This authentic pho isn't quick, but it is delicious. The key is in the broth, which gets simmered for at least 6 hours.

4 pounds beef soup bones
1 onion, unpeeled and cut in half
5 slices fresh ginger
1 tablespoon salt
2 pods star anise
2 ½ tablespoons fish sauce
4 quarts water
1 (8 ounce) package dried rice noodles
1 ½ pounds beef top sirloin, thinly sliced
½ cup chopped cilantro
1 tablespoon chopped green onion
1 ½ cups bean sprouts
1 bunch Thai basil
1 lime, cut into 4 wedges
¼ cup hoisin sauce
¼ cup chile-garlic sauce (such as Sriracha®)

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place beef bones on a baking sheet and roast in the preheated oven until browned, about 1 hour.
  • Place onion on a baking sheet and roast in the preheated oven until blackened and soft, about 45 minutes.
  • Place bones, onion, ginger, salt, star anise, and fish sauce in a large stockpot and cover with 4 quarts of water. Bring to a boil and reduce heat to low. Simmer on low for 6 to 10 hours. Strain the broth into a saucepan and set aside.
  • Place rice noodles in large bowl filled with room temperature water and allow to soak for 1 hour. Bring a large pot of water to a boil and after the noodles have soaked, place them in the boiling water for 1 minute. Bring stock to a simmer.
  • Divide noodles among 4 serving bowls; top with sirloin, cilantro, and green onion. Pour hot broth over the top. Stir and let sit until the beef is partially cooked and no longer pink, 1 to 2 minutes. Serve with bean sprouts, Thai basil, lime wedges, hoisin sauce, and chile-garlic sauce on the side.

This oxtail pho recipe is authentic. This is the way my husband's family has always made it and it is delicious. My kids have grown up on this comforting noodle soup, which is especially good on a cold rainy day. Garnish with hoisin sauce and sriracha as desired.

water to cover
1 ½ pounds beef oxtail, or to taste
2 Spanish onions, peeled, divided
1 tablespoon fish sauce, or to taste
1 tablespoon whole star anise pods
1 cinnamon stick
salt to taste
3 tablespoons beef pho flavor paste
2 bunches scallions, chopped
1 bunch fresh cilantro, chopped
1 (16 ounce) package dried rice noodles, or to taste
1 (12 ounce) package beef pho meatballs, halved, or to taste
½ pound sirloin steak, thinly sliced, or to taste
1 lime, cut into 8 wedges
4 teaspoons white sugar, or to taste
1 (8 ounce) package bean sprouts
1 bunch Thai basil leaves, torn into bite-size pieces
1 (2.8 ounce) can crispy fried shallots, or to taste

Steps:

  • Bring water and oxtail to a boil in a pot. Skim the foam and oil off the surface. Add 1 onion, fish sauce, star anise, cinnamon, and salt. Stir in pho flavor paste; cover loosely with a lid. Reduce heat and simmer broth for at least 6 hours.
  • Cut the remaining onion in half and slice very thinly. Place in a bowl with scallions and cilantro.
  • Place noodles in a large bowl and rinse. Cover with warm water and let soak for 1 hour.
  • Drop meatballs into the soup 20 minutes before broth is done.
  • Bring a small saucepan of water to a boil. Drain noodles and dip into the boiling water for 30 seconds. Transfer noodles into 8 large bowls.
  • Top each bowl with sliced sirloin. Ladle in broth, meatballs, and oxtail. Taste and season as needed. Squeeze 1 or 2 lime wedges into each bowl and mix in 1/2 teaspoon sugar. Top with the cilantro-onion mixture, bean sprouts, basil, and shallots.

Pho (pronounced "fuh") is a richly delicious herby beef broth served with thinly sliced beef, fresh herbs and vegetables. It takes a lot of time to make a broth this good.. but it's worth every minute. Can be made in a crockpot. Spice levels can be adjusted individually with condiments and fresh jalepeno.

4 lbs soup bones (shank, knee bones or oxtail work best)
1 large onion, peeled and cut in half
2 garlic cloves
5 slices fresh ginger
1 tablespoon salt
3 pods star anise
1 cinnamon stick
4 whole cloves
1 teaspoon coriander seed
1 teaspoon fennel seed
3 tablespoons fish sauce
4 quarts water
8 ounces skinny rice noodles
1 1/2 lbs beef sirloin, sliced extremely thin
4 tablespoons chopped green onions
1/2 cup chopped cilantro
1 1/2 cups fresh bean sprouts
1 bunch Thai basil
1 lime, cut into 4 wedges
1 jalapeno, sliced thinlly
hoisin sauce, siracha and or fish sauce, for flavoring at the table if desired

Steps:

  • Preheat oven to 425 degrees F.

  • Place bones, onion, ginger, salt, fish sauce and cheesecloth bag in a large stockpot or crockpot and cover with 4 quarts of water. Bring to a boil and reduce heat to low. Simmer for 12-18 hours.
  • Strain broth into another kettle. Skim fat off top if needed. Heat to low boil before serving.

  • Prepare rice noodles by covering them in room temperature water and allow to soak for 1 hour. Bring a large pot of water to a boil and after the noodles have soaked, place them in the boiling water for 1 minute.
  • Divide noodles among 4 large serving bowls; top with raw sirloin, cilantro, and green onion. Pour hot broth over the top. Stir and let sit until the beef is partially cooked and no longer pink, 1 to 2 minutes. Serve with bean sprouts, Thai basil, lime wedges, jalepeno slices, hoisin sauce, and chile-garlic sauce on the side for people to add as desired.
