1/2 cup onion, chopped
1/2 cup celery, chopped
1 clove garlic, minced
3 tablespoons olive oil
1 (1 lb) can tomatoes
1 (8 ounce) can tomato sauce
1 1/2 teaspoons salt
1 teaspoon sugar
1/2-1 teaspoon chili powder
1 tablespoon Worcestershire sauce
1 teaspoon cornstarch
12 ounces shrimp, peeled
1 dash Tabasco sauce

Steps:

  • Cook onion, celery and garlic in hot oil until tender but not brown.
  • Add tomatoes, tomato sauce and seasonings.
  • Simmer uncovered about 45 minutes.
  • Mix cornstarch and 2 teaspoon water, stir into sauce.
  • Add shrimp, simmer until done (about 5 minutes).
  • Serve with yellow rice.

2 Lbs fresh shrimp
water
1/2 cup vegetable oil
2 medium onions, chopped
2 large green peppers, chopped
4 celery ribs, chopped
1 28 oz can stewed tomatoes
2 tsps salt
1 tsp ground red pepper
1 tsp black pepper
1 tsp white pepper
4 bay leaves
1 1/2 tsp sugar
1/2 cup chpped green onions
1/2 cup chopped parsley

Steps:

  • Peel and devein shrimp, reserving the peel. Place peels in a small saucepan, add water to cover. Bring to a boil, let cook for 15 minutes. Strain and remove broth. Discard peels. Place oil in large heavy pot and place over medium heat. Add onions, green peppers and celery. Saute, stirring until vegetables are soft, about 5 minutes. Stir in tomates, salt, peppers, bay leaves, thyme, sugar and shrimp stock. Heat to boiling, stirring occasionally. Stir in shrimp, cook until they turn pink, 5 to 7 minutes. (Do NOT overcook) Discard bay leaves. Stir in the green onions and parsley. Serve over steaming, fluffy rice.

A New Orleans original! True comfort food for any Cajun. I dug this recipe up for *Denise*. I'm not sure where it came from but I think it is my sister's.

3 lbs shrimp, peeled
3 small bell peppers, diced
1 (6 ounce) can tomato paste
1 bunch green onion, chopped
2 -3 garlic cloves, chopped fine
3/4 cup vegetable oil (or canola)
4 tablespoons flour
1/2 teaspoon hot pepper sauce (Tabasco)
4 -5 cups boiling water
salt and pepper
cajun seasoning (optional)

Steps:

  • Over medium heat make a roux with the vegetable oil and flour.
  • Stir continuously until the roux is the color of a paper bag.
  • Add bell pepper, garlic, green onions and Tabasco.
  • Keep cooking until the veggies get soft.
  • Add the tomato paste and the water, making sure to mix well.
  • Add shrimp; cover and simmer for about 15 minutes over low heat, making sure to stir every once and a while.
  • Uncover and cook until desired consistency.
  • Add salt and pepper to taste and Cajun seasoning if desired.
  • Serve over hot white rice with french bread on the side to soak up the juices.
