5 whole anaheim chilies, seeded and peeled
5 whole poblano peppers, seeded and peeled
2 tablespoons olive oil
1 cup yellow onion, diced
1 1/2 teaspoons garlic, minced
1 1/2 jalapeno peppers, minced
3/4 teaspoon oregano
3/4 teaspoon cumin
4 cups chicken stock
1 medium idaho potato, peeled, cut in 1/2-inch dice
2 cups chicken breasts, uncooked, cut in 1/2-inch dice
1 cup cilantro, loosely packed, large stems removed
salt, to taste

Steps:

  • Cut Anaheim, and poblano chiles in half, remove the seeds , char and peel.
  • In a large skillet, heat the olive oil and saute the onion until translucent. Add the garlic, jalapeno chiles, cumin and oregano, and saute for several minutes. Add the chicken stock and bring to a simmer.
  • Then add the potatoes and cook until just tender. With a slotted spoon, remove 1 cup of potatoes and reserve. Add the diced chicken and poach gently in the onion/chili/potato mixture until chicken is cooked through.
  • Remove from the heat immediatly, transfer to a bowl, reserving 1/2 cup of the liquid in a small bowl. Refrigerate the remainder to keep the chicken from overcooking.
  • In a blender, puree the reserved potatoes, half the Anaheim and half the poblano chilies, and the cilantro with the reserved half cup of liquid. When the chicken mixture is no longer warm, add the puree.
  • Dice the remaining half of the Anaheim and poblano chilies in 1/2" cubes and add to the mixture. Season with salt. Reheat just before serving to retain the fresh green color and flavor of the soup.

This chili comes from a lot of practice over the years. I couldn't find one I really liked so I came up with one I did. It takes a bit of dicing but it is worth it. Hope you enjoy it.

2 lbs ground beef
1 lb ground mild sausage
1 lb ground venison or 1 lb ground chicken
1 medium sweet onion, small diced
1 tablespoon minced garlic
1 green pepper, small diced
2 jalapenos, small diced
1 ancho chili, small diced
1 medium carrot, minced
1 granny smith apple, small dice
1/2 lb bacon, diced
3 tablespoons Worcestershire sauce
1/2 cup balsamic vinegar
2 teaspoons Hungarian paprika
1/2 cup Splenda brown sugar blend (regular works too)
2 (15 ounce) cans of bushes chili beans
1 (7 ounce) can tomato paste
1 (32 ounce) can crushed tomatoes
1 (16 ounce) can tomato sauce

Steps:

  • Over medium heat brown the bacon & the onion together. When the onions are carmelized add the balsamic vinegar & worchestershire sauce. Mix well, as you are mixing add in the brown sugar, dry mustard, & paprika. Then the jalapenos, carrot, ancho pepper, the granny smith apple, & the green pepper. Stir often don't let it burn.When everything is cooked pull from heat & set aside.
  • In large pot (8 quarts or larger) brown the grnd beef, sausage & venison. Use a spatula if you need to, but break the meat into small chunks. When completely browned, drain the grease in a colander & return the meat to the pot. Then blend in the mixture you created earlier. When blended add in the chili beans, tomato puree, sauce & paste. Blend well and return to medium heat for about 35 minutes to an hour. Don't let it burn on the bottom of the pot so stir often.
  • When cooked to your satisfaction this can be used over pasta, as taco filling, or placed in large flour tortillas with shredded cheese to make burritos or by it's self. If it isn't spicy enough use your favorite hot sauce to crank up the heat. I found one that I like called Tapatio Salsa Picante.

We have lots of visitors on our 10-acre farm, so I like to make down-home dishes. Whenever I serve this chili, I'm asked for the recipe, which I'm happy to share.

1/2 cup chopped onion
1 tablespoon canola oil
2 cans (14-1/2 ounces each) chicken broth
2 cans (16 ounces each) great northern beans, rinsed and drained
1 can (4 ounces) chopped green chilies
2 cups cubed cooked chicken
2 garlic cloves, minced
2 tablespoons minced fresh cilantro
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon ground cumin
1/8 to 1/4 teaspoon cayenne pepper

Steps:

  • In a large saucepan over medium heat, saute onion in oil until tender. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until heated through.
