This recipe is a friend's grandma's recipe and is absolutely the best hash brown casserole I've ever had. Kentucky grandmas sure know how to cook!

1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
1 (8 ounce) container sour cream
½ cup melted butter
½ cup chopped onion
½ teaspoon salt
½ teaspoon ground black pepper
1 cup crushed cornflakes
½ cup melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.
  • Bake in the preheated oven until the sauce is bubbly and the top is golden brown, 1 to 1 1/2 hours.

I received this recipe from my special family member and have had great compliments on it. It is very flavorful and colorful for either breakfast or a side dish.

32 oz frozen southern style hash brown potatoes
16 oz sour cream
1 can(s) cream of chicken soup
salt & pepper to taste
8 oz shredded cheddar cheese
1 stick melted margarine
1 to 11/2 c grated sharp cheese

Steps:

  • 1. Preheat oven to 350. Spray a 9 x 13 baking dish. Mix all ingredients except 8 oz shredded cheese. Top with the shredded cheese. Bake for 1 hour uncovered.

1 pound cubed fully cooked ham (2 cups)
7 large eggs
1 cup 2% milk
1/2 teaspoon salt
1/2 teaspoon ground mustard

  • Preheat oven to 350°. Place hash brown patties in a single layer in a greased 13x9-in. baking dish. Sprinkle with cheese and ham. In a large bowl, beat eggs, milk, salt and mustard. Pour over ham. , Cover and bake 1 hour. Uncover; bake until edges are golden brown and a knife inserted in the center comes out clean, about15 minutes longer.
