Avocado Grilled Cheese image

Make avocado grilled cheese in less than 15 minutes for a simple, yet elevated grilled cheese variation!

4 thick slices of bakery sourdough bread
2 tablespoons salted butter (softened)
1 large avocado (pitted and sliced)
¼ large red onion (thinly sliced)
4 slices thick-cut provolone cheese (cut into halves (2 slices per sandwich))
¼ teaspoon salt
¼ teaspoon pepper
¼ cup salsa (for serving)

Steps:

  • Prepare the avocado slices by fanning each avocado half out on a cutting board and sprinkling them with salt and pepper. Set aside for later.
  • Spread the butter out on each side of the sourdough bread.
  • Heat a large skillet over medium heat and spray with nonstick cooking spray. Then, add the sourdough bread to the pan.
  • Let the bread toast for 2-3 minutes or until golden brown.
  • Flip the pieces of bread around so the toasted side is facing upward and place two half pieces of provolone cheese on top of two of the pieces of toasted bread.
  • Sprinkle a few red onions on top of the cheese and fan out ½ an avocado on each piece of bread.
  • Sprinkle the rest of the red onions over the avocado and top the avocado with two more half slices of provolone cheese.
  • Top each sandwich with the other piece of bread (toasted side down) and toast the grilled cheese until the provolone cheese begins to melt (about 2-3 minutes).
  • Carefully flip the grilled cheeses over and toast the other side of the grilled cheese sandwiches.
  • Remove from heat and serve with an option of a salsa dipping sauce.

6 tablespoons butter, softened, divided
8 slices sourdough bread
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
4 ounces Brie cheese, rind removed, sliced
2 medium ripe avocado, peeled and sliced

Steps:

  • Spread 3 tablespoons butter on 1 side of bread slices. Place bread, butter side down, in a large cast-iron skillet or on an electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie; add avocado slices. Sprinkle cheddar cheese mixture evenly over avocado slices. Top with remaining bread slices, toasted side facing inward. Spread the butter-mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

1/4 cup olive oil
1 garlic clove, crushed
1 loaf French bread
3 plum tomatoes, sliced
1/4 red onion, sliced
1 avocado, sliced
pepper
cheddar cheese, shredded (optional)

Steps:

  • Combine olive oil and garlic.
  • Cut bread diagonally into 1/2 inch slices.
  • Brush each slice with oil.
  • Place on a cookie sheet; broil or grill until golden, approximately 5 minutes.
  • Top each slice with tomato, onion, avocado and cheese.
  • Return to broiler for 5 to 10 minutes until avocados begin to blister and brown.
