VERY MOIST WHOLE WHEAT BANANA BREAD



Very Moist Whole Wheat Banana Bread image

This is my own adaptation of banana bread, and it has turned out very moist. Lower sugar, more nutrient dense, too. Has a very fine texture due to the whole grain wheat. Try it, and you'll see! This freezes well for later use.

Number Of Ingredients 11

1/4 cup stick margarine
3 tablespoons oil (of your choice)
1/2 cup white sugar
1 teaspoon spoonable stevia
1/4 cup milk
2 eggs
1 cup banana, mashed
1 teaspoon vanilla extract
2 cups whole wheat flour, blended in blender for finer texture
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Combine margarine, oil, sugar, stevia, and mashed bananas in a large bowl. Mix until creamy.
  • Add vanilla, eggs, and milk to the creamed mix.
  • In a separate bowl, measure out whole wheat flour. To get a finer texture, you can blend it. This helps to achieve the moistness and unique texture of the bread.
  • Add baking soda and salt to flour, and mix.
  • Add flour mixture to the creamed mixture.
  • Put bread batter into a greased 9"x5" pan, and spread flat into pan.
  • Bake 50-60 minutes, depending on the power of your oven.
  • Cool in pan for 5 minutes before removing to a cooling rack. :).

Baby Bear's Whole Wheat Banana Bread image

"Just right!" Delicious, moist, and wholesome. This bread (a favorite with my brothers) uses no refined grains or sugars. Plus, it uses up those overripe bananas sitting on the counter! White whole wheat flour is made from a softer grain than regular WW, so it has a more tender texture but the same health benefits. Using it allows you to get all the fiber and nutrition of whole grains, but not risk turning out a hard, dry loaf! :) Besides white whole wheat, the bananas, applesauce, and wheat germ ensure that this bread is moist and flavorful. It freezes very well, so eat one loaf now and save the other one for later -- if you have any left over to freeze, that is!

3 cups white whole wheat flour
1/2 cup wheat germ
2 teaspoons baking soda
1 teaspoon salt
1/3 cup olive oil
1/3 cup unsweetened applesauce
1 cup honey
4 eggs
2 cups mashed bananas
1/2 cup hot water

Steps:

  • Stir together dry ingredients.
  • Beat oil, applesauce, and honey together; add eggs and beat well.
  • Add bananas and beat to combine.
  • Add dry ingredients to wet, alternating with hot water; mix well after each addition.
  • Pour into two greased 5x9 loaf pans; bake at 325 degrees for 60-70 minutes, or until tests done (it takes 75 minutes for me, but I think my oven is messed up, so it may need a shorter amount of time for you).
  • Invert loaves onto wire rack to cool completely.

I actually abandoned my "family" banana bread in favor of this one... It's more a like a cake than a bread. I have increased the bananas from the original recipe, and I prefer to omit the nuts. I like mine warm with butter on top. Yummy!

1/2 cup butter or 1/2 cup margarine
1 cup sugar
2 eggs, slightly beaten
3 medium bananas, preferably frozen, then defrosted (1-2 cups mashed)
1 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 cup whole wheat flour
1/3 cup hot water
1/2 cup chopped walnuts

Steps:

  • Melt butter.
  • Put the butter, sugar, bananas and eggs in a blender. Blend until nice and smooth.
  • Now transfer to a mixing bowl.
  • In a separate bowl, stir together flours, salt, and baking soda.
  • Add dry ingredients to banana mixture alternately with hot water.
  • Stir in chopped nuts.
  • Cut a piece of waxed or parchment paper the size of the bottom of your loaf pan.
  • (This helps the loaf come out in one piece while still warm).
  • Put the paper in the loaf pan and spray the pan well with non-stick spray.
  • Scoop the batter into the pan.
  • Bake in a preheated 325 degree F oven for one hour and 10 minutes.
  • Test with a cake tester to make to make sure it's done.
  • Sometimes it takes a little bit longer.
  • If the top gets too brown, cover it with a piece of aluminum foil so it doesn't get too much darker.

1 1/2 cups white whole wheat flour
2/3 cup sugar
1/4 cup flax seed meal
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon cinnamon
3 mashed bananas (use very ripe bananas )
2 eggs
2 teaspoons vanilla extract
2 tablespoons grapeseed oil
1/2 cup raisins
1/3 cup semi-sweet chocolate chips (optional)

Steps:

Using whole wheat pastry flour gives this a ligher texture than regular whole wheat flour. This mix also make great muffins. Bake around 20 mins.
