FRUIT PIZZA WITH WHITE CHOCOLATE
This recipe is very EASY and DELICIOUS and loved by all in my town! It is a sugar cookie crust with a milky layer of white chocolate and cream cheese, topped with your favorite fruit choices and a glaze! Substitute any fruit you like for the strawberries, and any fruit juice or juice from any canned fruits you use for the pineapple juice.

- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a cookie sheet.
- For the crust: Cream together butter, shortening and 1 1/2 cups sugar with electric mixer. Beat in eggs. In a separate bowl, stir together flour, cream of tartar, baking soda and salt. Beat flour mixture into butter mixture to form a stiff dough. Press dough into a rectangle as large as the baking sheet.
- Bake for 10 minutes in the preheated oven, or until light brown.
- For the filling: In medium microwave safe bowl, microwave vanilla chips and cream on high 60 to 90 seconds, or until chips are melted and smooth after stirring. Beat in cream cheese with electric mixer until creamy. Spread on cooled cookie crust.
- For the topping: Arrange sliced fruit decoratively over filling. In a medium saucepan over medium heat, combine 1/2 cup sugar, cornstarch, pineapple and lemon juices. Stir and cook until sugar dissolves and mixture thickens. Pour over fruit. Refrigerate until serving.

- Pat cookie dough into an ungreased 14-in. pizza pan. Bake at 350° for 15-18 minutes or until deep golden brown; cool. , In a bowl, beat the cream cheese and confectioners' sugar until smooth. Fold in whipped topping. Spread over crust. Arrange fruit on top. , In a saucepan, bring the sugar, orange juice, water, lemon juice, cornstarch and salt to a boil, stirring constantly for 2 minutes or until thickened. Cool; brush over fruit. Chill. Store in refrigerator.

WHITE CHOCOLATE FRUIT PIZZA
This is a recipe I came up with from several different recipes. The white chocolate in the filling makes it extra special, and the fruit can be used to spell words or arranged beautifully for fancier occasions! This is always a hit at parties...

- 1. For Crust: mix together softened butter, egg and sugar cookie mix until dough forms. Press evenly in the bottom of a 13x9 greased pan. Bake crust at 350 for 14-17 mins, or until lightly browned around edges. Do not overcook. Cool.
- 2. In microwave-safe bowl, melt white chocolate chips 20 seconds at a time, stirring after every 20 second intervals. Melt until smooth. Add softened cream cheese to melted chips and mix with mixer. Spread on cooled crust.
- 3. Place assorted fresh fruit in any pattern or just randomly. Have fun with this(kids like to help with this step!) After all fruit is on, brush apricot jelly over fruit for glaze. There will be no left overs!

- Preheat oven to 350°F.
- Roll out cookie dough large enough to cover a round pizza pan. Bake 8 to 15 minutes or until firm. Cool completely.
- Mix together cream cheese and your choice of extract. Spread cream cheese mixture over cooled cookie dough crust.
- Arrange fruit in circles around center.
- Warm marmalade slightly in the microwave and brush over fruit.
- Serve immediately.

"WE NEED TO TALK" CHOCOLATE PIZZA
Steps:
- Preheat oven to 400 degrees F.
- After baking the dough, milk chocolate and white chocolate chunks should be sprinkled over the surface. Top with mini marshmallows, banana slices and peanut butter drizzle can also be added.
- Place pizza into oven for 3 to 5 minutes to melt the chocolate and marshmallows.
- Preheat oven at 450 degrees F.
- Measure out 1 3/4 cups warm water (it should be pleasantly warm on your wrist). Sprinkle the yeast on top of the water and allow it to activate, about 10 minutes.
- Put the salt and 2 cups of the flour into a food processor. Pulse 5 times to blend. Pour in the yeast and water and pulse 5 times. Add the olive oil. Add the remaining flour 1 cup at a time, pulsing and scraping the sides of the bowl until well blended. As soon as the mixture is combined, dump it out onto a well-floured board and knead for 15 turns, until the dough is smooth and elastic.
- Place the dough in a greased bowl and turn to coat all sides. Cover with plastic wrap or a tea towel. Allow the dough to rise in a warm place for about 45 minutes, until doubled in size, then punch it down. Divide it in half; each half will make 1 (12-inch) pizza.
- Place on a cornmeal-dusted pizza stone, pizza pan, or cookie sheet. Roll up edge slightly to create a ridge around the pizza. Bake for 16 to 18 minutes, or until crust is light brown.
- Cook's Note: If using only half dough, freeze the other half. Place the dough in a resealable freezer bag. To thaw, remove the bag from the freezer and place in the refrigerator for 24 hours. Roll the dough out while cold then allow it to come to room temperature before adding toppings.
- Yield: 2 (12-inch) pizzas

AUNT PAULA'S WHITE CHOCOLATE FRUIT PIZZA
Always a big hit at the family gatherings, I am putting it here for safe keeping. A little time consuming, but so well worth it!

- Crust:.
- Blend Butter and confectionary sugar, than gradually add flour. Press into ungreased 11" tart or 12" pizza pan with sides. Bake at 300 degrees for 25-30 minutes or until golden brown. Cool.
- Filling:.
- Melt white chocolate chips in double boiler or other method just until melted. Beat in whipping cream, then beat in softened cream cheese. Spread over cooled crust, chill for thirty minutes.
- Topping:.
- Add fruits in whatever design desired.
- Glaze:
- Combine all glaze ingredients in medium saucepan over medium high heat, boil for two minutes or until thickened. Brush over fruit.
- Chill for 1 hour before serving.
