red bell pepper, and green bell pepper in a large bowl.
  • Gently stir the salad dressing, Parmesan cheese, sugar, basil, and salt in a bowl until evenly mixed.

1 1/2 cups farfallini pasta
1 Tbsp vegetable oil
1/2 onion chopped fine
3/4 cup chopped walnuts
1/2 cup chopped green pepper
2 Tbsp olive oil
1 Tbsp lemon juice
1/4 tsp salt
pinch of pepper
2 Tbsp chopped fresh coriander
1 cup cherry tomatoes quartered
fresh foriander sprigs

Steps:

  • In skillet toast 1/2 cup of pasta over medium heat stirring often until light brown about 5 min In saucepan of boiling salted water cook toasted and remaining pasta until al dente. 7-8 min Drain & rince, set aside. In skillet heat vegetable oil over medium heat cook onion until softened about 2 min. Add walnuts cook 2 min stir in green pepper & cook 1 min. Pour over pasta, let cool. In small bowl whisk together olive oil lemon juice salt and pepper pour over pasta mixture. Add chopped coriander and toss. Garnish with cherry tomatoes and coriander sprigs.
