Tomato, Avocado and Mozzarella Grilled Cheese is filled with fresh tomato slices, smashed avocado and creamy mozzarella cheese. Grilled until golden on the outside and melty on the inside, this sandwich is perfect to pair with soup for an easy lunch or dinner!

2 slices thick bread (I used Texas toast)
1 avocado
Salt and pepper (to taste)
2 tomato slices
3 thin deli-style mozzarella cheese slices
2 tablespoons unsalted butter (softened to spread)

Steps:

  • Place two slices of bread on a plate or flat surface.
  • Cut avocado in half and remove pit. Scoop contents into a small bowl and mash with fork.
  • Spread avocado evenly onto each bread slice and season with salt and pepper.
  • Place two slices of cheese on top of the avocado on one slice of bread, then add tomato slices, followed by the third slice of cheese.
  • Put the second bread slice on top of the sandwich and spread 1 tablespoon of softened butter evenly over the top of bread, coating to the edges.
  • Heat a small skillet over medium heat and place the sandwich, buttered side down, onto skillet. Butter the slice of bread that is facing up. Cook sandwich over medium heat, 3-4 minutes per side, or until crust is golden and cheese starts to melt.
  • Remove from heat and serve immediately.

1 avocado, sliced
2 pieces of Mozzarella cheese slices
1 tomato, sliced
olive oil
salt
butter

Steps:

  • 1. Heat a skillet over medium heat. 2. Butter one side of 2 slices of whatever bread you're using. Place one slice butter side down in the pan. 3. Top with sliced avocado, mozzarella cheese slices and a couple slices of tomato. Drizzle with a bit of olive oil and sprinkle with salt. Top with remaining piece of bread, butter side up. 4. 8 slices sourdough bread
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
4 ounces Brie cheese, rind removed, sliced
2 medium ripe avocado, peeled and sliced

Steps:

  • Spread 3 tablespoons butter on 1 side of bread slices. Place bread, butter side down, in a large cast-iron skillet or on an electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie; add avocado slices. 3/4 cup extra-virgin olive oil
16 basil leaves
Salt and freshly ground black pepper
2 ripe beef steak tomatoes, halves and seeded and finely diced
1/2 small red onion
2 ripe Hass avocados, halved and peeled and pitted
Canola oil
1/4 cup pine nuts, lightly toasted
1/4 cup cotija cheese, grated
Basil leaves

Steps:

  • Combine oil, basil, salt and pepper in a blender and blend for 1 minute. Strain into a bowl, discard solids
  • Combine tomatoes and onion in a bowl, add a few tablespoons of the basil oil and season with salt and pepper. Reserve remaining basil oil for Shrimp recipe.
  • Heat grill to medium heat. Brush avocado with oil on grill and season with salt and pepper. Grill cut side down until lightly golden brown, about 2 minutes. Remove to a platter, cut side up. I LOVE avocados, especially the black Haas avocados. They're creamy and have such a "buttery" taste, and yet are cholesterol-free. This recipe makes a really delicious sandwich. When I make it for the kids, I eliminate the cumin, but add it when I'm making a sandwich for myself -- I like cumin's very mild spicy flavor that has a hint of caraway in it.

1 ripe avocado, halved, seeded and peeled
1 tablespoon lemon juice
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/2 teaspoon finely minced parsley
8 slices bread (I use whole grain)
6 ounces monterey jack cheese, sliced
1 large tomatoes, thinly sliced
2 tablespoons butter, softened

Steps:

  • In a small bowl, mash together avocado, lemon juice, cumin and salt until smooth. Stir in parsley and set aside.
  • Top four of the bread slices with cheese; spread with avocado mixture and top with tomato slices. Add the four remaining bread slices on top. Using 1 tablespoon of the softened butter, spread some on the top of each sandwich.

I don't remember where I got this recipe, but it sure is delicious! To get the perfect grilled cheese every time, you should start by heating your skillet to low. Once you build your sandwich, leave the skillet on low and cover with a lid or foil. Cook for a couple of minutes to let the cheese get gooey and you fillings get warm. Then remove the lid/foil and turn up heat, flipping your sandwich until it is perfectly toasted. Yum!
