1 box Betty Crocker™ Super Moist™ yellow cake mix
1 cup water
1/2 cup vegetable oil
3 eggs
1 can (15 oz) pumpkin (not pumpkin pie mix)
1 cup packed brown sugar
1 cup half-and-half
3 eggs
2 teaspoons pumpkin pie spice
1/2 teaspoon salt
1 package (8 oz) cream cheese, softened
3/4 cup powdered sugar
1 teaspoon vanilla
1/8 teaspoons salt
2 cups heavy whipping cream
Pumpkin pie spice

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray.
  • In large bowl, beat Cake Layer ingredients with electric mixer on low speed until moistened. Scrape bowl; beat 2 minutes on medium speed. Spread in pan.
  • In another large bowl, mix Pumpkin Layer ingredients with whisk until smooth. Carefully spoon pumpkin mixture over cake batter in pan.
  • Bake 48 to 53 minutes or until cake is set when touched lightly in center. Cool 30 minutes. Refrigerate at least 4 hours to chill.
  • In large bowl, beat cream cheese, powdered sugar, vanilla and 1/8 teaspoon salt until smooth. Add whipping cream; beat until smooth, and stiff peaks form. Spread over chilled cake. Sprinkle lightly with pumpkin pie spice. Store covered in refrigerator.

1 (32 ounce) can pumpkin (not pumpkin pie mix)
1 cup evaporated milk
3 large eggs
1 cup sugar
4 teaspoons ground cloves
4 teaspoons ginger
4 teaspoons cinnamon
1 (18 1/4 ounce) box yellow cake mix
1/2 cup butter (melted)
1 cup chopped walnuts

Steps:

  • Mix together pumpkin, sugar and spices; add milk and eggs.
  • Spread pumpkin mixture into bottom of ungreased glass 9 x 13-inch dish.
  • Distribute dry cake mix across top of pumpkin mixture. Drizzle butter over the top of cake mix. Sprinkle chopped walnuts generously across the top.
  • Bake at 350° for one hour. Let the "surprise" sit for 20 minutes before slicing into it.

8 tablespoons (1 stick) unsalted butter, room temperature, plus more for pan
1 2/3 cups all-purpose flour, plus more for pan
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cups sugar
2 large eggs
1 cup homemade or canned pumpkin puree
1/2 cup warm (110 degrees) milk

Steps:

  • Heat the oven to 350 degrees. Butter a 9-by-2-inch round cake pan. Line pan with parchment, and butter the parchment. Coat pan with flour, and tap out any excess.
  • In a large bowl, sift together flour, cinnamon, nutmeg, allspice, salt, baking powder, and baking soda; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat sugar and butter together until light and fluffy, about 2 minutes. Add eggs, and beat until combined. Add pumpkin puree and milk; beat until combined. Add reserved flour mixture; beat on low speed until just combined.
  • Pour batter into prepared pan, and bake until a cake tester inserted into the middle comes out clean, about 55 minutes. Transfer the cake to a wire rack to cool. Let cake rest 20 minutes.
  • Unmold cake. Using an offset spatula, spread icing over top of cake, and decorate with caramelized walnut halves.

Cissy's Spiced Pumpkin Cake with Creamed Cheese Frosting image

This fabulous dessert is based on my Aunt Cissy's famous pumpkin sheet cake. I stacked it into a layer cake to make it a bit more "glamorous." This recipe yields about as moist a cake as you can get, which makes it a bit tricky to layer and frost. But when I asked all of my taste testers if I should adapt it with less oil, the answer was a resounding, "Don't even think about it." The end result may not look like it came from a high-end bakery, but I think that just adds to the Southern charm. And when there's not a single slice left on the plate, you'll know it didn't even matter.

Shortening, for greasing pan
2 cups flour, plus more for pan
1 tablespoon baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1/4 teaspoon salt
2 cups sugar
1 1/4 cups canola oil
1 (15-ounce) can pure pumpkin puree
1 teaspoon pure vanilla extract
4 eggs
2 (8-ounce) packages cream cheese, softened
1 stick unsalted butter, softened
2 teaspoons pure vanilla extract
8 cups confectioners' sugar, sifted

Steps:

  • For the cake: Preheat oven to 350 degrees. Generously coat 3 (9-inch) round cake pans with shortening (tip: this works better than both cooking spray and butter) and lightly flour the pan, discarding the excess.
  • Sift together flour, baking powder, baking soda, cinnamon, and salt.
  • In the bowl of a stand mixer fitted with the beater blade, combine the sugar and canola oil on medium-low speed until well combined, 1 to 2 minutes. Add the pumpkin and vanilla until fully incorporated, about another minute. Beat in the eggs one at a time. Gradually add the flour mixture until just incorporated, being careful not to over mix.
  • Divide cake batter evenly into the 3 pans (I weigh the batter out for the best results). Rap each pan gently on the counter before putting in the oven so that the batter is evenly distributed.
  • Bake the cakes for 20 to 23 minutes, moving the pans around halfway through cooking time, until they are set and a toothpick comes out clean from the centers. Allow the cakes to cool in pans for 30 minutes. Run a knife along the sides of the pan and remove cake from pans. To do this, place a lightly-floured free hand or cardboard cake round directly onto the top of the cake in order to support the layer; then gently flip the cake pan over with your hand or cake round still supporting it, while gently tapping with the other hand until the cake slips out. Cool the cakes completely on wire racks.
  • For the frosting: With a hand mixer set at medium speed, beat the cream cheese, butter, and vanilla until smooth. Add the confectioners' sugar and continue to beat until light and fluffy, about 5 more minutes.
  • Assemble the cake: Place one cake layer on a cake plate or serving dish and spread with a layer of cream cheese frosting. Repeat with the second layer. Frost the top and sides of the cake with a crumb coat, then repeat with a thicker layer. The frosted cake will keep for up to three days in an airtight container.

I have many recipes for pumpkin cakes, but I wanted to make something just a tad different. So I added the dark chocolate and the cranberries. This cake has a subtle spiciness to it. The chocolate and cranberries together are a nice surprise to bite into. And the frosting, with the hint of maple and pumpkin, with the creaminess...

1 lg can pumpkin, about 26 oz, like pumpjin puree
3/4 c oil, i used a oil blend of vegetable and canola
2/3 c packed light brown sugar
1 c sugar
3 lg eggs
2 tsp cinnamon
1/4 tsp crushed cloves
1/4 tsp ground ginger
1 tsp baking soda
1 tsp baking powder
1-3/4 c sifted flour
1-1/2 c hershey's dark chocolate chips
1 c fozen whole cranberries
1 lg can, whipped cream cheese frosting, or homemade
1/4 c pureed canned pumpkin
1 tsp maple extract
1/3 c or to taste, autumn leaf candy sprinkles

Steps:

  • 1. Set oven to 350. Lightly spray a 9" x 13" baking pan w/ cooking spray. In lg mixing bowl, using mixer, blend first 10 ingredients until smooth.
  • 2. With lg spoon, blend in flour until fully blended. Stir in dark chocolate chips and cranberries. Pour into pan, even out with the back of a spoon. Bake 30-40 mins depending on your oven. It took my oven 43 mins. So test around 30 mins with a toothpick inserted in center. If it comes out clean, it's done. Don't over bake. It'll be dry if you do.
  • 3. Let cake completely cool. In medium sized bowl, blend frosting, pumpkin and maple flavoring until smooth. Frost cake. Sprinkle with the sprinkles, cut into whatever size bars you want. and enjoy with a hot cup of coffee, maybe pumpkin spice? YUM!
