This was always a lunchtime favorite with my gal pals. It's simple, delicious, and refreshing! The measurements for the ingredients are all approximate, as this sandwich is best when tailored to personal taste. Particularly scrumptious on potato, oat, or country white bread. Enjoy!

2 slices bread
2 slices provolone cheese, or more as needed
¼ avocado - peeled, pitted, and thinly sliced
½ tomato, sliced
1 ½ teaspoons balsamic vinegar

Steps:

  • Lay 1 slice bread on a plate. Place provolone cheese on bread and top with avocado and tomato slices, respectively. Drizzle balsamic vinegar over tomato and top with remaining slice of bread.

Avocado Paste Sandwich image

We have an avocado tree and I make these sandwiches for myself all the time. My 16 month old does not like avocados and this is the only way he'll eat them. There is a variety that tastes very buttery and my grandmother used to call the avocado "poor man's butter" because she would use it on bread instead of butter when times were hard. By itself the paste is an excellent first food for baby.

1 slice avocado
2 slices whole wheat bread (toasted or untoasted slices whatever you fancy)
1 lime (optional)
1 pinch salt (optional)

Steps:

  • Smash avocado on a plate with a fork.
  • Spread between two pieces of bread.
  • Serve.
  • Omit the bread and the paste alone makes a good first baby food.
  • If I'm packing this for lunch sometimes I'll rub the avocado with a cut lime before making the paste.
  • For the adults we add a pinch of salt. Baby/toddler - no salt.
