PEANUT BUTTER BROWNIE COOKIES

A delicious rich tasting soft cookie that is quick and easy to make. If you love brownies or peanut butter give these a try. The original recipe (Pillsbury Bake Off - 41 Contest submitted by Deb McGowan) calls for 1-cup peanut butter and 1 cup powder sugar. I had lots left over so I have decreased it to 3/4 cup each on this recipe. The 1st batch I didn't press the peanut butter ball down enough but still tasted great. Make sure you let them cool as the peanut butter holds the heat and you may burn your mouth.

1 (19 1/2 ounce) box fudge brownie mix
1/4 cup butter or 1/4 cup margarine, melted
4 ounces softened cream cheese
1 egg
3/4 cup powdered sugar
3/4 cup creamy peanut butter
8 ounces cans ready to spread chocolate fudge frosting (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Beat Brownie mix, melted butter, cream cheese and egg with spoon until well blended (dough will be sticky).
  • Drop dough by tablespoonfuls onto ungreased cookie sheet to make 24 cookies.
  • Place approximately 2 inches apart.
  • In another bowl mix peanut butter and powdered sugar with spoon until mixture forms a ball.
  • With hands, roll teaspoonfuls peanut butter mixture into 24 balls.
  • Lightly press 1 ball into center of each ball of dough.
  • Bake at 350 degrees for 10 to 14 minutes or until edges are set.
  • Cool 1 minute; remove from cookie sheets.
  • Cool at least 30 minutes.
  • Spread thin layer of frosting over peanut butter portion of each cooled cookie (frosting optional).

This is an adaptation of a "Brownie Goody Bar" recipe I found on the back of a Better Crocker brownie box a few years ago. We also call them Scotcharoo Brownies, because they have a butterscotch, peanut butter, rice crispy layer on top of a fuggy brownie. This is my family's favorite sweet treat! They are sooo good. I usually wrap them individually in suran wrap and store in the refrigerator so that they do not all get eaten at once. This slows the guys down a little.

1 (22 1/2 ounce) box brownie mix, prepared (I like Betty Crocker Original Supreme)
1 (12 ounce) bag butterscotch chips
1 cup creamy peanut butter
3 1/2 cups crisp rice cereal (use 4 cups for a thicker rice crispy layer)

Steps:

  • Heat oven to 350. Make brownies as directed for a 9 x 13-inch pan. Cool completely.
  • Melt butterscotch chips and peanut butter in a 1-quart saucepan or in a glass bowl in microwave (1 1/2 minutes on high) stirring frequently.
  • Stir cereal into peanut putter butterscotch mixture.
  • Pour cereal mixture over brownies. Spread evenly.
  • Refrigerate about 30 minutes or until set before cutting.

Fast, easy, and so yummy! I had a brownie mix to use up, and my 4 year old was sick and needed a pick me up. Thank you Duncan Hines! These would be great for kids to make. Just 5 ingredients, and you've got great chocolate-chocolate chip cookies. And don't forget the ice cold milk to have with these!

1 large egg
2 tablespoons water
1/3 cup vegetable oil
1 cup chocolate chips (or other kind of chip if you prefer)

Steps:

  • Heat oven to 375°, line cookie sheet with parchment paper, or grease cookie sheet.
  • Mix the brownie mix, egg, water and oil in a large bowl.
  • Stir until blended, fold in chips.
  • Drop by teaspoons, 2 inches apart onto prepared cookie sheet.
  • Bake 7-8 minutes until they are set in the center--do not overbake!

8 ounces semisweet chocolate
1 cup flour
1/4 cup Dutch-processed cocoa powder
1 teaspoon baking powder
1/2 teaspoon salt
5 tablespoons butter, softened
1 cup packed brown sugar
1/2 cup white sugar
2 eggs, room temperature
1 teaspoon instant espresso powder
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Line 4 large baking sheets with parchment paper; set aside.
  • Melt 8 ounces chocolate in a double-boiler or in the microwave until smooth.
  • In a separate bowl, sift the flour, cocoa, baking powder and salt.
  • In a large bowl, beat butter, brown sugar and white sugar until light and fluffy. Add eggs, one at a time, then stir in coffee granules and vanilla extract until well-blended. Stir in melted chocolate until completely mixed inches Add flour mixture and stir until just combined. Fold in 1 cup semisweet chocolate chips.
  • Drop by tablespoonfuls 2 inches apart onto prepared baking sheets.
  • Bake at 350 degrees Fahrenheit for 10-12 minutes, rotating pans after 5-6 minutes. Bake until edges are set but edges are still very soft.
  • Remove pans from oven to wire racks to cool for 2 minutes. Carefully slide parchment paper onto wire racks to cool.
