1/4 small red onion, minced
2 garlic cloves, minced
1 large tomatoes, diced
1/4 cup fresh parsley, finely chopped
2 tablespoons olive oil
2 tablespoons red wine vinegar
1 teaspoon lemon juice
1/2 teaspoon salt
1/3 teaspoon pepper

Steps:

  • In large bowl, toss all ingredients together.
  • Chill at least 1 hour before serving.
  • Makes 2 large or 4 small servings.

2 (15 ounce) chickpeas, drained and rinsed under cold water
1/4 cup roasted red pepper, finely chopped (if jarred rinse well under water and pat dry with papertowel)
1/2 cup red onion, finely chopped
1/4 cup fresh parsley, finely chopped
10 olives, chopped (such as kalamata or green)
1 garlic clove, minced
1/2 teaspoon dried oregano
3/4 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1 lemon
1/2 teaspoon lemon zest
1/2 cup olive oil
1 cup feta

Steps:

  • In a large bowl, combine chickpeas, roasted red peppers, red onion, parsley, olives, garlic, oregano, salt, crushed red pepper, lemon juice & zest, and olive oil.
  • Then add feta and stir gently to combine.
  • Allow chickpea to marinate for at least 1 hour or refrigerate up to overnight, stirring occasionally.
  • Serve with bed of lettuce and tomatoes, spoon mixture over leaves.

Our fourth and final recipe is Greek-Style Chickpea Salad from Cook's Illustrated Best Light Recipe. A chickpea-based concoction, it relies on cucumber for freshness, onion for zest, and a smattering of feta cheese for tang (or, as some are wont to call it, "feta-ey-ness"). Everything balances perfectly with the dressing. Too often, grain and bean salads are over-dressed, leaving the contents to stew in a pool of flavored grease. It's not good for healthy eating or the texture of the food. This dish bucks that trend by using just the right ratio of lemon juice, Dijon mustard, olives, and olive oil. It clings lightly to the chickpeas instead of drenching them. And whether you're concerned about weight or leaky Tupperware at your Labor Day picnic, this is undoubtedly a good thing. Oh, and it's delicious, too, as Cook's Illustrated recipes tend to be. 1/2 small red onion, minced
3/4 cup cucumber, peeled, seeded, and chopped (about 1/2 large cucumber)
1/4 cup fresh mint leaves, minced
1 ounce reduced-fat feta cheese, crumbled (about 1/4 cup)
1 tablespoon fresh parsley, minced
3 tablespoons fresh lemon juice (about 1 large lemon)
2 tablespoons kalamata olives, pitted and minced
1 tablespoon Dijon mustard
1 tablespoon olive oil
1 garlic clove, minced
salt & freshly ground black pepper

Steps:

  • Procedure.
  • In a large bowl, toss chickpeas, onion, cucumber, mint, feta and parsley. In a small bowl, whisk lemon juice, olives, mustard, oil, and garlic together. Pour dressing on top of the chickpea mixture and stir gently until combined. Season with salt and pepper to taste, and feel free to add slightly more cheese, lemon juice, oil, salt, or pepper right before serving.

4 stalks celery, diced
1 red bell pepper, diced
1/2 sweet white onions or 1/2 red onion, finely chopped
1 large carrot, grated
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons chopped of fresh mint
1/4 cup extra virgin olive oil
3 tablespoons sherry wine vinegar or 3 tablespoons red wine vinegar
salt & freshly ground black pepper

Steps:

  • In a large bowl combine chickpeas, celery, bell pepper, onion, carrot and herbs.
  • In a small bowl whisk together the oil and vinegar, adding salt and pepper to taste.
  • Por over the salad mixture and let stand at least 20 minutes before serving.

4 tomatoes, cut into large dice
1 cup chopped cucumber
6 green onions, sliced
1 cup cubed swiss cheese (for a change, replace Swiss cheese with feta, mozzarella, Cheddar or Monterey Jack)
1/3 cup olive oil
3 tablespoons white wine vinegar
1 garlic clove, crushed
1 teaspoon dried tarragon leaves
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon fresh ground pepper
1 pinch cayenne pepper

Steps:

  • Salad: In large bowl, combine chickpeas, parsley, tomatoes, cucumber, onions and cheese.
  • Dressing: Whisk together oil, vinegar, garlic and seasonings.
  • Toss dressing with salad ingredients.

1 1/3 cups dried garbanzo beans, soaked overnight
4 scallions, finely chopped
1 large ripe tomatoes, peeled,seeded and finely chopped
1/2 cup cilantro or 1/2 cup parsley, minced
8 kalamata olives, pitted and finely chopped
1 clove garlic, minced
2 tablespoons olive oil
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon ground cumin
1/4 teaspoon black pepper
1 pinch cayenne

Steps:

  • Put chickpeas in a large saucepan.
  • Add water to cover and stir in 1 tsp of salt.
  • Bring to a boil over high heat, then lower heat to medium and simmer until tender, about 1 hour.
  • Drain the chickpeas and discard any loose skins.
  • In a serving bowl, combine all the remaining ingredients.
  • Add the chickpeas and toss well.
  • Cover and refrigerate for atleast 4 hours before serving.
