2 teaspoons finely chopped shallot
1 tablespoon fresh lemon juice
1/4 teaspoon table salt
2 tablespoons extra-virgin olive oil
1 pink or ruby-red grapefruit
1 firm-ripe California avocado
1 oz baby arugula (2 cups)
Coarse sea salt to taste (optional)

Steps:

  • Plunge lobster headfirst into an 8-quart pot of boiling salted water . Cook, covered, over high heat 6 minutes (for 1 1/4-lb lobster) or 7 minutes (for 1 1/2-lb lobster) from time it enters water. Transfer with tongs to sink to drain.
  • When lobster is cool enough to handle, remove meat from tail and claws, keeping meat intact. Discard tomalley, any roe, and shells. Chill lobster, covered, until cold, at least 1 hour.
  • While lobster chills, stir together shallot, lemon juice, and table salt in a small bowl and let stand at room temperature 30 minutes. Add oil in a stream, whisking.
  • Cut peel, including all white pith, from grapefruit with a sharp knife. Cut segments free from membranes and transfer segments to paper towels to drain.
  • Halve avocado lengthwise, discarding pit. (Save 1 half, wrapped tightly in plastic wrap, for another use.) Halve remaining avocado half lengthwise and peel, then cut crosswise into 1/3-inch-thick slices.
  • Cut lobster tail meat crosswise into 1/2-inch-thick slices. Divide avocado and all of lobster meat between 2 salad plates and arrange grapefruit around them. Top with arugula and drizzle with dressing. Sprinkle lightly with sea salt (if using) and serve immediately.

4 1 3/4-pound live lobsters
9 tablespoons olive oil
1/2 cup orange juice
3 tablespoons fresh lime juice
1 tablespoon minced seeded jalapeño chili
1 tablespoon finely grated lime peel
1 1/2 teaspoons finely grated orange peel
2 avocados, halved, pitted, peeled, cut into 1/2-inch pieces
4 medium tomatoes, seeded, cut into 1/2-inch pieces
1 large papaya, peeled, seeded, cut into 1/2-inch pieces
10 cups mixed baby greens

Steps:

  • Prepare barbecue (medium-high heat). Place smoke chips in 8 x 6-inch foil packet with open top. Set atop coals 5 minutes before grilling lobsters. Bring large pot of salted water to boil. Working in batches, drop lobsters headfirst into water. Cover; boil 2 minutes. Transfer lobsters to work surface. Immediately split in half lengthwise, using heavy large knife. Crack claws.
  • Arrange lobsters, cut side up, on grill. Cover; grill 6 minutes. Turn lobsters over and grill until just cooked through, about 5 minutes. Remove from heat. Remove lobster meat from shells. Cool. Cut meat into 1/2-inch pieces. Transfer to large bowl.
  • Whisk oil and next 5 ingredients in medium bowl to blend. Season with salt and pepper. (Can be made 1 day ahead. Cover lobster and dressing separately; chill. Rewhisk dressing before continuing.)
  • Add avocados, tomatoes and papaya to lobster in bowl. Pour 1/2 cup dressing over; toss. Season with salt and pepper.
  • Toss greens in another large bowl with enough remaining dressing to coat.
  • Divide greens among plates. Spoon lobster mixture atop greens and serve.

1 tablespoon chopped shallots
3 tablespoons grapefruit vinegar* (recommended: "O")
1 lime, juiced
3 tablespoons grapefruit oil* (recommended: "O")
3/4 cup extra-virgin olive oil
2 tablespoons chopped parsley leaves
2 tablespoons thinly sliced basil or mint leaves
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 avocados
Juice of 1/2 a lime
4 lobster tails
Melted butter, for basting
2 red bell peppers, diced
1 jicama, diced
1 Maui onion, diced
2 heads butter lettuce
1/4 cup pine nuts, toasted
1 Maui onion, very thinly sliced
1 pint grape tomatoes, or sweet 100 tomatoes or pear tomatoes

Steps:

  • In a medium bowl, whisk the mustard, shallots, vinegar and lime juice. Slowly whisk in the grapefruit oil and the extra-virgin olive oil. Do not worry if the dressing is not perfectly emulsified. Stir in the herbs, salt and pepper. Set the vinaigrette aside.
  • Bring a large pot of salted water to boil.
  • Preheat grill to high or preheat the broiler.
  • Cut the avocado in half lengthwise. With a spoon carefully remove the avocado meat. Reserve the shells. Cut the avocado into 1/3-inch dice and place in a mixing bowl. Add lime juice and cover closely with plastic wrap.
  • Remove the lobster meat from tail and parboil for 1 minute or until no longer translucent. Place lobster meat on the grill basting with butter just long enough to get a little grill flavor (about 1 minute per side). If cooking indoors, broil until lightly golden.
  • Remove lobster from the grill and dice into approximately the same sized cubes as the avocado.
  • In a large bowl, gently mix the avocado, lobster, red bell pepper, jicama and onion. Drizzle in half of the vinaigrette and carefully stir to mix evenly. Taste for seasoning and add more dressing or salt or pepper, as needed. Generously stuff the avocado shells. This can be prepared a few hours in advance and refrigerated.
  • Place a bed of butter lettuce on chilled salad plates and place avocado half in center of plate. Scatter the lettuce with pine nuts, onion and tomatoes. Drizzle remaining vinaigrette over salad. Serve immediately.

2 2-pound live lobsters
Salt to taste, if desired
1 pound romaine lettuce
1 cup finely chopped green onions or scallions
2 firm, ripe, unblemished avocados, about 3/4 pound each
Juice of 1/2 lemon
2 tablespoons finely chopped fresh basil
1 tablespoon imported mustard
1/4 cup white-wine vinegar
2 tablespoons finely chopped shallots
Salt to taste, if desired
Freshly ground pepper to taste
1 hard-cooked egg, finely chopped
1/2 cup peanut, vegetable or corn oil
1/2 cup olive oil

Steps:

  • Bring enough water to the boil to cover the lobsters when added. Add the lobsters and salt and cover. When the water returns to the boil, let the lobsters simmer 12 minutes. Let stand five to 10 minutes and drain the lobsters well.
  • Meanwhile, cut away and discard the core of the lettuce. Cut the leaves lengthwise into quarters. Cut the leaves crosswise into very fine shreds. There should be about six to seven cups.
  • Remove the meat from the lobster shells. Cut the meat into bite-size pieces. There should be about four cups.
  • Put the lettuce in a salad bowl. Arrange the lobster pieces on top and add the green onions or scallions. Toss lightly.
  • Cut the avocados in half lengthwise. Discard the pits. Peel the halves. Cut each half lengthwise into thin strips. Sprinkle with lemon juice.
  • Arrange the avocado slices neatly over the salad. Sprinkle with the basil.
  • To make the salad dressing, put the mustard, vinegar, shallots, salt and pepper in a mixing bowl. Add the egg. Blend the oils. Start beating with a wire whisk while gradually adding the oil.
  • Serve the salad and salad dressing separately if desired. Or toss the salad with the dressing.

3 cups cooked lobster meat (about 1 pound)

2 tablespoons drained bottled horseradish, or to taste
1 tablespoon red-wine vinegar
1 bunch watercress

Steps:

  • In a 5-quart kettle cover potatoes with salted cold water by 2 inches and simmer until just tender, 15 to 20 minutes. Drain potatoes in a colander and, while still warm, cut into quarters. Transfer potatoes to a large bowl and cool.
  • Finely chop onion. Halve, pit, and peel avocado and cut into 1/2-inch pieces. Chop enough dill leaves to measure 1/2 cup. Cut lobster into 1/2-inch pieces and add to potatoes with onion, avocado, and dill.
  • In a small bowl whisk together mayonnaise, sour cream, horseradish, vinegar, and salt and pepper to taste and pour over salad. Gently toss salad until combined well and season with salt and pepper. Chill salad, covered, at least 1 hour and up to 1 day.

2 ruby-red or pink grapefruits
1 tablespoon finely minced shallots
1 1/4 teaspoons Dijon mustard
2 tablespoons white-wine vinegar
1 tablespoon chopped fresh lemon basil or regular basil, plus leaves for garnish
Coarse salt and freshly ground pepper
1/4 cup extra-virgin olive oil
2 avocados, peeled and pitted
4 hearts of palm, cut in 1/2-inch-thick rounds
1 large head Boston lettuce (8 ounces), well washed and dried

Steps:

  • Fill a large bowl with ice and water; set aside. Bring two inches of water to a boil in a large stockpot. Steam lobsters for 10 minutes; transfer to ice bath to cool. Break off claws and tails; use bodies to make a stock, or discard. Split tail lengthwise with a sharp knife; remove meat. Slice tail into bite-size pieces. Remove claws from shells, keeping whole if possible. Chill lobster meat in the refrigerator.
  • Supreme the grapefruit: Cut ends off grapefruit; remove peel, pith, and outer membranes. Lift sections away from the membranes, and reserve. Squeeze 1/2 cup juice from membranes into a bowl for dressing.
  • Place shallots, mustard, vinegar, juice, and lemon basil in a bowl; season with salt and pepper. Whisk to combine. Gradually whisk in olive oil; adjust seasoning.
  • Cut avocados into 1/2-inch-thick wedges; coat with a little grapefruit juice to prevent discoloration. In a large bowl, combine avocado, lobster, grapefruit, and hearts of palm. Line individual glass serving dishes with lettuce leaves. Tear remaining lettuce into bite-size pieces; add to lobster mixture. Drizzle salad with dressing; toss. Fill lettuce leaves with salad; garnish with lemon basil, and serve immediately.

1 Granny Smith apple, cored, and cut into 1/4-inch cubes (do not peel)
1 large ripe avocado, halved, pitted, peeled, and cut into 1/4-inch cubes
1 pound (2 cups) cooked lobster meat, cut into bite-sized pieces
Equipment: A 5-quart pasta pot fitted with a colander; 4 chilled large dinner plates

Steps:

  • 1. Prepare a large bowl of ice water.
  • 2. Fill the pasta pot with 3 quarts of water and bring it to a rolling boil over high heat. Add the coarse salt and the beans, and blanch until crisp-tender, 3 to 4 minutes. (Cooking time will vary according to the size and tenderness of the beans.) Immediately remove the colander from the water, letting the water drain from the beans. Plunge the beans into the ice water so they cool down as quickly as possible. (The beans will cool in 1 to 2 minutes. If you leave them longer, they will become soggy and begin to lose flavor.) Drain the beans and wrap them in a thick kitchen towel to dry. (Store the cooked beans in the refrigerator for up to 4 hours.)
  • 3. In a large, shallow bowl, combine the yogurt, mustard, and fine salt and whisk to blend. Taste for seasoning. Add the green beans, chives, apple, avocado, and lobster. Toss to coat. Arrange on the plates and serve.

1/4 cup extra-virgin olive oil
2 teaspoons finely chopped scallion (white and pale green parts only)
1 tablespoon fresh lime juice
2 ruby-red grapefruits
2 firm but ripe avocados, halved, pitted, peeled, and diced
1 mango, peeled, pitted, and diced
4 cups mixed mesclun salad greens
Salt and freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the lobsters and boil for 7 minutes, or until cooked through. Drain the lobsters and let them cool completely. When the lobsters are cool enough to handle, remove the meat from the tail (and from the claws if using Maine lobsters), keeping the meat intact. Discard the tomalley, any roe, and shells. Chill the lobster, covered, until cold, at least 1 hour.
  • Chop the lobster into bite-size pieces. In a small bowl, whisk together the olive oil, scallions, and lime juice; set the dressing aside.
  • Using a sharp knife, remove the peel and white pith from each grapefruit. Working over a small bowl, cut between the membranes to release the grapefruit segments, letting the juice and segments fall into the bowl. Use a slotted spoon to transfer the segments to a large bowl. Add the lobster, avocados, mango, and mesclun greens.
  • Whisk the reserved grapefruit juice into the scallion dressing, and season to taste with salt and pepper. Gently toss the salad with dressing to coat. Serve.

FLORIDA LOBSTER SALAD WITH AVOCADO, PAPAYA, AND JADE DRESSING



Florida Lobster Salad with Avocado, Papaya, and Jade Dressing image

This mix of lobster, avocado, and papaya is a luxurious alternative to your everyday salad. It's sweet and creamy, perfect in the summer on a hot day. With the exception of cutting the avocado, all of the ingredients for the salad can be prepared ahead of time. Then, assembling the salad becomes a quickie. Leftover jade dressing will keep covered in the refrigerator for up to two days and is fantastic with grilled lamb chops.

Yield serves 4 as a main dish or 6 as a starter

Two 3/4-pound spiny lobster tails, preferably fresh
Kosher salt and freshly ground black pepper
1 shallot, halved
1 teaspoon Old Bay seasoning
1 bay leaf
2 bunches watercress, stems trimmed
1 cup 1/2-inch diced ripe avocado (see Note, page 52)
1 cup papaya chunks
1/4 cup Jade Dressing (recipe follows)
1/4 cup pickled red onions (page 235), drained
1/4 cup macadamia nuts, toasted (see Note, page 54) and coarsely chopped
1 large egg yolk (see Note)
1/4 cup rice vinegar
1/2 cup canola oil
1/4 cup fresh mint leaves
1/4 cup fresh basil leaves
1/4 cup fresh cilantro leaves
1/2 shallot, coarsely chopped
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • To cook the lobster tails, fill a medium pot three-quarters of the way with water. Add 1 tablespoon salt, the shallot, Old Bay, and bay leaf; bring to a boil over medium-high heat. Carefully put the lobster tails into the boiling water and cook until the shells turn orange, 5 minutes. Using tongs, remove the tails from the pot and put them on a cutting board to cool.
  • Turn the lobster tails with the underside (the soft shell side) facing up. With kitchen scissors, cut lengthwise down the center of the shell and pull out the meat. Cut the lobster meat into 1/2-inch chunks. Transfer to a bowl, cover, and refrigerate.
  • In a mixing bowl, combine the watercress, avocado, and papaya. Drizzle with the dressing, tossing with your hands to dress the salad lightly and evenly. Season with salt and pepper. Divide the salad equally among 4 large chilled plates. Top with the pickled onions, lobster chunks, and nuts.
  • Combine all the ingredients in a blender. Puree on high speed until thick and creamy and the color of jade, roughly 1 minute.

BOBBY FLAY'S AREPAS WITH LOBSTER-OCTOPUS SALAD AND AVOCADO CREMA



Bobby Flay's Arepas with Lobster-Octopus Salad and Avocado Crema image

2 yellow bell peppers, roasted (see Notes, page 22)
2 tablespoons Dijon mustard
2 tablespoons sweet Spanish paprika
1/4 teaspoon cayenne pepper
Juice of 1 lemon
1/3 cup extra virgin olive oil
Kosher salt and freshly ground black pepper
8 ounces cooked octopus, coarsely chopped
8 ounces cooked lobster meat, coarsely chopped
1/4 cup chopped fresh cilantro leaves
2 1/2 cups whole milk
4 tablespoons (1/2 stick) unsalted butter, cut into pieces
1 1/2 cups white arepa flour (precooked cornmeal)
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup grated Cotija cheese
1 tablespoon honey
Canola oil
Avocado Crema (page 252)

Steps:

  • To make the lobster-octopus salad, combine the bell peppers, mustard, paprika, cayenne, and lemon juice in a blender and blend until smooth. With the motor running, add the oil and blend until emulsified; season with salt and pepper.
  • Put the octopus and lobster in a bowl, add the yellow pepper vinaigrette and the cilantro, and toss to combine; season with salt and pepper. Cover and refrigerate for at least 30 minutes and up to 2 hours to allow the flavors to meld.
  • To make the arepas, preheat the oven to 350°F.
  • Bring the milk to a simmer in a small saucepan; then remove from the heat and stir in the butter. Combine the arepa flour, salt, pepper, and cheese in a large bowl. Add the hot milk and the honey, and stir until combined. Let the mixture stand until the milk is absorbed enough for a soft dough to form, 1 to 2 minutes; the dough will continue to stiffen.
  • Form the dough into 12 balls, each about 2 inches in diameter, and flatten them between your palms into 3-inch patties, each about 1/3 inch thick.
  • Heat 2 tablespoons oil in a large nonstick skillet over medium heat until the oil begins to shimmer. Fry 4 arepas at a time until light golden brown and just cooked through, 2 to 3 minutes per side, adding more oil as needed; transfer to a plate lined with paper towels. Transfer the arepas to a baking sheet, and bake in the oven until just heated through, about 5 minutes.
  • Slice the arepas in half crosswise, spread the Avocado Crema on the bottom layer, and top with the lobster-octopus salad. Cover with the top layer.

When I was growing up, my mom and sister were obsessed with lobster. My father and I just never got it. But on both their birthdays, my father would take us all to the chosen lobster spot of the moment. While Jessica and my mom happily cracked their way through dinner, hardly glancing up from their plates, Dad and I would glumly saw through our landlubber specials. I admit I felt a little envious watching Jessica and Mom picking apart their matching dinners, knowing that I would never have that lobster bond with my mother. Normally, my mother prefers her lobster plain and simple-steamed and served with lemon and drawn butter. But one Mother's Day, I took liberty, hoping to entice her with this rendition of a classic chopped salad. It worked; while we're still on opposite sides of the table at the lobster shack, we both get excited about this salad.

Number Of Ingredients 14

2 live Maine lobsters, 1 3/4 to 2 pounds each
10-ounce slab applewood-smoked bacon
1/3 cup plus 1 tablespoon extra-virgin olive oil
1 1/2 cups fresh corn (from about 2 ears)
1 teaspoon thyme leaves
2 tablespoons finely diced shallots
3 tablespoons lemon juice
Pinch cayenne pepper
2 ripe avocados
3/4 pint cherry tomatoes, mixed colors if possible
1 large head butter lettuce, leaves separated, cleaned, and dried
2 tablespoons chopped flat-leaf parsley
2 tablespoons sliced green and opal basil
Kosher salt and freshly ground black pepper

Steps:

  • Bring a large pot of water to a boil over high heat.
  • Insert the tip of a large chef knife just below the eyes of each lobster-this will kill them instantly. Add the lobsters to the pot of boiling water, making sure they are completely submerged. Cook the lobsters 10 minutes, and then remove them immediately to a bowl of ice water.
  • When the lobsters have cooled, twist off the tails and claws from the bodies. Save the bodies for another use, or discard.
  • Place the tails on their sides, and crush gently with the heel of your hand to break open the shells. Carefully pull out the tails. Cut the tails in half lengthwise, and remove the intestinal tract and any green tomalley. Cut each half crosswise into six or seven pieces.
  • Use the back of a large not-precious knife to break open the shell on the claws. Remove the claw meat, and cut each claw into three or four pieces. Carefully crack the shells of the knuckles and remove the meat. You should have about 12 ounces of lobster meat total.
  • Slice the bacon into 3/8-inch-thick slices. Arrange the bacon strips in two stacks, then cut the strips crosswise into 3/8-inch even-sided rectangles or lardons. Heat a large sauté pan over medium heat for 1 minute. Swirl in 1 tablespoon olive oil, add the bacon, and cook about 5 minutes, stirring frequently, until the bacon is tender and lightly crisped. Using a slotted spoon, remove the bacon to a plate lined with paper towels. Reserve the fat in the pan.
  • Return the pan to medium-high heat. Add the corn, thyme, 1/4 teaspoon salt, and a pinch of black pepper. Sauté over medium heat 3 to 4 minutes, until the corn is just cooked and tender. Remove to a platter or baking sheet to cool.
  • While the corn is cooling, make the vinaigrette: Place the shallots, lemon juice, and 1/4 teaspoon salt in a small bowl, and let sit 5 minutes. Whisk in the 1/3 cup olive oil and a pinch of cayenne. Taste for balance and seasoning.
  • Cut the avocados in half lengthwise. Remove the pit and peel. Dice the avocados into 1/2-inch cubes and season with 1/4 teaspoon salt. Slice the cherry tomatoes in half, and season with 1/4 teaspoon salt.
  • Place the lobster, corn, avocados, tomatoes, and bacon in a large salad bowl. Toss with 5 tablespoons vinaigrette and taste for seasoning, adding a little more vinaigrette if you like. Place the lettuce leaves on a large chilled platter and spoon a little vinaigrette over them. Toss the parsley into the lobster salad, and arrange it over the lettuce. Scatter the basil over the top.
  • You can boil and prepare the lobsters, make the vinaigrette, and sauté the bacon and corn ahead of time. Prepare the avocado and tomatoes just before serving.

2 1 1/4-pound live lobsters
2 teaspoons Dijon mustard
1 tablespoon Champagne vinegar
1 tablespoon lime juice, plus 1/2 lime for squeezing
1 teaspoon cumin seeds, toasted and ground
1/2 teaspoon coriander seeds, toasted and ground
1/4 teaspoon red pepper flakes
Sea salt
1/3 cup extra virgin olive oil
2 handfuls watercress, stems removed
4 cups curly leaf lettuce, in pieces
1 cup thinly sliced hearts of palm
1 ripe avocado, thinly sliced
1/2 lemon, for squeezing

Steps:

  • Put 3/4-inch water in a stockpot, cover, and bring to a boil. Place one lobster in pot, and cover. When it begins to steam (about 30 seconds), cook for 10 minutes. Remove lobster, and let cool; repeat with second lobster. Reserve cooking juices. Remove tail meat, leg meat and claws from shells, and cut in 1/8-inch slices.
  • Whisk together mustard, vinegar, lime juice, cumin, coriander and red pepper flakes. Season with salt. Gradually whisk in olive oil until thickened, then whisk in one tablespoon lobster juices.
  • On large platter, arrange greens, hearts of palm and avocado. Lay lobster slices in overlapping rows. Sprinkle with lime and lemon juice, then pour vinaigrette on top. Serve.

2 ruby-red or pink grapefruits
1 tbl finely-minced shallots
1 1/4 tsp Dijon mustard
2 tbl white wine vinegar
1 tbl chopped fresh lemon or regular basil
Basil leaves for garnish
Coarse salt to taste
Freshly-ground black pepper to taste
1/4 cup extra-virgin olive oil
2 x avocados peeled, pitted
4 x palm hearts cut 1/2" rounds
1 lrg Boston lettuce head - (8-oz) well washed, dried

Steps:

  • Fill a large bowl with ice and water; set aside. Bring two inches of water to a boil in a large stockpot. Steam lobsters for 10 minutes; transfer to ice bath to cool. Break off claws and tails; use bodies to make a stock, or discard. Split tail lengthwise with a sharp knife; remove meat. Slice tail into bite-size pieces. Remove claws from shells, keeping whole if possible. Chill lobster meat in the refrigerator. Supreme the grapefruit: Cut ends off grapefruit; remove peel, pith, and outer membranes. Lift sections away from the membranes, and reserve. Squeeze 1/2 cup juice from membranes into a bowl for dressing. Place shallots, mustard, vinegar, juice, and lemon basil in a bowl; season with salt and pepper. Whisk to combine. Gradually whisk in olive oil; adjust seasoning. Cut avocados into 1/2-inch-thick wedges; coat with a little grapefruit juice to prevent discoloration. In a large bowl, combine avocado, lobster, grapefruit, and hearts of palm. Line individual glass serving dishes with lettuce leaves. Tear remaining lettuce into bite-size pieces; add to lobster mixture. Drizzle salad with dressing; toss. Fill lettuce leaves with salad; garnish with lemon basil, and serve immediately.

2 quarts lobster stock made by simmering lobster bodies and white Mire Poix in water for 45 minutes then strain.
1 egg yolk*
4 tablespoons canola oil
Salt and pepper
4 small vine ripe tomatoes with stem, peeled and sliced
2 (1 1/4 pound) lobsters, cooked and removed from the shell intact
1 avocado
1 tablespoon extra virgin olive oil
1 lemon, zested and juiced
4 basil leaves, sliced
1 shallot, minced
Sea salt and black pepper

Steps:

  • To make aioli, reduce stock down to 2 tablespoons and cool. In a mixing bowl combine yolk and stock with a whip, season with salt and pepper. While mixing, slowly add the oil in a steady stream until fully incorporated being careful not to add the oil to fast. Taste and adjust seasoning, reserve.
  • For the salad cut tomatoes in half widthwise, cut bottom flat so that the tomato will stand upright. Slice lobster into bite size pieces and lay out on a sheet pan. Remove avocado skin and stone, slice into 1/8-inch slices. Lay avocado out on a sheet pan. Drizzle with extra virgin olive oil, lemon juice and sprinkle with teaspoon zest, basil, shallot, salt and pepper.
  • Place a spoonful of aioli in the middle of each plate. Place tomato button in center of aioli, top with 3 to 4 slices of avocado and then 1/4 of the lobster. Place top of tomato on top so that it is reassembled. Garnish with baby greens and serve.

This is a great summer salad that combines some of my very favorite things: lobster, fresh green beans, black olives, and avocados! This makes a good brunch salad.

2 lobster tails (cooked)
2 avocados
2 tablespoons lemon juice
1 cup fresh green beans (snapped into 1-inch pieces)
2 tablespoons black olives (sliced)
4 tablespoons shallots (minced fine)
2 tablespoons cilantro (chopped)
2 tablespoons fresh chives (chopped)
1 garlic clove (minced fine)
1 teaspoon Dijon mustard
1 pinch sugar
1 tablespoon balsamic vinegar
5 tablespoons olive oil
salt
black pepper

Steps:

  • Chop cooked lobster tails into small chunks.
  • Chop avocados into small chunks.
  • Combine lobster and avocado together with lemon juice over all.
  • Boil the green beans in salted water for about 3 minutes (You want them "tender-crisp").
  • Drain green beans and run under cold water to cool.
  • Add all the rest of the salad ingredients to the lobster and avocado; toss together.
  • Place all the dressing ingredients EXCEPT the olive oil together in a small bowl.
  • SLOWLY drizzle in the olive oil whisking it into the dressing until emulsified.
  • Pour dressing over the salad and ENJOY!

2 Tbls fresh lime juice
4 tsp fresh ginger juice (See Notes above)
2 tsp Dijon mustard
Pinch of cayenne
1/2 cup canola oil
Salad:
2 1 ½ -2 inch red beets, trimmed
2 1/3 Pounds Frozen Uncooked Lobster Tails, thawed (about 3 large)
½ Pound Baby Red Potatoes, halved
1 Cup Finely chopped celery
1 Cup Thinly sliced romaine lettuce
2 Large ripe avocados, peeled , halved, seeded, chopped
2 Tbsp Fresh, chopped Basil
1 Tbsp Fresh, chopped Tarragon
2 Large boiled eggs, peeled, quartered
Fresh basil and tarragon sprigs (for garnish)

Steps:

  • For Dressing: Whisk lime juice, ginger juice, dijon and cayenne together. Gradually whisk in oil. For Salad: Preheat oven to 400F. Wrap beets in foil; roast until tender when pierced with knife, about 45 minutes. Cool; Peel beets, then slice paper-thin with V-slicer or mandolin, or slice very thinly using sharp knife. Transfer to another small bowl. Cook lobster in large pot of boiling salted water until just opaque in center, about 13 minutes. Drain. Using kitchen shears, cut down center of bottom of lobster shell and pry open; remove meat. Cut meat into ¾-inch cubes. Transfer to medium bowl. (Can be prepared 6 hours ahead. Cover and refrigerate). Cook potatoes in small pot of boiling salted water until tender when pierced with knife, about 12 minutes. Drain; cool. Toss lobster, potatoes, celery, lettuce, and ½ cup dressing in large bowl. Fold in avocado, chopped basil and chopped tarragon. Season salad to taste with salt and pepper. Divide salad among 8 plates; garnish with beets, caviar, if desired, egg wedges, and fresh herb sprigs.

I first sampled a version of this light and lively salad as a meal at chef Yves Camdeborde's Le Comptoir in Paris's 6th arrondissement. Yves and I participated in the New York marathon in 2006, and I am sure that the strength gained from this protein-rich salad helped me make it to the finish line! This dish has it all: color (the red bits are lobster roe), crunch, and a light touch imparted by a dressing of yogurt and mustard.

3 tablespoons coarse sea salt
10 ounces slim haricots verts (green beans), trimmed at both ends and cut into 1/2-inch pieces (2 cups)
1 cup Greek-style yogurt
1 tablespoon imported French mustard
1/4 teaspoon fine sea salt
1/4 cup minced fresh chives
1 Granny Smith apple, cored, and cut into 1/4-inch cubes (do not peel)
1 large ripe avocado, halved, pitted, peeled, and cut into 1/4-inch cubes
1 pound (2 cups) cooked lobster meat, cut into bite-sized pieces

Steps:

  • Prepare a large bowl of ice water.
  • Fill the pasta pot with 3 quarts of water and bring it to a rolling boil over high heat. Add the coarse salt and the beans, and blanch until crisp-tender, 3 to 4 minutes. (Cooking time will vary according to the size and tenderness of the beans.) Immediately remove the colander from the water, letting the water drain from the beans. Plunge the beans into the ice water so they cool down as quickly as possible. (The beans will cool in 1 to 2 minutes. If you leave them longer, they will become soggy and begin to lose flavor.) Drain the beans and wrap them in a thick kitchen towel to dry. (Store the cooked beans in the refrigerator for up to 4 hours.)
  • In a large, shallow bowl, combine the yogurt, mustard, and fine salt and whisk to blend. Taste for seasoning. Add the green beans, chives, apple, avocado, and lobster. Toss to coat. Arrange on the plates and serve.
  • WINE SUGGESTION: A fine Chardonnay is in order here, such as a dependable Burgundy, like the well-priced and well-made Viré Clessé from the Cave de Viré, particularly their Cuvée Les Acacias, with its hints of fresh apples and honey.
