AVOCADO AND BACON-STUFFED EGGS
Avocado, bacon, and eggs are such a great combination! This is a quick and easy way to take deviled eggs to a new level! I won't make them without avocado! It adds so much taste and texture.

Steps:
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 5 minutes. Drain on paper towels.
- Mash avocado in a large bowl with a fork. Mix in bacon, yolks from the hard-boiled eggs, mayonnaise, mustard, and lime juice.
- Spoon avocado mixture into the egg whites. Garnish eggs with red pepper flakes. Chill until ready to serve.

SCRAMBLED EGGS, BACON, AND SRIRACHA-STUFFED AVOCADO RECIPE BY TASTY
Here's what you need: ripe avocado, oil, salt, egg, bacon, sriracha sauce

Steps:
- Preheat gas grill on high heat.
- Using a sharp knife, slice the avocados in half by cutting in a straight line around the pit.
- Place the avocado half containing the pit in your hand and face it away from you. Gently stick the tip of the knife into the side of the pit and carefully pry it out of the avocado. For a ripe avocado, the pit will pop out with little effort. You can hold a kitchen towel in your hand and place the avocado in the towel for added protection from the edge of your knife.
- Place the avocado halves on a tray. Using a pastry brush, brush oil on each of the avocado halves.
- Season avocados with salt.
- Place the avocados on the grill, flesh side down, and grill for 3-4 minutes, until grill marks appear.
- Remove the avocados and stuff with scrambled eggs, bacon crumbles, and Sriracha sauce.
- Enjoy!

SPICY AVOCADO-STUFFED EGGS
Steps:
- In medium saucepan, combine eggs (in single layer) and cold water to cover. Bring to boil, turn off heat, cover pan, and let stand 18 minutes. Drain, add cold water to cover eggs, drain again, add several ice cubes to pan, and again add cold water to cover. Let stand until eggs are cold, about 3 minutes.
- Peel eggs and halve lengthwise. Carefully remove yolks and mash in large bowl with fork. Add mayonnaise, lime juice, wasabi paste, salt, and pepper and stir with fork until smooth. Fold in tomato, scallion, and chile. Fold in avocado. Spoon mixture into whites.
AVOCADO STUFFED EGGS
I found this recipe several years ago in our local newspaper. This is a different kind of deviled egg. The creamy avocado replaces the mayo. I have subbed lime juice for the lemon. The flavor is best when only slightly chilled or at room temp.

Steps:
- Boil the eggs for three minutes.
- Peel and slice each egg in half lengthways.
- Remove egg yolks and place the egg white halves on a serving platter.
- Mash avocados and egg yolks together.
- Fold in minced onions, lemon juice and salt.
- Spoon mixture into the egg whites.
- Garnish with a sprinkle of paprika and diced olives.
